A little Parmesan and a few herbs and spices are all that's needed to help juicy beef sirloin steaks achieve grilled perfection.

Steps:
- Heat grill to medium-high heat.
- Mix first 4 ingredients until blended.
- Brush steak with oil; sprinkle with cheese mixture.
- Grill 4 to 5 min. on each side or until steak is medium doneness (160ºF).

- Whisk minced garlic, olive oil, salt, and black pepper in a bowl, then pour into a resealable plastic bag. Add the steaks, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours or overnight.
- Combine 12 garlic cloves and 1 cup olive oil in a small saucepan over low heat. Cook, stirring occasionally, until garlic is golden and tender, about 30 minutes. Set aside.
- Preheat an outdoor grill for high heat, and lightly oil the grate. Remove steaks from bag, wiping off excess marinade with paper towels. Generously season steaks with salt and black pepper.
- Cook the steaks on the prepared grill until they start to firm and are reddish-pink and juicy in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Remove steaks to a plate and let rest for 5 minutes.
- Drizzle balsamic vinegar over steaks, then spoon a few cloves of oil-roasted garlic on top.

Garlic & Horseradish...what could be better?! I got this recipe form Central Market located here in TX and changed it a bit. (Cook time is actually the time to let it marinate in the fridge)

Steps:
- Whisk the horseradish, mustard, garlic, olive oil and 2 tablespoons pepper in a bowl.
- Spread generously over the beef.
- Marinate, covered, in the refrigerator for 1 to 2 hours.
- Season with kosher salt and additional pepper.
- Grill or broil to desired temperature.
- Note: It is best never to pierce a steak with a fork when turning as you will lose some of the juices and cause the steak to be less tender.
- Also, when grilling, may I suggest grilling an onion at the same time (This trick taught to me by Titanium Chef, her recipe#25572).
- Note: To avoid the crust from falling off while grilling I suggest using a flat grill pan (the type with the holes in it). Be sure to spray it with a non-stick spray and let it heat before placing the steak on it.

- Place olive oil in a small preheated saute pan over medium high heat. Add garlic and pan roast until soft, about 5 -10 minutes. Drain and let cool. Add garlic to a small bowl and mash with a fork. Add thyme and mustard and mix well, making a paste. Preheat oven to 450 degrees. Season steaks with salt and pepper and lightly drizzle with olive oil on both sides. Cook steaks on a hot grill for 4 -5 minutes each side (you want them undercooked because they will finish in the oven). Remove from grill and place on a baking sheet. Cover each steak generously with the garlic paste. Top with a very generous amount of parmesan cheese. Place in oven and bake 6-8 minutes, until cheese is melted and crusty.

- Make crust mix before cooking steak. Take 2TB of grated parmesan and mix into 1/4 cup ranch dressing.
- Combine breadcrumbs and 2TB parmesan cheese. Melt butter then pour in and mix around until everything is saturated. Put breadcrumbs and dressing to the side preparded to top steak.
- I had 3 steaks at a total weight of 1.5 pounds. Top sirloin cut but any cut is fine. Salt and pepper steaks to taste.
- Preheat oven to broil. Cook steaks just shy of desired done temperature. Top steak with dressing then place buttered breadcrumb mix on top. Put in preheated broiled oven for 1-2 minutes or until crumble topping has browned.
