Steps:
- Preheat oven to 350 degrees F.
- Heat oil in a medium skillet over medium heat. Add onion and garlic, and cook until lightly colored, about 3 minutes. Add tomato, jalapeno and white wine. Cook until wine is reduced by 2/3, about 5 to 7 minutes. While sauce is reducing, heat butter in a separate skillet over medium heat. Season fish with kosher salt. When butter is melted, add halibut to the pan. Cook for 2 minutes, flip over and then transfer pan to preheated oven and bake until cooked through, about 10 minutes. Remove sauce from heat when reduced and stir in olives and olive juice.
- To serve, divide sauce equally among 4 dinner plates. Place halibut (first caramelized side up) in the center of each plate on top of the sauce. Place avocado slices on top of fish, sprinkle with lime juice and cilantro, as garnish.

- Position the rack in the center of the oven and preheat the oven to 350 degrees F.
- Line a heavy large baking sheet with parchment paper. Stir the almonds, flour and zest in a medium bowl. Stir the sugar, butter, cream, and honey in a heavy medium saucepan over medium heat until the sugar dissolves. Bring the mixture to a boil. Remove the pan from the heat. Stir in the almond mixture. Cool the batter for 20 minutes, stirring occasionally. Using 2 teaspoons of batter for each cookie, spoon 8 mounds of the batter onto the prepared baking sheet, spacing evenly apart (the cookies will spread). Flatten the batter slightly with your finger.
- Bake the cookies until they are lacy and golden brown, about 10 minutes. Gently slide the parchment paper with the cookies onto a rack and cool completely. Transfer the cookies to paper towels. Repeat with the remaining batter, lining the baking sheets with clean parchment for each batch. (The cookies can be made up to this point 2 months ahead. Cool completely, then store airtight in the freezer. Defrost before continuing.)
- Stir the chocolate in a bowl set over a saucepan of simmering water until the chocolate melts. Spread the melted chocolate over the bottom of 1 cookie. Top with a second cookie, bottom side down, pressing lightly to adhere. Repeat with the remaining cookies and chocolate.
FISH FLORENTINE
You can make this tasty and pretty recipe with just a few basic ingredients. If you want to make it look really fancy, pipe the mashed potato around the edge of the plate and flash it under the grill until just lightly browned on the top. You could also sprinkle the plate with finely grated Parmesan cheese.

- Cut the potatoes into chunks and rinse.
- Boil in plenty of salted water until tender.
- Drain.
- Heat 50ml of the milk with half of the butter.
- When the butter has melted, mash the mixture into the potatoes until smooth.
- Beat with a spoon, adding extra milk if needed, until light and fluffy.
- Set aside but keep warm.
- Half fill a pan with water and boil.
- Add salt and the spinach.
- Boil for one minutes, then drain and squash as much water out of the spinach as possible.
- Keep warm.
- Meanwhile, make the cheese sauce by melting the remaining butter in a pan over medium heat.
- Stir in the flour and gradually add 250ml of milk, stirring continually to make sure you get a smooth sauce.
- Once the mixture comes to a boil, lower the heat and leave to simmer for a few minutes.
- Season with salt, pepper and mustard.
- Add the cheddar cheese and stir until it is melted.
- Dust the fish with flour, shaking off any extra.
- Heat the oil in a frying pan and, when it is hot, lay out the fish.
- Cook for 2-4 minutes a side, depending on how thick the fillet is.
- To serve, divide the spinach between two warmed plates.
- Place the fish on top and cover with the sauce, adding mashed potato on the side.

- Melt butter in sauce pan.
- Add flour.
- Add milk and stir until thick to make a white sauce.
- Add 1/4 cup of the parmesan cheese and stir until melted.
- Add salt and pepper to sauce to taste.

- Cover with white sauce.

The Florentine style of cooking leans toward simple preparations of fresh foods to make consistently appealing meals. Traditionally, this dish uses a flaky white fish such as sole, cod, or halibut, but it does wonders for a salmon fillet or even orange roughy. Pack as much spinach as possible into the pot as it will cook down significantly Don't be afraid to push down the leaves with the heel of your hand. Just be sure that the seal around the lid is tight when the pot goes in the oven.
