PAULA DEEN LOW-COUNTRY BOIL

This is Paula Deen's recipe for a Low-Country Boil that was in the Women's Wold Magazine. I bought the magazine because the picture of this meal on the cover. Since I don't eat pork I used Turkey Kielbasa and it was delicious! Next time I will double the Kielbasa since it was the kids favorite part. Thank you Paula!

Paula Deen Low-Country Boil image

Steps:

  • Fill large pot with enough water to cover ingredients. Over high heat bring to a boil; add lemon and 1 Tbs. Old Bay seasoning for each quart of water. Reduce heat to medium; add potatoes and sausage. Cook until potatoes start to soften, about 10 minutes.
  • Add corn; cook until almost tender, about 7 minutes. Add shrimp; cook until opaque and just cooked through, 2-3 minutes. Drain.
  • Meanwhile, in microwave-safe bowl, combine butter and garlic; microwave on High in 15 second intervals until melted. Stir in parsley. Serve Low-Country Boil with Butter mixture and warm bread, if desired. (I pour butter mixture over corn).

1 lb baby red potato, about 12
1 (12 ounce) package smoked sausage, such as andouille, cut into 4-inch-long pieces
6 ears fresh corn, shucked, cut in half
3 lbs large unpeeled shrimp (extra large or jumbo)
1/4 cup butter
1 garlic clove, minced
2 tablespoons fresh parsley, chopped

Steps:

  • Line a 13x9 pan with whole graham crackers.
  • Melt butter in saucepan and add sugar.
  • Beat egg and milk together; add to butter mixture.
  • Bring to a boil, stirring constantly.
  • Remove from heat.
  • Add nuts, coconut, and 1 cup graham cracker crumbs.
  • Pour over crackers in the pan.
  • Cover with another layer of whole graham crackers.
  • PREPARE TOPPING:.
  • Beat all topping ingredients together and spread over top layer of crackers.
  • Chill then cut into squares.

LOW COUNTRY BOIL

This dish is indigenous to Savannah and our lifestyle. Calling up a dozen friends for a cookout is a great casual way to entertain, especially if the food is cooked outside over an open flame (you can also use a portable gas fish cooker). Once the Low Country Boil has been cooked and drained, I like to pour it out on a table covered with newspaper.

Steps:

  • Fill a large pot with enough water to cover all ingredients. Add crab boil and heat until boiling. Adjust crab boil to suit your taste. When boiling, add potatoes and sausage. Cook on medium heat for 20 minutes. Add corn and cook for an additional 10 minutes. Add shrimp and cook for no more than 3 minutes (do not overcook!). Drain and serve with piping-hot bread and ice-cold beer.

Crab boil (2 teaspoons per quart of water)
12 small red new potatoes
Six 4-inch pieces good smoked link sausage
6 ears fresh corn
3 pounds fresh shrimp (26 to 30 count per pound), unpeeled

Steps:

  • Bring water to a boil in a large stockpot, and add the garlic and the seasonings to the water. Add Kielbasa, potatoes, and carrots. Bring to a boil and boil uncovered until vegetables are almost tender, about 5 minutes.
  • Add corn and onions and boil 5 minutes longer.
  • Add shrimp and lemon slices, and simmer until shrimp are done, about 3 to 4 minutes. Remove lemon slices. Garnish with parsley, if desired.

1/2 gallon water
1 tablespoon Old Bay Seasoning
8 garlic cloves, cut in halves
3 bay leaves
cayenne, to taste (very potent, so start with a pinch and increase to desired taste)
salt and pepper, to taste
1 1/2 lbs kielbasa or 1 1/2 lbs smoked sausage, sliced into 1-inch pieces
12 small new potatoes, washed
4 carrots, scraped and cut into fourths
4 ears corn, husks removed and cut into thirds
12 small white onions, peeled
3 lbs shrimp, in shells
1 lemon, sliced
chopped fresh parsley (optional)

CAROLINA LOW-COUNTRY SHRIMP BOIL

This recipe is AWESOME for Summertime dinner parties. After trying all different recipes, I came up with this one. It seems to work well for us and anyone who tries it. You can add cayenne if you like it more spicy as well as cayenne to kick it up. We like it just like this....

Carolina Low-Country Shrimp Boil image

Steps:

  • In one large pot (one you would use to steam crabs or lobster) fill approximately 1/2 full with water.
  • To pot add potatoes, sausage and lemons. Add 1/2 cup Old Bay seasoning and crab boil package.
  • Bring to a boil.
  • Boil approx 10 minutes, add corn.
  • Meanwhile melt 1 stick butter in other large pot.
  • Add crushed garlic, beer, 1 tablespoon salt, 3-4 tablespoons pepper and approx 4 cups water.
  • Bring to boil.
  • You will add shrimp to this once pot the potatoes and corn are cooked. Only takes a few minutes (5-7) for them to turn pink once they hit the boiling water.
  • While shrimp is boiling, drain potatoes and corn pot. Layering as you go, add 1/2 pound melted butter and generous sprinkles of more Old Bay seasoning in a large serving bowl.
  • Should do about 4-5 times until this pot is empty. This adds great flavor!
  • Drain shrimp pot. Place shrimp in large bowl. Sprinkle with Old Bay seasoning.
  • Serve with garden salad, fresh bread, cocktail sauce, plenty of napkins and several bowls for de-shelling. Sometimes I use use several butter warmers with clarified butter, but it isn't a must. They taste great either way!
  • Sweet iced tea and beer are typically the beverages for this meal.
