Spaghetti night goes gluten free! Enjoy this new twist on a family favorite. Gluten free spaghetti is tossed with delicious homemade gluten free meatballs, sautéed cherry tomatoes and topped with Parmesan cheese.

Gluten Free Spaghetti & Meatballs image

Steps:

  • In a large bowl, combine gluten free bread and milk. Let bread soak, then squeeze out excess milk.
  • In the same bowl, add bread, egg, ground beef, 1/2 the parsley, 1/2 the cheese, and season with salt and pepper. Roll into 3/4 inch balls & set aside.
  • In a large skillet, gently cook the garlic and chili flakes in olive oil. Add meatballs and cook thoroughly.
  • Add the cherry tomatoes and saute for 2 minutes, then season with salt and pepper to taste. Deglaze with wine and reduce mixture by half.
  • Cook the pasta according to package directions, then reserve 1/2 cup of the cooking liquid.
  • Drain the pasta then toss with the sauce and add the reserved cooking liquid.
  • Cook the pasta in the sauce for one minute, remove the skillet from the heat and fold in the remaining cheese and parsley.

Meatball recipes are often challenged by chefs who claim, "Mine are the best!" Even though my meatballs ARE the best, I will make no such claim. Try them for yourself! This meatball recipe was given to me by my father who got it from a little old lady from Italy that he knew. It's amazing that she gave up her recipe to him, but I sure am glad she did!

Authentic Italian Meatballs image

Steps:

  • Mix all ingredients in a large bowl by hand.
  • Use your bare hands for best results.
  • Roll meatballs to about the size of a golf ball. (wet your hands to prevent the meat from sticking to them while rolling the meat balls).
  • Drop raw meatballs into large (I use a stock pot) pot of sauce.
  • (I have an incredible sauce recipe {#92096} I use for my meatballs).
  • Simmer for about 3 hours.

1 lb ground beef
2 eggs
1/4 cup milk
1/2 cup breadcrumbs
1/2 teaspoon salt
1 tablespoon fresh parsley
1 teaspoon garlic powder
1/2 teaspoon fresh ground pepper

Steps:

  • Cover a baking sheet with foil and spray lightly with cooking spray.
  • Soak flour in milk in a small bowl for 20 minutes.
  • Mix beef and pork together in a large bowl. Stir flour mixture, eggs, parsley, garlic, salt, black pepper, nutmeg, Italian herb seasoning, and Parmesan cheese into meat mixture with a rubber spatula until combined.
  • Cover and refrigerate for about one hour. (optional).
  • Preheat an oven to 425 degrees F.
  • Using wet hands, form meat mixture into balls about 1 1/2 inches in diameter. Arrange onto prepared baking sheet.
  • Bake in the preheated oven until browned and cooked through, 15 to 20 minutes.

Steps:

  • Beat milk and egg together in a large bowl. Mix bread crumbs in until a paste forms. Add ground beef, onion, garlic, and parsley, and mix with your hands until just combined.
  • Preheat the oven to 350 degrees F (175 degrees C). Coat a baking sheet with cooking spray.
  • Measure meatballs using an ice cream scoop. Roll balls with dampened hands and place on the prepared baking sheet
  • Bake in the preheated oven until meatballs are no longer pink in the center and an instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C), about 30 minutes.
  • While meatballs bake, heat tomato sauce in saucepan over medium heat.
  • Add baked meatballs to the sauce and simmer, uncovered, for 30 minutes.
