CINNAMON COFFEE BARS
"I've made these bars for more than 40 years, and they're still a favorite," writes Marylou Crouch from Granite Falls, Washington. The recipe makes a small pan, so the two of you can enjoy a few and have some left to share.

Steps:
- In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg and coffee. Combine the flour, baking powder, cinnamon, baking soda and salt; gradually add to creamed mixture. Stir in chocolate chips and walnuts. , Spread into a well-greased 8-in. square baking dish. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean., In a small bowl, combine the confectioners' sugar, vanilla and enough milk to achieve a desired consistency. Drizzle over warm bars. Cool completely on a wire rack before cutting.

- Preheat oven to 350°. In a large bowl, cream butter and brown sugar until well blended. Beat in vanilla and eggs, one at a time. In another bowl, whisk together flour, baking powder and salt; gradually beat into creamed mixture. Stir in cinnamon chips. Spread into a greased 13x9-in. baking pan. Sprinkle with cinnamon sugar., Bake until golden brown and a toothpick inserted in center comes out clean, 20-25 minutes. Cool completely in pan on a wire rack., In a small bowl, mix all glaze ingredients until smooth; drizzle over top. Cut into bars. Store in an airtight container.

- Preheat oven to 350°F.
- Butter 13x9x2-inch glass baking dish and set aside.
- Beat first 5 ingredients in large bowl on low speed using electric mixer until mixture resembles coarse meal.
- Transfer 1/2 cup butter-sugar mixture to medium bowl; mix in toffee and pecans.
- Set aside.
- Stir baking soda into remaining butter-sugar mixture in large bowl.
- Add buttermilk, egg and vanilla, beating until just combined.
- Transfer batter to prepared dish.
- Sprinkle toffee topping evenly over batter.
- Bake until topping is golden brown and toothpick inserted into center of cake comes out clean, about 35 minutes.
- Cool completely in baking dish.
- Cut into 16 squares.
- (Can be made 1 day ahead. Store in airtight container at room temperature.) Makes 16 squares.

Great bars for pot lucks, picnicks, or anytime, these travel well, and are easy to make...and good too...This recipe makes lots, but these bars freeze very well.

Steps:
- Set oven to 350.
- Grease a 12" x 18" jelly roll pan.
- In a saucepan, cook the butter and brown sugar, over low heat until it comes to a boil; remove from heat and cool.
- In a medium bowl, stir together the butter mixture, eggs and vanilla.
- Sift together flour, baking powder, salt and cinnamon; stir into the egg mixture until well blended; stir in chopped pecans.
- Spread batter into prepared greased jelly roll pan.
- Bake for 25 minutes.
- Remove from oven, immediately sprinkle with chocolate chips over the whole sheet.
- Let stand for 5 minutes, the spread evenly over entire surface.
- Cut into squares.

- 1. in a large bowl, combine cookie mix, quick oats and cinnamon. mix well.
- 2. combine cottage cheese, eggs and vanilla. add to dry ingredients and mix until well combined.
- 3. stir in cinnamon chips, toffee chips and walnuts or pecans. pour batter into a well greased 9x13 inch baking dish.
- 4. bake at 375 for 20-30 minutes. place on a rack and let cool.
- 5. combine melted sugar and cinnamon. add milk until a glaze consistency.
- 6. brush over the top of the bars. let cool and cut into bars. store in a zip top bag.
