CLASSIC ROAST TURKEY

Guarantee a succulent roast turkey on Christmas Day with our simple, traditional recipe. Don't forget the stuffing and all your favourite trimmings

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Put the onion and a large sprig of bay in the cavity between the legs. Now pack half the stuffing into the neck end, pushing it towards the breast. Secure the neck skin in position with skewers and tie the turkey legs together at the top of the drumsticks to give a neat shape.
  • Weigh the turkey and calculate cooking time at 20 mins per kilo, plus 90 mins. (You may need to use your bathroom scales.)
  • Put a large sheet of extra-wide foil in a large roasting tin, then put the turkey on top. Smear the breast with the butter, grate over half the nutmeg and season well. Cover the breast with bacon, pour over the wine, then loosely bring up the foil and seal well to make a parcel.
  • Roast in the oven, then 90 mins before the end of cooking, open the foil, discard the bacon, and drain off excess fat from the tin. Leaving the foil open, return the turkey to the oven to brown, basting with the juices several times. Then 30 mins before the end of cooking, place pigs-in-blankets and stuffing of your choice around the turkey, or cook in a separate lightly oiled tin.
  • To test whether the turkey is cooked, push a skewer into the thickest part of the thigh - the juices should run clear. If they are pinkish, cook for 15 mins more, then test again.
  • Transfer the turkey, stuffings and pigs-in-blankets to a platter, cover with foil, then a couple of tea towels and allow to rest for up to 30 mins before carving. This gives the juices time to settle back into the meat, ensuring that the turkey will be juicy. Garnish with sprigs of bay.

  • Combine all brine ingredients, except ice water, in a stockpot and bring to a boil.
  • Stir to dissolve solids then, remove from heat and cool to room temperature.
  • Refrigerate until thoroughly chilled.
  • The night before cooking, combine the brine and ice water in a clean 5 gallon bucket.
  • Place the thawed turkey, breast side down, in the brine.
  • cover and refrigerate, or place in a cool environment for 6 hours.
  • Turn the turkey over once, halfway through the brining.
  • Before roasting:.
  • Heat the oven to 500°.
  • Combine apple, onion, cinnamon stick, and cup of water in a microwave safe dish and microwave on high for 5 minutes.
  • Remove the bird from the brine and rinse the inside with cold water. Discard the brine.
  • Pat the bird dry with paper towels and place on a roasting rack in a low, wide pan.
  • Add the steeped aromatics to the cavity with the rosemary and sage.
  • Tuck the wings back and coat the bird liberally with olive oil.
  • Place on the lowest oven rack and cook for 30 minutes at 500°f.
  • Remove from the oven and cover the breast with a double layer of aluminum foil.
  • Lower temperature to 350°f, insert a probe thermometer in the thickest part of the breast and return to the oven for 2 to 2 & 1/2 hours. The thermometer should read 161°.
  • Let the turkey rest, loosely covered for 15 minutes before carving.

  • Place bird on roasting rack inside wide, low pan and pat dry with paper towels.
  • Add steeped aromatics to cavity along with rosemary and sage.
  • Tuck back wings and coat whole bird liberally with canola (or other neutral) oil.
  • Roast on lowest level of the oven at 500F for 30 minutes.
  • Remove from oven and cover breast with double layer of aluminum foil, insert probe thermometer into thickest part of the breast and return to oven, reducing temperature to 350°F.
  • Set thermometer alarm (if available) to 161°F.
  • A 14-16 pound bird should require a total of 2-2 1/2 hours of roasting.
  • Let turkey rest, loosely covered for 15 minutes before carving.

Steps:

  • 2-3 days before roasting:
  • Begin thawing the turkey in the refrigerator or in a cooler kept at 38 degrees F.
  • Combine the vegetable stock, salt, brown sugar, peppercorns, allspice berries, and candied ginger in a large stockpot over medium-high heat. Stir occasionally to dissolve solids and bring to a boil. Then remove the brine from the heat, cool to room temperature, and refrigerate.
  • Early on the day or the night before you'd like to eat:
  • Combine the brine, water and ice in the 5-gallon bucket. Place the thawed turkey (with innards removed) breast side down in brine. If necessary, weigh down the bird to ensure it is fully immersed, cover, and refrigerate or set in cool area for 8 to 16 hours, turning the bird once half way through brining.
  • Preheat the oven to 500 degrees F. Remove the bird from brine and rinse inside and out with cold water. Discard the brine.
  • Place the bird on roasting rack inside a half sheet pan and pat dry with paper towels.
  • Combine the apple, onion, cinnamon stick, and 1 cup of water in a microwave safe dish and microwave on high for 5 minutes. Add steeped aromatics to the turkey's cavity along with the rosemary and sage. Tuck the wings underneath the bird and coat the skin liberally with canola oil.
  • Roast the turkey on lowest level of the oven at 500 degrees F for 30 minutes. Insert a probe thermometer into thickest part of the breast and reduce the oven temperature to 350 degrees F. Set the thermometer alarm (if available) to 151 degrees F. A 14 to 16 pound bird should require a total of 2 to 2 1/2 hours of roasting. Let the turkey rest, loosely covered with foil or a large mixing bowl for 15 minutes before carving.

