GRANDMA VANDOREN'S WHITE BREAD
What Grandma used to make! Our family's favorite. The recipe was never written down (that I know of) until she shared it with me when she was in her 90's.

Steps:
- In a large bowl, combine warm water, yeast, salt, oil, sugar, and 4 cups flour. Mix thoroughly, and let sponge rise until doubled in size.
- Gradually add about 4 cups flour, kneading until smooth. Place dough in a greased bowl, and turn several times to coat. Cover with a damp cloth. Allow to rise until doubled.
- Punch down the dough, let it rest a few minutes. Divide dough into three equal parts. Shape into loaves, and place in three 8 1/2 x 4 1/2 inch greased bread pans. Let rise until almost doubled.
- Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes. The loaves may need to be covered for the last few minutes with foil to prevent excess browning.

GRANDMA CARTER'S BREAD
She made this bread every day of her life until she had to go to assisted living. She lived to be 105 so I know the recipe is very old.

Steps:
- Mix dry ingredients, cut in shortening. Make a hollow in the center of the dry ingredients.
- Dissolve yeast in warm water. Add to the center of the flour mixture.
- Knead until smooth and elastic, adding more flour as needed. This takes longer than you think it should.
- Put in greased bowl and cover. Raise in warm place until double.
- Punch down and turn. Raise again to double.
- Make into rolls or loaves. Let raise again.
- Bake at 375 degrees until golden and sound hollow when tapped.
- Remove from pans to cool. Rub tops with butter while still hot.
- This is the recipe exactly as she told it to me. If you've never made bread before, I would try a different recipe with more detail first. She was better at showing us what to do than explaining all the steps. She's been gone for 10 years now and I think of her every time I make this.

- In a large bowl, combine 1 1/2 tablespoons of sugar and water. Sprinkle yeast over top of the mixture and allow it to sit for 10 minutes and foamy.
- The yeast puffs up and covers the surface of the water. If your yeast doesn't foam up within ten minutes you might need to use slightly cooler water or get some fresh yeast.
- My grandmother always said that as a general rule run tap water on top of the underside of your wrist or forearm until you can just tolerate the heat. That is when you grab your large measuring cup, whatever heat resistant bowl you are using and add your water, sugar and then yeast.
- Stir in 2 3/4 cups of the flour until incorporated. Cover with a warm damp cloth and place in a warm area for 45 minutes. My grandmother always left the bread in front of the window with the sun shining on it. This bread needs to rise in a warm area or it will not rise properly.
