GRANDMA'S GRAHAM CRACKER PUDDING
A wonderful, very rich pudding recipe that is one of our family's favorites. My husband's grandma makes it every Thanksgiving and Christmas. This delicious dessert never lasts long, and it's very filling, too.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- In a medium bowl, mix butter, brown sugar, and 2/3 of the crushed graham crackers. Press lightly into the bottom of a 9x13 inch baking dish.
- In a medium saucepan over medium heat, mix milk, salt, egg yolks, vanilla, white sugar, and cornstarch. Stirring constantly, cook until thickened, about 12 minutes. Pour into the baking dish.
- In a medium bowl, beat egg whites until soft peaks form, then mix in confectioners' sugar. Spoon over the mixture in the baking dish, and top with remaining crushed graham crackers.
- Bake 15 minutes in the preheated oven, until lightly browned.

- Pour milk into a medium bowl. Add pudding mix and whisk until thoroughly combined. Allow to sit 10 minutes.

Steps:
- Preheat oven 375 degrees F.
- Crush crackers using a ziplock bag and rolling pin.
- Add sugar and soft butter, mix well.
- Press crumb mixture into deep dish pie pan.
- Bake 7 minutes and cool.
- Filling: Combine sugar, cornstarch, salt and egg yolks in a bowl.
- Add warm milk slowly to sugar mixture.
- Pour back into a sauce pan and cook over med.
- heat stirring constantly until thickened.
- Add vanilla and cool slightly.
- Pour filling into a cooled crust.
- Cover filling w/ a thin coating of butter and cool.
- Meringue: Beat room temp.
- egg whites, salt and sugar until slightly stiff and shiney.
- Add cream of tartar and beat until white firm stiff peaks.
- Spread meringue over pie making sure it touches the crust to prevent shrinking.
- Place under an oven broiler and let meringue brown a bit.
- Watch carefully as this takes only a minute.

- For the crust, preheat the oven to 350 degrees F. Combine the graham cracker crumbs and sugar in a bowl. Stir in the melted butter until evenly mixed. Press the mixture in the bottom and up the sides of a 9-inch pie plate. Bake the crust for 8 minutes. Remove and let cool completely. Cover with saran wrap until ready to use (this can be made several days in advance if kept well-covered).
- For the pudding layer, in a medium saucepan, whisk together the cocoa powder, brown sugar, cornstarch and salt. Add the milk and whisk to combine. Stir in the chocolate chips.
- Bring the mixture to a simmer over medium heat, stirring constantly. Continue to whisk as the mixture comes to a boil and large bubbles break across the surface and the mixture has thickened.
- Remove from the heat and stir in the vanilla extract. Scrape the pudding into a bowl and cover with plastic wrap pressed directly on the surface. Refrigerate until chilled and set up (2-3 hours).
