Steps:
- Preheat the oven to 350 degrees F.
- For the crust, put the flour and 1/4 teaspoon salt in the bowl of a food processor fitted with the steel blade. Cut 12 tablespoons (1 1/2 sticks) of the butter into large dice, add to the bowl, and pulse until the butter is the size of peas. With the machine running, add the ice water all at once and process until the dough becomes crumbly. Don't overprocess. Dump the dough out on a floured board, gather it loosely into a ball, cover with plastic wrap, and refrigerate for 30 minutes.
- Roll the dough on a well-floured board and fit it into a 9-inch tart pan with a removable sides, rolling the pin over the top to cut off the excess dough. Butter 1 side of a square of aluminum foil and fit it, butter side down, into the tart pan. Fill the foil with rice or beans. Bake for 20 minutes. Remove the beans and foil from the tart shell, prick the bottom all over with a fork, and bake for another 10 minutes.
- Meanwhile, heat the remaining tablespoon of butter in a small pan and saute the shallots over low heat for 5 minutes, or until tender. Place the goat cheese in the bowl of the food processor and process until crumbly. Add the cream, eggs, basil, 1/4 teaspoon salt, and the pepper and process until blended.
- Scatter the cooked shallots over the bottom of the tart shell. Pour the goat cheese mixture over the shallots to fill the shell (if the shell has shrunk, there may be leftover filling). Bake for 30 to 40 minutes, until the tart is firm when shaken and the top is lightly browned. Allow to cool for 10 minutes and serve hot or at room temperature.
GOAT CHEESE TORTA
This is the prefect party dish - easy to make, but looks like you put a lot of work into it. I got this from a Junior League pal. Serve with butter crackers.

GOAT CHEESE AND SMOKED SALMON TORTA
This is the smoked salmon we always enjoy when we go and visit Dimi's nona (godmother). It's wonderful - simple, beautiful and so tasty! Thank you, nona, for always making this for us and making us feel special. To give credit where it is due, Dina got the recipe from 'The Christmas Table' by Carolyn Miller.

Steps:
- Place the pistachios in a small dry skillet and stir over medium heat until lightly toasted and fragrant, about 5 minutes. Pour the pistachios into a colander and stir and shake them over the sink to cool them and to remove some of the skins. Chop the pistachios and set them aside.
- In a small bowl, blend together the two cheeses and a few grinds of white pepper until smooth. Line a deep 3 or 4-cup bowl or fluted mold with plastic wrap. Spoon one third of the cheese mixture inside and pack it down; level the top with a rubber spatula. Sprinkle the minced salmon evenly over the cheese and press it down with the back of a tablespoon. Spoon another third of the cheese over the salmon, pack it down, and level the top with a spatula. Sprinkle all but 1 tablespoon of the pistachios evenly over the cheese and press it down with the back of a tablespoon. Spoon in the remaining cheese, pack it down, and level the top. Cover with the overlapping plastic wrap and chill for 2 or 3 hours.
- Uncover the top of the cheese, turn the bowl upside down, and unmold the cheese onto a large plate. Remove the plastic and sprinkle the reserved pistachios on top of the torta. Let the torta sit at room temperature for 1 hour. Circle the cheese with crostini and baguette slices and serve with 2 knives for cutting into wedges and spreading on the crostini and baguette slices.

This not only tastes good, it looks pretty, too! I serve it at parties as part of the appetizer spread. It's good on a plain cracker or little round of toast.

- Add goat milk to a large, nonreactive saucepan over medium heat. Heat until milk reaches exactly 75 degrees on an instant-read thermometer.
- Add the powdered and liquid mesophillic DVI to a small bowl. Add 2 tablespoons of the warm goat milk to the bowl and stir until well combined. Add the mesophillic mixture to saucepan with the remaining warm milk. Cover, and let stand, at room temperature, overnight.
- Cut set up cheese mixture into quarters to make it easier to transfer. Set a colander over a large bowl; line colander with 2 layers of cheesecloth. Carefully transfer mixture into the colander. Cover mixture with cheesecloth and let stand overnight at room temperature, until all of the liquid has drained from the cheese. Remove cheese from colander, discarding liquid, and store refrigerated in an airtight container, up to 2 weeks, or frozen up to 1 month.
