GARLIC GREEN BEAN BUNDLES
Joyce Turley of Slaughters, Kentucky shared a presentation for fresh green beans that is so pretty, it could serve as the centerpiece for your dinner table! Bundled in yellow squash rings, the beans are seasoned with a drizzle of garlic and tarragon.

- Trim stem end from beans and arrange in eight bundles. Slice squash into 1/2-in. slices; hollow squash slices to within 1-4 in. of edges. Place beans through squash rings., Place bean bundles in a steamer basket. Place in a saucepan over 1 in. of water; bring to a boil. Cover and steam for 8-10 minutes or until crisp-tender. Meanwhile, in a small nonstick skillet, saute garlic and tarragon in oil for 1 minute. Remove from the heat. Arrange bean bundles on a serving platter; drizzle with garlic mixture. Sprinkle with salt and pepper.

GREEN BEAN BUNDLES
Steamed and then baked, these scrumptious green beans take on great flavor, because they are wrapped in bacon and bathed in a savory sauce. This recipe is best when you marinate the bundles overnight.

- Preheat oven to 350 degrees F (175 degrees C).
- Place bacon in a large, deep skillet. Cook over medium high heat until partially cooked. Drain, cut each piece in half, and set aside.
- Bring a large pot of water to a boil. Place the green beans on a rack or special steamer basket over the boiling water. Cover with a lid so that the steam does not escape. Steam for a few minutes until the green beans are done. Set the green beans aside. Reserve about 2 cups of the water and dissolve the bouillon cube in it.
- Take a bundle of green beans (4 or 5) and wrap them with a piece of bacon. Secure with a toothpick if necessary. Place the bundles in a shallow baking dish.
- In a saucepan over medium heat, combine the reserved stock with the Worcestershire sauce, soy sauce, butter, brown sugar, and garlic powder. Stir until the sugar is dissolved.
- Pour the sauce over the bundles and bake in a preheated 350 degrees F (175 degrees C) oven for 20 minutes or until the bacon is done.

THE BEST GREEN BEAN BUNDLES EVER!
These are the best green bean bundles I have ever tasted. I make them every Thanksgiving and for parties, everone raves about them. It certainly isn't the healthiest, but is the tastiest! I got the recipe from a friend of a friend-so not sure where it orginated. They are time consuming to make, and you have to plan ahead but I promise you they are well worth it!

- Cut bacon into thirds.
- Wrap 8-10 beans in a piece of bacon and secure with toothpick.

- Cook the beans until crisp-tender. Wrap about 10 beans in each bacon strip; secure with a toothpick. Place on a foil-covered baking sheet. - Fill a large saucepan with water and bring it to a boil over high heat.
- Wash and trim the beans.
- Add the beans to the boiling water and blanch for 3 to 4 minutes, until the beans are pliable but still crunchy.
- Drain the beans and run them under cold water. Pat dry with paper towels or a clean dish towel and place them in a shallow ovenproof casserole.
- In a medium saucepan, melt the butter over medium heat.
- Stir in the dry mustard, brown sugar, garlic and salt.
- Pour the butter mixture over the green beans, cover and refrigerate for at least 4 hours or overnight.
- Preheat the oven to 375 degrees.
- Make a bundle of 8 or 9 beans, wrap half a bacon slice around each bundle, securing with a toothpick, and arrange in a single layer in the same casserole used for marinating.
- Bake, uncovered, for 45 minutes or until the bacon is cooked and the beans look wrinkled.

I got this recipe from a friend because I loved them. I've been making them now for years and bringing them to the office for the Holidays. I bought them again yesterday and I'm still printing out the recipe. Every time I make them I have to give out the recipe. This is time consuming but well worth the effort.
