GARLICKY MASHED POTATOES

- Preheat the oven to 350 degrees F.
- Slice the heads of garlic in half crosswise and drizzle with the oil. Wrap the garlic in foil and roast until creamy, about 1 hour. When cool enough to handle, squeeze the cloves into a small bowl and mash lightly with a fork.
- Put the potatoes in a medium pot, cover with cold water and add 2 tablespoons salt. Bring just to a simmer and simmer the potatoes, uncovered, until tender, about 45 minutes. Drain.
- Peel the potatoes and return them to the pot (if desired, pass them through a ricer or food mill after peeling). Mash the potatoes with the milk and butter using a fork or potato masher. Stir in the roasted garlic and 2 teaspoons salt; season with pepper.

GARLICKY GOAT CHEESE POTATOES

- Preheat the oven to 350 degrees F.
- Place the unpeeled garlic cloves in a small ovenproof container and cover with the olive oil. Cover with a lid or aluminum foil. Place in the oven and roast for 20 minutes, or until the cloves are tender when tested with the tip of a knife. Remove the garlic cloves and place on a plate to cool. Strain the olive oil and reserve for later use. Squeeze the roasted garlic out of the skins when cool enough to handle. Puree the garlic by chopping and smashing it with the blade and side of a knife, or with a mortar and pestle.
- Meanwhile, peel the potatoes and cut them into 2-inch pieces. (There will be about 8 cups potatoes.) Place them in a large saucepan. Add enough water to cover the potates by 1-inch. Sprinkle with 1 teaspoon salt, place the pan over high heat, and bring to a boil. Reduce the heat, cover the saucepan with lid placed slightly ajar, and simmer the potatoes for 20 to 30 minutes, or until tender when pierced with the tip of a knife.
- Combine the milk and goat cheese in small saucepan and heat to a simmer, stirring until there are no lumps. When the potates are cooked, drain them, return them to the pan, and place in the still-warm oven, uncovered to dry out for 10 minutes.
- Remove the potatotes from the oven and pass them, along with the garlic, through a potato ricer or a food mill fitted with the fine disk. Alternatively, the potatoes can be whipped using an electric mixer. Add the reserved garlic oil and the goat cheese-milk mixture and whip the potatoes with a mixer or by hand, adding additional milk if too dry. Reheat, covered, over very low heat if necessary. Serve hot.

- Heat oven to 200C/fan 180C/gas 6. Heat the oil and butter in a large roasting tin. Add the garlic and cook over a medium heat for 2 mins. Tip in the potatoes and toss to coat in the garlic butter and oil.
- Pour the stock over the potatoes and season with pepper and a little salt. Bring to the boil then transfer to the oven. Cook for 40-45 mins or until tender.

- Place potatoes into a very large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 40 minutes. Drain.
- Preheat the oven to 400 degrees F (200 degrees C).
- Arrange potatoes close together in a 9x13-inch baking dish. Use a fork to press about 1 inch deep in the center of each potato until inner flesh is exposed.

THE REALTOR'S GARLICKY POTATOES AU GRATIN
This is one of my favorite recipes for potatoes au gratin. I make this is an enameled cast iron casserole so I can make the sauce and bake the potatoes all in the same pan. If you don't have one of those, just make the sauce, stir in the potatoes and then pour the mixture into a buttered 2 or 3 qt. casserole dish.

- Wash potatoes, cut into slices 3/8" thick.
- Wash potato slices again to remove starch, drain.

NIGELLA LAWSON STICKY GARLIC POTATOES
We had these yummy potatoes for Easter after hearing the recipe on the radio. It comes from Nigella's book "Feast: Food to Celebrate Life". We were all afraid they would be overpowering because the whole house smelled like garlic, but they were wonderful - crispy and brown with a lovely roasted garlic flavor!

- Bring a pan of salted water to a boil, and cook the potatoes for 30 minutes. Drain, and put back into the dry pan.
- Peel the garlic cloves and put them in the dry pan with the potatoes.
- Mash the potatoes and garlic so they are cracked and split. They can be done ahead up to this point and left in the pan but leave the lid off, so they don't get watery.
- Preheat the oven to 425 degrees F and slip a roasting pan in to heat up at the same time.
- When the oven is hot, pour the oil into the pan and leave it to heat up for 10 minutes.
- Carefully tip the potatoes and garlic into the hot oil and cook for 15 minutes.
- Turn the potatoes over and cook another 15 minutes until browned and crispy. Serve immediately.
