This is a succulent meatloaf glazed with a sweet and sour sauce that everyone will enjoy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a small bowl, combine the ketchup, brown sugar, 1 tablespoon lemon juice and mustard powder.
- In a separate large bowl, combine the ground beef, bread, onion, egg, bouillon, remaining lemon juice and 1/3 of the ketchup mixture from the small bowl. Mix this well and place in a 5x9 inch loaf pan.
- Bake at 350 degrees F (175 degrees C) for 1 hour, drain any excess fat, coat with remaining ketchup mixture and bake for 10 more minutes.

- In a large bowl, combine the egg, 2 tablespoons ketchup, mustard, bread crumbs, dry soup mix, salt and pepper. Crumble beef over mixture and mix well. Shape into an oval loaf., Place in a shallow 1-qt. microwave-safe dish. Cover and microwave on high for 7-8 minutes; let rest 5 minutes. Microwave 1-3 minutes longer until no pink remains and a thermometer reads 160°; drain. , Meanwhile in a small bowl, combine the sugars, vinegar and remaining ketchup; drizzle over meat loaf. Cover and microwave on high for 2-3 minutes longer or until heated through. Let stand for 10 minutes before slicing.

- In a large bowl, combine the bread crumbs, salt, pepper and eggs; crumble beef over top and mix well. Add onion and half of the tomato sauce. Press into a 9x5-in. loaf pan. , Bake at 350° for 50 minutes. In a saucepan, combine the sugars, vinegar, mustard and remaining tomato sauce; bring to a boil. - Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
- Combine the meatloaf mix, breadcrumbs, spinach, mushrooms, prunes, dill, parsley, Worcestershire, eggs, garlic, onion, 1/4 cup of the ketchup, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
- Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
- Stir together the apricot preserves, soy sauce, ginger, vinegar and remaining 1/4 cup ketchup in a small bowl for the glaze. Remove the meatloaf from the oven and brush the top and sides all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.
SWEET AND SOUR MEATLOAF
It's a little bit sweet a little bit sour and makes the best sandwiches the day after that I have ever tasted. Sometimes you have to make it more then once to make it your own and adjust the sugar to vinegar ratio but it's worth it.

- Put into a loaf pan.

- Heat oven to 350°F. Beat egg in large bowl. Add all remaining meatloaf ingredients; mix well. Press mixture firmly in ungreased 8x4-inch loaf pan. Bake at 350°F. for 40 minutes.

- Preheat oven to 325°. Line a 9x5” loaf pan with a double layer of foil, leaving at least 3” overhang on the long sides, and lightly coat with vegetable oil. Whisk eggs, apple, scallions, garlic, ginger, gochugaru, brown sugar, soy sauce, salt, and sesame oil in a large bowl to combine. Add panko and mix with a stiff rubber spatula until well combined. Let mixture sit 5 minutes to hydrate.
- Stir one-quarter of beef into panko mixture, smashing and folding to combine evenly. Stirring with rubber spatula or using your hands, mix in remaining beef until evenly combined. Transfer to prepared pan and press evenly into pan, working into corners.
- Bake meatloaf until an instant-read thermometer inserted into the center registers 160°, 1¼–1½ hours. Let cool in pan at least 20 minutes
- Using foil overhang, remove meatloaf from pan and transfer to a cutting board. Cut meatloaf into 8 thick slices. Heat 1 Tbsp. oil in a large nonstick skillet over medium heat. Working in batches and adding remaining 1 Tbsp. oil halfway through, cook slices, reducing heat if browning too quickly, until deeply browned and warmed through, about 4 minutes per side.
