GARLICKY HUMMUS

This easy dip is a lower-fat version of traditional hummus.

Garlicky Hummus image

Steps:

  • Preheat oven to 425 degrees. Wrap garlic heads in aluminum foil. Cook in oven until very soft, about 30 minutes. Remove from oven, and allow to cool in foil.
  • When cool, cut each head in half horizontally, and squeeze cloves into the bowl of a food processor. Add remaining ingredients, and puree until smooth. Add up to 2 tablespoons water if mixture is too thick.

1 can (15-ounce) garbanzo beans, rinsed and drained
1/4 cup freshly squeezed lemon juice (from 2 lemons)
1 tablespoon extra-virgin olive oil
1/4 cup part-skim Ricotta cheese
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon paprika
Pinch allspice
1/3 cup fresh flat-leaf parsley

GARLICKY LEMONY HUMMUS

This is a bold, flavorful hummus with a bit of heat. The lemon juice and zest give a wonderful brightness that my children and grandchildren seem to love. The ingredients are usually available in my pantry, so I can make this at a moment's notice. This, of course, is to my taste, and I like lots of flavor, so a little goes a long way. Garlicky Lemony Hummus image

Steps:

  • Pour all garbanzo beans into the bowl of a food processor; pulse several times to slightly break some of the beans. Add garlic, lemon zest, lemon juice, cumin, basil, salt, cayenne pepper, and ground black pepper; blend until the beans are beginning to look like large crumbs, about 1 minute.
  • With the food processor running, gradually stream reserved liquid from garbanzo beans, olive oil, and sesame oil into the beans mixture; continue to blend until all liquids are integrated with the garbanzo bean mixture into a smooth hummus.

  • Combine all but the last 2 ingredients in a food processor until smooth.

  • Turn on the food processor fitted with the steel blade and drop the garlic down the feed tube; process until it's minced. Add the rest of the ingredients to the food processor and process until the hummus is coarsely pureed. Taste, for seasoning, and serve chilled or at room temperature.

SPICY GARLIC HUMMUS

I have tried a lot of hummus recipes, and this one is a combination of a few of my favorites, and is now the only one I use. I grow my own little Super Hot Chili Peppers and so that is what I use, but you can substitute any pepper you like, or use hot pepper flakes. I like a lot of garlic and a bit of a kick, but this recipe is easily alterable to your own tastes so adjust it as you see fit. I like my hummus thick so I usually skip the water. Another nice variation is to add a bit of red, green, and yellow bell peppers. It makes the hummus really pretty! Any hummus lover will tell you that the spread can be used so many ways. My favorite uses for this is as a vegetable dip or as a sandwich spread in a whole wheat veggie wrap. Yum!

Spicy Garlic Hummus image

Steps:

  • Process garbanzo beans, tahini, chili pepper, garlic, and lemon juice in a food processor or blender (I use a mini-chopper) until smooth.
  • Add water as needed to achieve the consistency you prefer.
  • Place mixture into a glass bowl.
  • Stir in cumin, cayenne pepper, paprika, salt and black pepper.
  • Cover and refrigerate for at least a couple of hours.
  • The flavor improves greatly if given this time to develop.

Creamy Roasted Garlic Hummus image

Steps:

  • Preheat oven to 375°F Cut off the very top of the garlic clove (about 1/4") so that the tops of most of the cloves are exposed slightly. Coat with a little olive oil and wrap securely in tin foil. Roast garlic in oven for 1 hour. Remove and allow to cool.
  • Using your fingers, squeeze the soft, roasted garlic out of each clove into food processor. Rinse and drain cooked or canned chickpeas. Add them, and all other ingredients, to the food processor and blend until completely smooth.
  • Scrape ingredients off sides of food processor to make sure it blends evenly. If you find that the hummus is too thick, you can add additional olive oil at this time. Add it very slowly, allowing the mixture to combine fully before adding more liquid.
  • Serve at room temperature with crudites, warm pita or crackers.
  • Optional: Sprinkle with chopped parsley or paprika before serving.

  • Place all ingredients in food processor and blend until smooth, adding more lemon if necessary to obtain desired consistency. The blending can take as long as 3-4 minutes Be patient it comes out better!

Roasted Garlic Hummus image

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Slice the top off each head of garlic. Drizzle the cut ends with 1 tablespoon olive oil and wrap in foil.
  • Bake in the preheated oven for 35 minutes. Remove and let sit until cool enough to handle. Turn on the broiler.
  • Reserve liquid from chickpeas. Rinse and drain chickpeas; transfer to a blender.
  • Add 1/2 of the reserved chickpea liquid to the blender with lemon juice and 2 tablespoons olive oil. Squeeze in roasted garlic from 2 of the heads. Blend until creamy, adding more chickpea liquid if needed.
  • Split pita rounds and cut into quarters. Place on a baking sheet.
  • Place under the preheated broiler until crisp, 2 to 3 minutes.
  • Place hummus into a bowl. Make a well in the center and squeeze roasted garlic from the remaining head into the well. Sprinkle with paprika. Serve with pitas.

Steps:

  • Preheat oven to 400 degrees F. Place garlic on aluminum foil and drizzle with 1 tablespoon of olive oil and sprinkle with salt and pepper. Roast in the oven for 15 to 20 minutes or until jammy.
  • In a small saucepan on low heat, combine the rest of your olive oil with your rosemary. Bring to a low bubble and take off the heat, allowing the flavors to marry. Discard rosemary stalks.
  • In a blender, combine your chickpeas, tahini, half the rosemary olive oil and squeeze out your jammy garlic flesh.
  • Gradually add in the rest of the olive oil as the blender is on, looking for that smooth and creamy consistency. Season accordingly with salt, pepper and lemon juice.
