COOKED TO DEATH GREEN BEANS

Steps:
- Put the beans, their liquid and the ham in a large, heavy saucepan. Cook, uncovered, over medium heat until the majority of the liquid has cooked down, about 30 minutes.
SZECHUAN GREEN BEANS
Steps:
- To medium Dutch oven, add 2 cups canola oil and heat to 350 degrees F.
- In medium saute pan over medium heat, add 1 tablespoon oil. Add ginger and saute for 2 to 3 minutes. Add garlic and cook for 1 minute or until it turns light brown; quickly add soy sauce, chili sauce, rice wine vinegar, hoisin, mirin, sesame oil and cilantro.
- Fry the green beans in the canola oil for about 45 seconds, or until beans turn dark green. Remove, strain, and add to sauce. Toss and garnish with peanuts and parsley.
SPICY SZECHUAN GREEN BEANS
I modified this recipe to be less oily. It is almost as good as take-out Chinese green beans. It tastes wonderful with ham and a baked yam.

- Combine green beans and water in a skillet over medium-high heat. Cover and cook, stirring occasionally, until beans are tender crisp, 4 to 5 minutes. Add ginger, garlic, and sesame oil; cook, stirring frequently, until garlic is lightly browned, 1 to 2 minutes.
- Mix soy sauce, rice vinegar, sugar, and red pepper flakes together in a small bowl. Pour over beans and cook until sauce thickens enough to coat beans, 3 to 5 minutes.

GREEN BEAN OKAZU
This was my favorite dinner growing up. It's a quick and easy way to get picky kids to eat green beans, because of the sweet sauce. It's great served over rice, or alone.

- In a large skillet over medium heat, cook the ground beef until evenly brown; drain excess fat.
- Stir in green beans and about 1 cup water. Cover, and cook until beans are tender, 15 to 20 minutes.
- Season with sugar and soy sauce, and cook uncovered for 5 minutes.

ZYDECO GREEN BEANS
Haricots verts are very slender French green beans. You can substitute other young, tender, very thin green beans. Dill heads are the matured tops of dill that contain the seeds. Use jalapeño chilies for a milder version or serrano for a spicier version. Use caution when handling fresh chilies, being careful not to touch face or eyes and washing carefully afterward.

Steps:
- Into each of six sterile pint mason jars, put 1 sliced garlic clove and 1 teaspoon mustard seeds.
- Pack beans vertically into jar, adding 1 to 2 chilies, and, if you like, dill.
- In a nonreactive saucepan, bring vinegar, water and salt to a boil.
- Pour hot liquid over beans, covering them completely.
- Close jars and refrigerate at least one month before eating.
- Keep refrigerated.
