Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Place chicken breasts between 2 pieces of waxed paper. Gently pound chicken with flat side of meat mallet or rolling pin until about 1/4 inch thick; remove wax paper. Place 1 ounce of feta cheese in the center of each chicken breast, and fold in half.
  • Spread 2 tablespoons bread crumbs in the bottom of the prepared baking dish. Arrange chicken in the dish, and top with remaining bread crumbs.
  • Bake 25 to 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.

Steps:

  • In a Ziplock bag, mix together the yogurt, garlic, and rosemary.
  • Add the chicken breasts, close the bag securely, shake well and place in refrigerator to marinate for 24 hours.
  • To cook, broil chicken breasts for about 7 minutes per side, until juices run clear.
  • Top each breast with crumbled feta and broil again for about 1 to 2 minutes - careful to not let them burn - until the cheese has melted.
  • Serve and enjoy!
  • Good with pilaf or orzo.

Steps:

  • Preheat oven to 350 degrees F.
  • Season chicken with salt. In a large heavy skillet, heat olive oil over medium heat and saute chicken for about 15 minutes or until lightly browned.
  • Place onion, celery, carrots, and parsley in the bottom of a large ovenproof casserole. Layer chicken over vegetables. Tuck garlic cloves between chicken pieces. Pour wine and water over chicken. Sprinkle with thyme, basil, rosemary, and oregano.
  • Cover casserole and bake for 1 1/2 hours. Don't lift the cover until cooking time is complete. Skin chicken before eating. Serve with prepared rice.

Steps:

  • Lightly coat chicken breasts in bread crumbs. Melt margarine in frying pan at medium heat and brown chicken.
  • Mix together cold milk and soup mix. Pour over chicken, turning pieces to coat both sides.
  • Bring to a boil, then reduce heat and simmer covered for 5-10 minutes until cooked through.
  • Meanwhile, cook fettucine in boiling water per instructions (8-10 minutes).
  • When chicken and fettucine are cooked, remove chicken to serving platter. Add mushrooms and sauce to fettucine and toss to coat. Serve alongside chicken for everyday or --

  • Pat chicken dry and sprinkle with pepper and 3/4 teaspoon salt. Dredge chicken in flour, shaking off excess.

  • Season chicken on both sides with salt and pepper to taste.
  • Brown chicken and garlic in hot oil in a large saute pan.
  • Add wine, broth, lemon juice, and spices.

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix the crushed garlic and oregano with the lemon juice and 3 tbsp of the oil to make a dressing. Season. Make a few slashes in each chicken leg, then put the chicken in a large roasting tin and rub with 2 tbsp of the dressing. Stuff the squeezed lemon shells inside the body cavity. Roast for 30 mins.
  • Meanwhile, tip the peppers, onions, whole garlic cloves and courgettes into a large bowl, and toss with the remaining oil and some seasoning. After 30 mins, pile the veg around the chicken, drizzle with half the remaining dressing and roast for 1 hr.
  • Remove the chicken from the oven, lift onto a platter, cover with foil and leave to rest. Check the roasting tin, and if the chicken has rendered a lot of fat, pour it off, skim and return the juices to the tin. Stir the lemon wedges, mint, feta, chickpeas and remaining dressing through the veg and juices, then return to the oven for 10 mins to warm through. Steps:

  • In a small bowl, combine feta and oregano. Make a pocket in chicken breasts: Holding chicken flat with palm of one hand, make an incision in thicker side of each breast with a paring knife. Carefully pivot the knife to create a deep pocket, keeping the other side of the chicken breast intact. Stuff pockets with feta mixture, dividing evenly; generously season both sides of chicken with salt and pepper.
  • Heat oil in a large skillet over medium-high heat. Add chicken, and cook until browned on both sides, 6 to 7 minutes per side.
  • Cover skillet, and continue cooking until chicken is opaque throughout and an instant-read thermometer inserted into thickest part registers 160 degrees. about 5 minutes more. Remove chicken to a platter, and keep warm.

  • Rub the chicken with paprika, salt, and pepper and set aside at room temperature for at least 1 hour or preferably in the refrigerator at least 8 hours or overnight.
  • Preheat the oven to 400°F.
  • In a large sauté pan, heat the oil over medium heat. Add the crushed garlic and cook, stirring, until softened but not colored, 2 minutes. Add the chicken pieces and fry, turning as needed, until golden on both sides, 5 to 8 minutes. You want them nicely colored on the outside but not cooked through. Using a slotted spoon, transfer to paper towels to drain briefly, and then arrange the pieces in a cazuela or baking dish large enough to hold them in a single layer.
  • Remove the crushed garlic from the oil and discard. Return the pan to low heat. Add the minced garlic and cook briefly. Add the thyme, bay leaves, sherry, and broth, raise the heat to high, and bring to a boil. Remove from the heat and pour over the chicken.
  • Bake the chicken until cooked through, 25 to 30 minutes. Remove from the oven and discard the bay leaves and thyme. If the pan juices are thin, transfer to a small saucepan and cook over medium high heat until reduced, and then return to the cazuela. Sprinkle with the parsley and serve at once.
  • Variation:
  • You also can complete the cooking on the stove top. Sauté the minced garlic as directed, return the chicken to the pan, add the sherry and broth, and simmer, uncovered, until most of the liquid has evaporated and the chicken is tender, 15 to 20 minutes