Steps:

  • Make turkey giblet stock and herbed bread stuffing.
  • Roast turkey:.
  • Preheat oven to 425°F.
  • Rinse turkey inside and out and pat dry.
  • Season with salt and pepper inside and out.
  • Loosely fill neck cavity with some of stuffing.
  • Fold neck skin under body and fasten with a small skewer.
  • Loosely fill body cavity with some stuffing and tie drumsticks together with kitchen string.
  • Transfer remaining stuffing to a buttered 3-quart shallow baking dish and chill, covered.
  • Secure wings to body with small skewers if desired for a nicer appearance.
  • Put turkey on a rack set in a flameproof roasting pan.
  • Roast turkey in middle of oven 30 minutes.
  • Melt 1/2 stick butter.
  • Reduce oven temperature to 325°F and pour melted butter over turkey.
  • Roast turkey, basting every 20 minutes, for 3 to 3 1/2 hours more, or until a thermometer inserted in center of stuffing in body cavity registers 165°F (thigh will be about 180°F).
  • Transfer turkey to a heated platter and keep juices in pan.
  • Remove skewers and discard string.
  • Transfer stuffing from cavities to a serving dish and keep warm, covered.
  • Let turkey stand at least 30 minutes and up to 45.
  • Increase temperature to 375°F
  • Stir together chicken broth and water and drizzle over uncooked stuffing in baking dish.
  • Dot stuffing with remaining 2 tablespoons butter and bake in middle of oven 40 minutes while turkey stands; for moist stuffing, bake covered entire time; for less moist stuffing with a slightly crisp top, uncover after 10 minutes.
  • Make gravy:.
  • Skim fat from pan juices and reserve 1/4 cup fat.
  • Add 1 cup giblet stock to roasting pan and deglaze over moderately high heat, scraping up brown bits.
  • Add to remaining 3 cups stock and bring to a simmer.
  • Whisk together reserved fat and flour in a large heavy saucepan and cook roux over moderately low heat, whisking, 3 minutes.
  • Add hot stock to roux in a fast stream, whisking constantly to prevent lumps, and simmer, whisking occasionally, until thickened, about 10 minutes.
  • Stir in additional juices from turkey platter and season gravy with salt and pepper.
  • Note:.
  • If you choose not to cook your stuffing inside the bird, your turkey will take less time to roast, only about 2 to 3 hours (thigh should register 170°F).

While the cooking method is rather unconventional, this is the absolute best turkey you could ever want to eat. Adapted from a recipe by the late Edna Staebler. This is the same way my mother always cooked her turkey each year. We never ever did have a dry turkey. Word of truth.

The Best Roast Turkey You Could Ever Eat image

Steps:

  • Rinse the turkey and dry it well. Sprinkle the cavity well with salt. Stuff as desired.
  • Rub the softened butter all over the outside of the bird, and sprinkled it lightly with salt.
  • Place the turkey on the rack of a large roaster, which has a heavy bottom, pouring about 2 inches of water in the bottom of the pan.
  • Lay the neck and giblets alongside, cover the pan tightly and put it on the large burner on top of the stove. Allow it to boil and then steam gently for 4 1/2 to 5 hours, approximately the same length of time that it would take to roast the same bird. Take care to see the pan does not cook dry.
  • When the drumsticks are loosened and the meat thermometer indicates the bird is about done, dribble a bot of soft butter over the skin, sprinkled it with a bit of white sugar and flour and bang it into a 350*F oven to brown while theaccompanying vegetables are cooking on top of the stove.
  • The drippings in the bottom of the roasting pan will be a rich dark brown. Skim off any fat and then use them to make a rich gravy.
