Steps:
- Spread pine nuts on baking sheet and bake in oven set at 350 degrees until golden brown. Melt butter in saucepan. Add onion and saute until softened. Add rice and stir until coated with butter. Add water, bring to a boil, cover and reduce heat. Continue to cook until water absorbs and rice is light and fluffy, about 20 minutes. Toss in pine nuts and serve.

- Preheat oven to 350°F Lightly grease an 8 x10-inch baking dish.
- In large skillet, heat oil over medium-high heat. Add vegetables, garlic, bay leaves, thyme, dill weed and 1/4 cup parsley, and cook, stirring often, 6 minutes. Add sugar, paprika, salt and rice. Cook, stirring, 1 minute. Add tomatoes, water and currants or raisins; bring to a simmer.
- Transfer to prepared baking dish; cover and bake until rice is tender, about 1 1/2 hours. Toss with pine nuts or almonds and remaining parsley. Serve warm.

- Add the olive oil to a saucepan, and then the onion and garlic. Cook over medium heat, stirring, until wilted. Add the rice, raisins and the pine nuts.
- Add the water, salt and pepper. Bring to a boil, stirring; cover, and simmer for exactly 17 minutes.
- Add the butter, stir to fluff the rice, and blend well.

RICE WITH GARLIC AND PINE NUTS
This recipe combines the Julia Child method of cooking garlic in butter, and adds other ingredients for a lovely finished dish! :)

Steps:
- Remove all the cloves of garlic from the head.
- Take a smallish saucepan and heat to boiling about a cup of water; add the cloves of garlic and simmer for about 1 minute- drain, peel the garlic (which should be softish and should peel easily) and set aside.
- In a small saucepan, melt the butter together with the olive oil over medium heat. Reduce the temperature low, then add the peeled garlic cloves to the butter mixture; stir well.
- Saute slowly on lowest heat until tender and golden, at least 20 minutes (but it can take as long as 30, depending on your stove), stirring and checking occasionally to make sure they do not burn.
- Remove cloves from pan - pour any remaining butter into a wide skillet; thoroughly mash the garlic with a fork.
- Heat the "garlic drippings" in the wide skillet. Swirl in the mashed garlic. Add the cooked rice and pine nuts. (If the mixture seems a little dry, you may add more butter to taste, if you like.)
- Saute, stirring and tossing, until the rice is heated through and has absorbed the butter.
- Season with salt and freshly ground pepper.
- Serve hot.

- Soften the shallot with the carrot in the butter in a saucepan. Add rice and two cups chicken stock. Cover and simmer gently. As the liquid dries, add more stock. The rice should take about an hour and is done when it is open and soft.
- Meanwhile, toast the pine nuts. Mix them into the rice, season and serve at once.

- Preheat the oven to 400 degrees.
- Melt 1 tablespoon of the butter in a heavy saucepan and add the onions and pine nuts. Cook, stirring, until wilted. Add the rice, water, thyme, bay leaf and salt and pepper.
- Bring to a boil, stirring, making sure there are no lumps in the rice. Cover with a close-fitting lid and place in the oven.
- Bake for 17 minutes, remove the cover and discard the thyme and bay leaf. Using a fork, stir in the remaining butter and blend well.

- Heat oil in large pot over medium-high heat. Add cumin; stir until toasted and fragrant, about 15 seconds. Add onion and garlic; sauté until tender, about 5 minutes. Stir in tomato paste. Stir in thyme, pepper, coarse salt, and mint. Add wild rice; stir 2 minutes. Add broth and bring to boil. Reduce heat to medium-low; cover and simmer until wild rice is almost tender, about 40 minutes.
- Mix white rice into wild rice; cover and simmer until most of liquid is absorbed and all rice is tender, about 20 minutes. Stir in lemon juice; cover and continue to simmer until liquid is absorbed and all rice is tender, about 5 minutes. Remove from heat. Stir in parsley, then pine nuts; serve.

- In a dry small heavy saucepan toast pine nuts over moderate heat, stirring, until golden, about 5 minutes, and transfer to a small bowl. Finely chop cilantro and reserve 1/4 cup for garnish. Mince garlic. In pan cook rice in oil with garlic and remaining cilantro over moderate heat, stirring, 3 minutes and add water and salt.
