GRANDMA SNYDER'S OATMEAL CAKE

This is a great cake for any sweet tooth. It is good served hot too.

Grandma Snyder's Oatmeal Cake image

Steps:

  • Pour water over oats, let stand.
  • Cream 1/2 cup butter or margarine and sugars. Add eggs and blend in a large mixing bowl. Sift the flour, baking soda, salt, cinnamon and nutmeg together. Add to sugars and egg mixture. Add vanilla and oats mixture, blend well.
  • Pour batter into a 9 x 13 inch pan.
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 30-40 minutes.
  • To Make Icing: Mix together 6 tablespoons melted butter, 1 1/2 cups brown sugar, 3/4 cup evaporated milk, coconuts, nuts, and 1 teaspoon vanilla.
  • Pour this coconut concoction over the hot cake.
  • Put cake under broiler, and watch close so nuts don't burn, about 5-10 minutes. Serve hot or let cool. Enjoy.

Steps:

  • Directions for the cake Add oats and butter to boiling water.
  • Reduce heat and cook for five minutes to soften oats.
  • Meanwhile, mix together the beaten eggs and the brown sugar, and set aside.
  • Sift the rest of the dry ingredients together into a large bowl.
  • Add the softened oats and the egg mixture and stir together.
  • Batter will be heavy.
  • Pour into a 9 x 13 pan and bake at 350 degrees for 35 to 40 minutes.
  • While baking, prepare the icing (recipe to follow).
  • Directions for the icing In a medium saucepan, melt the butter.
  • Add the brown sugar and stir to melt and combine.
  • Add the remaining ingredients and stir until combined.
  • When cake is done, pour the icing onto the hot cake.
  • Broil for five minutes, watching cake closely, until icing is bubbly.

  • In a shallow bowl, combine rolled oats and boiling water. Let stand for 20 minutes.
  • Using a mixer, cream butter until creamy.
  • Gradually beat in sugars, and beat until light.
  • Blend in eggs and vanilla.

  • In a large bowl, combine the oats, whole wheat flour, butter, 2 tablespoons honey, molasses and salt. Stir in boiling water; cool to 110°-115°. Dissolve yeast in warm water; add remaining honey and let stand for 5 minutes. Stir yeast mixture into oat mixture with egg and enough all-purpose flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide into 16 pieces.   • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 pan.
  • In a small bowl, pour boiling water over oats. Mix well, and cool.

This recipe for spice cookies came to The Times from Claire Will of San Francisco after a callout for favorite holiday recipes. At first, it seemed rather plain Jane, but the hefty dose of ground cloves (3/4 teaspoon) was what lured me into testing it, and I have to admit I was skeptical. I was soon a believer. Of the five kinds of cookies I served to a group at a holiday party, those crisp-edged, soft-centered beauties were the first to vanish. One friend texted on his way home, "send recipe for spice cookies a.s.a.p."

  • Heat oven to 375 degrees. Line several baking sheets with parchment paper or nonstick liners.
  • Using an electric mixer, beat 12 tablespoons butter with the granulated sugar, molasses and egg until fluffy, about 2 minutes. Slowly beat in flour, baking soda, spices and salt.
  • Shape dough into walnut-size balls and place 2 inches apart on baking sheets. Bake until firm, about 10 to 12 minutes. Let cool on wire racks.
