Steps:
- 1. Preheat a gas or charcoal grill to medium, or the oven to 450° F.
- 2. Toss together the grapes, rosemary, and 1 tablespoon of the olive oil; set aside.
- 3. Divide the dough into thirds and stretch each portion into a 10-inch circle.
- 4. Place the rounds on the grill or in the oven until cooked through, about 6 minutes, flipping each halfway through if using a grill.
- 5. Distribute the grapes, spoonfuls of the goat cheese, and the remaining olive oil on the pizzas.
- 6. Cover the grill (if using) and heat until the cheese begins to melt, about 5 minutes.

A different type of cheese pizza - The perfect pizza for cheese lovers. My Whole Wheat Yeast Free Herbed Pizza Dough #111650 is a perfect match for this pizza and is the ONLY crust I use when making this pizza. Note: I have been making this pizza for so long I don't measure the cottage cheese - I think I use closer to 1 cup.

Steps:
- Heat olive oil, add garlic and cook until golden.
- Brush garlic oil mixture over dough leaving 1/2" of outer dough uncovered.
- Sprinkle oiled surface of dough with mozzarella cheese.
- Bake 10 minutes at 400°F.
- Combine parmesan, parsley, and oregano.
- Remove pizza from oven and drop cottage cheese by 8 rounded piles in a circular pattern onto pizza.
- Sprinkle with parmesan mixture.
- Bake 10- 15 minutes at 400°F.
GOAT CHEESE ARUGULA PIZZA - NO RED SAUCE!
This pesto-based pizza is an amazingly simple and delicious variation to your regular pizza. Adapted from a pizza idea at a popular Neapolitan pizza restaurant in Washington DC, it'll take minutes to make and will disappear in even less time!

- Preheat oven according to pizza package instructions.
- Dab pesto onto the center of the pizza base, and spread toward the outer edges. Cut the goat cheese into thin coins, and spread or crumble across the pizza. Arrange tomato slices over goat cheese. Sprinkle with garlic. Brush the crust edges lightly with olive oil.
- Place pizza directly on preheated oven rack. Bake for 5 to 10 minutes, or until the crust edges are golden.
- After taking pizza out of the oven, allow to cool for a few minutes so that the cheese has time to set. After a couple of minutes, cover the pizza with a few handfuls of arugula. Cut, serve, and enjoy!

- For the ragù: Place a large stewpot or skillet over medium-high heat. Heat oil and add goat, stirring to break it up. Raise heat to high and cook until browned, about 5 minutes. Spoon off excess liquid. Add carrot, onion and celery, stirring for about 2 minutes.
- Add tomato paste and stir until blended, about 1 minute. Add wine and stir, scraping bottom of pan, until completely evaporated, about 2 minutes; adjust heat as necessary to prevent burning. Add tomatoes, chicken broth or water, bay leaves, red pepper flakes, cumin, coriander, fennel, thyme, rosemary, salt and pepper.
- Bring to a boil, then reduce heat to medium-low. Simmer uncovered until most of the liquid evaporates, about 1 1/2 hours, scraping down sides of pot as necessary to avoid burning. Meat will turn dark brown and liquid dark orange.
- For finishing: Cook pasta as desired, drain and add to sauce. Stir over medium-low heat, adding olive oil, butter and mint. Transfer to a heated serving bowl, and top with pecorino. Serve immediately.

WHITE PIZZA
I was looking for a white pizza recipe and couldn't find just what i was looking for. We used to get the best white pizza from a place on the west side of buffalo, ny "la nova" (1 of the best pizza places). When i couldn't find it i was on a mission and this is what i came up with. As with all my recipes adjust to your own liking. The seasoning are as close as i can get. I you are making your own dough plan ahead.

Steps:
- *If using home made dough do this a head of time allowing the needed time.
- Slice onions and carmelize; add garlic and anchovy paste or anchovies 1/2 thru cooking about 5 minutes into cooking you want to add the Italian seasoning now.
- You don't want garlic to burn.
- Pre heat oven to 425.
- *Prepare dough for pan.
- Top your dough with the onion mixture.
- Top with your cheese.
- Top with the tomatoes and artichokes.
- Sprinkle with the parm cheese.
- If it seems on the dry side drizzle with olive oil.
- Bake for 20 - 25 minutes.
- Pour a glass of wine and enjoy!

- Preheat oven to 475 degrees.
- Grease a large baking sheet. On the baking sheet, flatten out dough ball starting from the center, taking care not to flatten the edges. Make the center of the crust as thin as possible. Crust will be 12-14 inches in diameter.
- In a small bowl, combine Ragu sauce, arugula, oregano, and cilantro. Mix well.
- Ladle sauce mixture onto the dough, and spread evenly. Top with mozzarella and provolone. Evenly spread grapes, rosemary, goat cheese, and pine nuts.
- Bake for 11-14 minutes, until crust and cheese begin to brown, but not burn. Let cool for 2 minutes, then slice and serve.

SMOOTH WHITE GRAPE GAZPACHO

- Put the soy milk and almonds in the jar of a blender and puree until very smooth, about 2 to 3 minutes. With the motor running, slowly add the grapes, scallions and lime juice; season with salt and pepper and puree until well blended.
- To serve, pour into a small bowls and garnish with chopped or sliced grapes and sliced scallions.
- Note: Gazpacho can be served immediately but is even better if refrigerated until very cold. Stir well before serving.

My kids eat this on a regular basis BUT they think that Ranch dressing and cheese are condiments like ketchup is! We make these also as snack size using an english muffin. This is the actual recipe from California cheese with the added variations. Serving size is for 4 normal meal size portions or 1 teenage son!

- Sprinkle Mozzarella and Monterey Jack evenly over dressing.

- Preheat oven with pizza stone to 500 degrees F.
- Parbake dough for a little while--no more than 4-5 minutes. Watch it, when it gets a tiny bit done-looking, take it out.
- Toppings: Sprinkle garlic on crust, followed by spinach, then cheese, then sundried tomatoes.
- Sprinkle with EVOO and red pepper flakes and sea salt.
- Bake at 500 degrees till finished (no more than 10 minutes, probably).
- Enjoy!
