FLEISCHKUECHLE (FLESH-KEEK-LUH)

Deep fried dumplings with seasoned ground beef. This is a favorite in Germany. Our family is German and my grandfather taught me how to me it! Recipe sounds odd. Take a chance. I guarantee your family will love it!

Fleischkuechle (Flesh-Keek-Luh) image

Steps:

  • In a medium bowl, mix together the ground beef, onion, salt and pepper until well blended. Set aside.
  • In a large bowl, stir together the flour and salt. Pour in the eggs and milk, and stir until well blended using a sturdy spoon. Form the dough into 2 inch balls, and roll out into circles 1/4 inch thick on a floured surface.
  • Form the beef into golf ball sized balls, and place each one onto one half of a dough circle. Fold the other halves of the circles over to enclose the dough. Seal the edges using a saucer or pressing with your fingers.
  • Heat the oil in a deep fryer to 365 degrees F (185 degrees C), or over medium-high heat in a large deep skillet. Fry the Keuchle until golden brown, turning once. It should take about 10 minutes total for each batch.

The German Meatball is not actually a ball - it looks more like a disk. It is one of my favorite childhood foods and I keep on making these for private dinners, big brunches, a party gift, picnicks,... you get the idea: easy to prepare, store, and take around, hot or cold, goes with almost anything. A taste of Germany - enjoy!

German Meatballs (Fleischkuechle) image

Steps:

  • Start by soaking the dry bread with some lukewarm milk (takes around 20 min). When done, quench the milk out of the bread.
  • Meanwhile, finely chop onions and sauté with some oil or butter in a pan until they are transparent. Shred the carrot and sauté with the onions until soft. Let cool.
  • Add all ingredients into a bowl and mix thoroughly with your hands.
  • Add spices to taste. Remember: add a little more salt than you think you should. The frying will take off some salt, so it prevents the meatballs from tasting boring.
  • Now heat margarine or butter in a non-stick pan, form disks from the meat dough (approx 10 cm diameter, 2-3 cm high) and fry thoroughly from both sides.
  • Serving suggestion: with mashed potatoes and baby carrots with peas.

German Meat Balls With Bell Pepper Sauce - Hackfleisch Kuechle image

Steps:

  • Dice bell pepper and onion and set aside.
  • Mix ground beef with egg, bread crumbs, mustard and 1/2 of your diced onions.
  • form roughly 6 meatballs (each meat ball should fit into your cupped hand and roll in some bread crumbs and pad lightly on both sides to flatten them on 2 sides.
  • Heat oil in a deep pan and brown meatballs harshly on both sides until nice dark and firm crust has formed (approximately 5 min on each side), take care to only turn them once
  • Remove the meatballs from the pan an set aside.
  • brown remainder of your onions together with the bell pepper in the left over oil/browning juices.
  • Ad water in small steps to loosen all the browned particles from the pan to create a nice dark gravy. Finish the gravy with some cream and the tablespoon of gravy mix to thicken it.
  • Place the meatballs back into the gravy and let all simmer for 5 more minutes.
  • Serve with your choice of sides.

The original hamburger, these are served like a flattened meatball with some steamed string beans and salad. I also like to use this recipe to make Swedish meatballs (but omit the paprika). My Aunt in Hamburg, Germany taught me this recipe and I've been making them ever since. Serve with steamed string beans and tossed salad. Or serve on a Kaiser roll with lettuce, tomato, pickled cucumbers, finely sliced deep fried onions and curry ketchup.

Simmer for 5 min. In a seperate bowl mix the eggs with the milk and temper the egg mixture slowly with the warm broth. Then remove the broth of the heat and stir in the milk and egg mixture. Stir in the capers with some of the liquid, season with the lemon juice, salt, pepper and sugar. Now add the meatballs and heat through.

Remove the meatballs with a slotted spoon to a bowl and cover to keep warm. Remove the bay leaf from the sauce and stir in the 2 tablespoons lemon juice, sour cream and capers, if using. Season with sugar and nutmeg and additional salt, pepper and lemon juice, as needed. Pour the sauce over the meatballs and serve.

Instructions. For the Meatballs, mix all ingredients except the Bay Leaves in a Bowl. Shape firm meatballs, about the size of a snowball. Fill a large pot with water, add salt and the Bay Leaves and bring to a boil. Reduce the heat, so the water just slightly boils and add the meatballs. Let the meatballs sit in ther for about 20 minutes.
