HERB GARLIC BREAD
Steps:
- Preheat the oven to 350 degrees F.
- Place the garlic, parsley, basil, salt and pepper in the bowl of a food processor fitted with the steel blade and process until finely minced. Heat the olive oil in a medium saute pan over medium heat. Add the garlic and parsley mixture and cook for 1 minute, until the garlic is tender but not browned. Remove from the heat and set aside.
- Slice the baguette lengthwise down the center, but not all the way through, and spoon the garlic mixture into the bread. Place the bread on a sheet pan and bake for 8 minutes. Slice diagonally and serve warm.

WHELKS WITH PARSLEY AND GARLIC BUTTER
Whelks are a type of sea snail, or gastropod, inhabiting the Atlantic Ocean and some of its bays and sounds in North America and Europe. In Europe, especially in England, where people eat lots of shelled creatures that might make Americans shudder, whelks are extremely popular. Whelks range in size from a couple of inches - a dozen or so in a pound - to eight or nine inches long. So-called common whelks are the smallest and the ones to seek at the fish market for their briny-sweet taste and only slight chewiness. Larger varieties, like the channeled whelk or the knobbed whelk, are usually sold as scungilli.

- In a running food processor, drop garlic through feed tube to mince. Place parsley in container of machine and pulse to mince. Add butter and seasonings, and process until well blended. No bits of butter should show. Set aside.
- Bring several quarts of water, heavily salted (like seawater), to a boil. Add whelks and boil 4 minutes. Drain.
- Place butter mixture in a metal bowl fitted into a small saucepan of simmering water, or in a double boiler. Whisk until mixture melts, then transfer to a serving dish or small individual bowls. Serve 2 to 3 whelks a person, with melted-butter mixture for dipping.
BURNT CARROTS WITH GOAT CHEESE, PARSLEY, ARUGULA, AND CRISPY GARLIC CHIPS

- To make the vinaigrette, pour the vinegar into a small bowl and whisk in 5 tablespoons of the extra virgin olive oil. Season to taste with salt and pepper. Set aside.
- Cut the carrots crosswise in half, then cut the halves into thick rough sticks. Toss in a bowl with 3 tablespoons of the olive oil, the thyme, and salt and pepper to taste.
- Heat a chapa or large cast-iron skillet over high heat. Working in batches if necessary, add the carrots in a single layer and cook, without turning, until they are charred on the bottom and almost burned, 3 to 5 minutes. Turn with a spatula and cook on the other side for 2 to 3 minutes more, adjusting the heat as necessary, until they are crunchy on the outside and tender within. Transfer to a tray. Wipe out the skillet, if using, and set aside.
- Combine the parsley and arugula on a large serving platter and toss lightly with half the vinaigrette. Place the carrots on top.
- Reheat the chapa or skillet to very high heat and coat with the remaining 1 to 2 tablespoons olive oil. Immediately add the slices of goat cheese: be careful-the oil may spatter. As soon as you see the cheese blacken on the bottom, remove the slices with a thin spatula and invert onto the carrots. Toss the garlic chips over the salad and drizzle with the remaining vinaigrette.
GARLIC AND PARSLEY HEARTHBREADS
These are something between garlic nan and herby focaccia: dimpled, doughy and headily pungent. When lunch is cold and sparse - some sharp cheese, some sliced tomatoes, a green salad - these bring everything substantially, chin-droppingly together. (But please try making them one to eat with fried eggs and maybe some fried or grilled tomatoes.) The cook time is oven time and rise time.

- Preheat oven to 375 degrees.
- Combine the Flour, Yeast, and Salt in a bowl; pour 1 1/3 cups Warm Water into a measuring cup and stir in the Olive Oil; Mix the liquid with the dry ingredient to make a soft but firm dough, adding more liquid as needed, and either turn this out onto a surface and knead by hand or keep in bowl and use a mixer fitted with a dough hook and knead until smooth, supple and full of elastic life; form into a ball, wash out and dry bowl, Oil it, and turn the dough in it so it's lightly oiled all over; Cover with plastic wrap and leave to rise for an hour or so or until doubled in size.
- Trim the tops off the Garlic heads, making sure they remain whole, sit them in some torn-off squares of foil, dribble over some oil and wrap them loosely; the packages should be baggy but the foil tightly sealed at the edges; cook for 45 minutes; they should not be mushy by this stage but still just holding their shape; remove from oven, unwrap and let cool; Turn oven up to 400 degrees.
- Tear the parsley leaves from their stems and add a good handful to the bowl of the food processor and chop; Squeeze the soft garlic cloves out of their skins and into the bowl and process again; pour in enough extra-virgin olive oil to make a runny paste down the funnel, while still processing, and leave this pungent emulsion where it is while you get back to the bread.
- When the dough has risen, punch it down and leave to rest for 10 minutes; divide the dough in half and get out 2 sheets of baking parchment. Sit a ball of dough on each, and roll out to form a curved rectangle or bulky oval; then, using your hands, press out a little more; transfer the breads on their papers to the baking sheets, cover with tea towels and leave to rise and get puffy for about 25 minutes.
- Poke your fingers all over the tops of the breads to dimple them, and then go back to the food processor and pulse once or twice to make sure the Parsley, Garlic and Oil are combined and pour this green mixture all over the corrugated flatbreads.
- Put the baking sheets into the oven and bake for 20 minutes or until the breads are cooked - becoming golden in parts, with the garlic flecks a darker brown and the rims puffing up around the oily topping.
- Whip out of the oven and drizzle over a generous amount of good extra-virgin olive oil; sprinkle some salt and set down on the table for people to tear greedily at with their bare hands.
