INDIAN LAMB CURRY
A dish from the Delhi region. Cuts of boneless beef can also be used in this recipe, but the true flavor is in the lamb. Serve with some rice, pakoras or samosas and a nice crispy salad! :)

Steps:
- Heat oil in large pan; add bay leaves, cardamom, cinnamon stick, peppercorns, and cloves.
- When leaves begin to sizzle and fragrance starts to release, add onions and saute until light golden, about 12-15 minutes, stirring frequently.
- Stir in the ginger paste, garlic, chile pepper, and lamb.
- Season the lamb with salt; continue cooking, stirring mix, for about 20 minutes more, adding a little water if necessary to keep food from sticking.
- Add turmeric, coriander powder, cayenne, and garam masala; stir for 5 minutes, adding 2 tablespoons water.
- Add diced tomatoes, and cook for 5 minutes, stirring frequently.
- Then add 4 cups of water and simmer for 15 minutes, or until meat is getting tender.
- Lower heat.
- Whisk the yogurt with a fork; and add to the pot slowly.
- Then cook until meat is done to your liking and sauce is thickened.
- Garnish with cilantro leaves.
- Serve with steamed basmati rice, or hot Indian breads, such as Naan.
LABNEH (LEBANESE YOGURT)
This is a Lebanese dish, excellent for dipping with vegetables or spreading on bread. It can also be used as a topping for just about any dish.

Steps:
- In a medium to large saucepan melt the butter over medium heat.
- Add the cream cheese and whisk to smooth and melted.
- Whisk in the heavy cream.
- Season with the garlic powder, salt and pepper.
- Bring to a good simmer and whisk frequently until sauce thickens, around 25 minutes.
- Remove from heat and stir in cheese.
- Taste and adjust seasoning's.
LAMB IN FRAGRANT GARLIC CREAM SAUCE (ROGAN JOSH)
A friend of mine made me this dish, and I was so in love with it she bought me a copy of the book she got it from, Classic Indian Cooking by Julie Sahni. Don't be intimidated by this recipe - it is really very simple, if time consuming, but once you taste it - oh! It's so worth it! Serve with other Indian-inspired side dishes or basmati rice and a simple sauteed spinach dish.

- Put the ingredients for the marinade except the ghee into a food processor and blend until finely pureed.
- Pour the marinade over the lamb, the pour the ghee over it.
- Mix thoroughly to coat the lamb pieces, then cover and let the meat marinate at least 1/2 hour at room temperature, or 2 hours in the fridge.
- Transfer the meat and the marinade into a large dutch oven.
- Bring the contents to a boil over med-low heat, reduce the heat and simmer, covered, until the lamb is very tender (about 2-2 1/2 hours depending on the quality of the meat).
- Stir frequently to prevent the sauce's sticking to the bottom of the pan and burning.
- Heat the 4 tbl ghee in a small frying pan on high heat.
- When it is very hot, add the garlic, and fry for 15 seconds stirring very rapidly.
- Add the cardamom, cumin, and garam masala.
- As soon as the spices begin to sizzle and become fragrant (3-5 seconds), turn off the heat and pour the spiced butter and spices over the meat.
- Add the cream and stir to combine the ingredients.
- Allow the lamb to then rest at room temperature for 2 hours.
- When ready to serve, taste for salt, then reheat the meat until piping hot and serve.
- Note: sometimes too much moisture evaporates during cooking which causes the ghee to separate from the sauce; If that happens, add a little milk or water, a tbl at a time, until the fat is re-incorporated back into the dish; Don't degrease since the ghee is a flavoring for the dish.
- Note 2- Rogan Josh improves in flavor with keeping, so I usually make it the day or two before I plan to serve it; It will keep in the fridge for 3 days, and freezes well.
- Note 3- serve with basmati rice.
LAMB (GOSHT) BIRYANI
Biryani is a bit of a project and is time-consuming, but I have never been disappointed with the results. Since it is such a festive dish, I usually make it for dinner parties. It is a huge hit.

- Place the basmati rice in a large container and cover with several inches of cool water; let stand 30 minutes. Drain.
- Heat 1/4 cup oil in a large skillet over medium heat; fry the cloves, cardamom pods, and cinnamon sticks in the hot oil until fragrant, about 1 minute. Add the onions; cook and stir until the onions are lightly browned, about 5 minutes. Stir the garlic paste and ginger paste into the onion mixture; cook until the garlic and ginger is fragrant, about 1 minute more. Sprinkle the cilantro and mint over the mixture and cook 1 minute more.
- Add the lamb chops to the skillet; season with salt. Cook and stir the lamb until the meat begins to brown, about 20 minutes.
- Stir the tomatoes, green chile peppers, and ground red pepper into the mixture; continue cooking until the oil begins to separate from the gravy, about 10 minutes. Add the yogurt and lemon juice; cover and cook until the lamb is tender, about 15 minutes. Add water as needed to keep the mixture from getting too dry.
- Bring the rice, 7 1/2 cups water, and 1 teaspoon salt to a boil in a saucepan until the rice is nearly done yet a little chewy, 10 to 15 minutes; drain any excess water.
- Heat 1 tablespoon oil in a small skillet; fry the sliced onion in the hot oil until lightly browned.
- Layer about half the rice in the bottom of a deep pot with a lid. Spoon the lamb masala over the rice. Spread the fried onion over the lamb masala. Top with the remaining rice. Stir the saffron and warm milk together in a small bowl; pour over the top layer of rice. Cover the pot with the lid and place the pot over low heat; cook until the rice is thoroughly cooked, about 15 minutes.

Steps:
- Cover potatoes with water in 3-quart saucepan and bring to a boil over high heat.
- Reduce heat to low and simmer until potatoes are tender, 15 to 20 minutes.
- Drain, rinse with cold water and mash thoroughly.
- Meanwhile, put garlic and salt in a large wooden bowl and mash with a pestle until a paste.
- Gradually add potatoes and mash them with garlic.
- If mixture is still hot, let cool 15 minutes, then add egg yolk, if using, and heartily mash in with a wooden spoon.
- Alternating olive oil with lemon juice and vinegar, gradually add both to potato mixture, mashing.
- Add pepper, and using a fork mix briskly until very smooth.
- Mix in more olive oil(or even some water), a little at a time, if sauce is too thick to use as a dip.
- Spoon into a container and store, covered, in refrigerator. It will keep for about 1 week.
- Bring to room temperature several hours before serving.
- Spoon into a bowl and serve with fresh vegetables and/or pita for dipping. Enjoy!
