Steps:
- Mix tequila, peach schnapps, margarita mix, and cranberry juice together in a cocktail shaker. Fill a short glass with ice and pour cocktail over the ice. Garnish with lime wedge.

GREEN PEACH SALAD WITH SIMPLE LIME DRESSING
Eddie Hernandez, who runs a string of Mexican restaurants in Georgia and Tennessee called Taqueria del Sol, came up with a delicious way to deal with hard, unripe peaches. Sliced thinly, softened with salt and brightened with lime juice and Serrano chiles, the peaches become a salad that's a cousin to Mexican street snacks built from unripe mangoes and papayas and punched up with chile salt. The salad keeps well in the refrigerator for several days. Mr. Hernandez likes to eat it with a scoop of cottage cheese on the side, though dabs of goat cheese would do as well.

Steps:
- In a medium bowl, whisk the oil, lime juice and salt until emulsified. Toss the peach slices and chiles, if using, with the dressing. Cover and chill for at least 10 minutes before serving. Serve with cottage cheese or another soft cheese, adding a last sprinkle of salt.

AGUAS FRESCAS (MEXICAN FRUIT COOLERS)
Steps:
- Stir the sugar and water together in a large pitcher until the sugar dissolves. Measure out 1 cup. Puree the fruit and the 1 cup sugar water in a blender. Pour the mixture through a fine-mesh strainer back into the pitcher with the sugar water, mashing with a whisk or wooden spoon to eliminate any pulp.
- Taste and add more sugar, if desired. Serve over ice, with a lemon or lime wedge, if desired.

- Measure 8 ounces of peach ring gummies. Add them to a large glass or ceramic bowl and pour 1 1/2 tablespoons of Taj́in over the top.
- Add 3-4 tablespoons of liquid chamoy to the bowl and use disposable gloves to mix thoroughly. Massage the gummies to help the chamoy and Tajín coat them completely.
- Turn coated gummies out onto a baking sheet lined with aluminum foil and sprinkle evenly with 1 tablespoon of Tajín.
- Allow gummies to dry for at least 2 hours or overnight to allow the chamoy to soak in sufficiently so they aren’t too sticky to handle.
