The boys loved pressing the dough into the pan, spreading the frosting and adding the candy "pizza" toppings. - In a bowl, cream butter and brown sugar. Beat in egg and vanilla. Combine the flour, oats, baking soda and salt; gradually add to creamed mixture. Stir in chocolate chips. Spread onto a greased 12-in. pizza pan. Bake at 350° for 14-16 minutes or until golden brown. Cool on a wire rack., Spread frosting over cookie. Sprinkle with M&M's, candy coating and gumdrops. For "pepperoni", cut circles in strawberry fruit roll; arrange on pizza. Cut into wedges.

- OPTIONAL CANDY TOPPINGS: red licorice wheels or red fruit leather, black licorice, square piece bubble gum, green and/or purple taffy candy, pink bubble tape.
- Press sugar cookie dough into a round cookie pan.
- Bake according to package or recipe instructions.
- Remove from oven, allow to cool at least 2 hours. You can remove from the pan or leave it inside.
- Make royal icing according to box or recipe instructions.
- Divide about half of the icing into two other bowls, one with slightly more than the other.
- Color the remaining icing yellow (gel icing colors work best because they don't alter the consistency of the icing).
- Color the smallest portion of icing red and the last bowl a tan crust-like color (we used a little copper and a little brown to achieve this look).
- Fill an icing bag affixed with a large round tip (like #2A) with the yellow icing. Pipe a large circle onto cookie representing where you'll want your "cheese" layer to go out to (leave about 1 1/2 inches for the sauce and crust). Immediately fill this circle in with the rest of the yellow icing, spreading together with a spatula if needed.
- Allow the yellow icing to set for a few minutes until it has a slight crust on it.
- Now fill an icing bag with the same larger tip with the red icing. And pipe this around the "cheese" circle. This represents pizza sauce so it doesn't need to be perfect.
- Similarly allow to set for a few minutes before finally following with the crust-colored icing and spreading it out to the edge of your cookie. A flatter icing tip, such as #125, is perfect for this.
- Now make the perfect pizza for yourself by choosing your favorite toppings! Red licorice wheels are perfect pepperonis, and so is red fruit leather cut into circles. Cutting black licorice into little rings makes great olives. Red square bubble gum for tomatoes, yellow for pineapple, green or purple for onions. Bubble gum tape can be cut into squares for ham, and green or purple taffy can be cut into pepper slices or purple onion strips.
- Add your desired toppings and then use a pizza roller to slice into pieces and serve!
SNICKERDOODLE COOKIE PIZZA

- Preheat the oven to 350 degrees F. Line a 14-inch round baking pan with parchment and spray with cooking spray.
- For the pizza: In a medium bowl, whisk together the flour, baking soda, salt and cream of tartar. Set aside.
- In the bowl of an electric mixer, combine the butter and 1 cup sugar. Beat on high speed until light and fluffy, about 4 minutes. Add the egg yolks and vanilla and beat until combined. With the mixer on low speed, gradually add the flour and mix until just combined.
- Transfer the dough to the prepared baking pan and spread into the pan, leaving a 1-inch gap around the edge (to allow for spreading). In a small bowl, combine the cinnamon and the remaining 2 tablespoons sugar. Sprinkle over the dough. Bake until the cookie is brown at the edges, 12 to 18 minutes. Transfer to a wire rack to cool completely.
- Meanwhile, make the raspberry drizzle: Combine the raspberries, vodka, thyme and pinch of salt in a blender or food processor and pulse until smooth. Strain and store in the refrigerator until needed.
- Before serving, spread the cookie with chocolate ganache, leaving about 1-inch border. Scatter the brownie pieces, berries and chocolate chips on top of the pizza. Spoon about 1/4 cup raspberry drizzle over the top (reserving remaining drizzle for another use). Sprinkle with sea salt. Serve immediately.
MR. FOOD CHOCOLATE CHIP COOKIE PIZZA
I finally found this recipe after looking for it for years! I used to make this for my boys on their birthdays but switched to cinnamon rolls after I misplaced the recipe. I top it with re-whipped store bought frosting and mini m&m's. Printed in the winter 1998 issue of Mr. Food's Easycooking and posted here so I won't lose it again!

- Preheat oven to 350 degrees.
- In a large bowl, beat together brown & white sugars, butter, egg and vanilla until creamy.
- Add flour and baking soda, mixing well. The dough will be stiff.
- Stir in chocolate chips.
- Spread evenly on a 12 inch pizza pan.
- Bake 12-15 minutes or until golden brown. (I made this yesterday and mine took 20 minutes in a deep dish pan). It looked a bit undercooked, but after cooling, it made a nice chewy cookie.
- Cool completely.
- Spread frosting over top of cookie, leaving a 1/4 inch border around the edges.
- Sprinkle with optional ingredients if desired.
- Cut into 16 wedges.

- Heat the oven to 180C/160 fan/ gas 4. Beat the butter and sugars together in a large bowl using an electric whisk or table top mixer. Pour in the beaten eggs and vanilla, beating well until combined.
- Sift in the flour and salt and fold until evenly combined. Scatter over the chocolate chips and stir until they are rippled throughout the dough.
- Roll into a big round cookie and place onto a large baking sheet covered with parchment. If the dough feels very soft at this stage pop it in the fridge for 30 mins to firm up. Bake in the preheated oven for 25 mins until golden at the edges and still a little wobbly in the middle. Leave to cool for a couple of mins before topping. Spread the melted chocolate over the cookie, sprinkle with giant chocolate buttons, mini marshmallows and strawberries. Cut into about 15 slices and serve while it is still a little warm.

- (I used butter flavored Pam) Cream butter, sugars, cream cheese and vanilla in a large bowl (thank God for KitchenAid stand mixers).

- Lightly grease a 12 - 14 inch pizza pan.
- Combine flour, soda and salt; set aside.

- Preheat the oven to 350˚F (180˚C). Line a 10-inch (25-cm) cast iron pan with parchment paper.

- preheat the oven to 170 degrees. Grease and line a 9 inch pizza pan. Alternatively, cover a large baking tray with foil and pray with cooking spray. you want the foil to round slighly so you can create the cookie shape with the batter.

- melt milk chocolate in the microwave or in a bowl over a pan of simmering water. top your cookie will the melted chocolate, be sure to leave a 'crust around the edges' Then melt your white chocolate in a seperate bowl and pipe or drizzle the white chocolate over your cookie to act as the 'cheese' you don't have to wait for the cookie to be completely cool before topping.
