GRANDMA STRAIT'S FUDGE

This was my Grandmother's recipe for fudge that she sold in her candy shop. It is the best fudge I have had and it is very easy to make. If pecans aren't your forte, substitute walnuts or almonds!

Steps:

  • Grease an 8x8 inch baking pan. Set aside.
  • In a medium saucepan combine sugar, condensed milk, butter and chocolate chips. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
  • Remove chocolate mixture from heat and add marshmallow and nuts. Pour the fudge into the prepared pan, and let set.

Steps:

  • Heat medium sized sauce pan at medium heat.
  • Put chocolate and butter into the pan, melt.
  • Mix sugar into butter and chocolate mixture.
  • In a separate bowl, beat eggs with a few tablespoons of milk.
  • Stir egg mixture into chocolate sauce as fast as you can!
  • Don't take too long because the eggs will scramble-mixing half of the egg mixture in at a time makes it easier.

  • Use more than called for, if necessary.
  • Add salt and vanilla.
  • Enjoy!
  • Store left overs in the fridge for up to a week.
  • You may be tempted to eat it out of the jar!

1/2 cup butter
4 ounces unsweetened baking chocolate
2 1/4 cups sugar
2 eggs
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2-1 cup milk

GRANDMA STRAIT'S FUDGE - REVIEW BY MICKI J - ALLRECIPES.COM
DO NOT follow this recipe! I am a "seasoned baker" and followed the recipe to a T. If the recipe is right, then use powdered sugar, not granulated--but I have not tried that version yet...taste is good, but gritty as heck, don't waste $15 in ingredients by following this!

GRANDMA STRAIT'S FUDGE - REVIEW BY MIHAELA
This recipe has been far from rewarding for the effort and time involved. Despite my stirring constantly for 45 minutes, the sugar never really melted to give the fudge the smoothness it should have.
