GRANDMA'S BEST EVER BANANA NUT BREAD
This is dark, rich and moist. It is sweet and flavorful and I am told unlike any other people have tasted. Some liken it Mimi's Cafe, but say it is better. My mother, Belen, who passed away at the age of 100 had been making this for as long as I can remember. Please follow the instructions regarding putting the vinegar in the milk in one cup and the baking soda in warm water in another before mixing it with other ingredients. It makes a difference.

- Mix together 4 tablespoons milk with 1 teaspoons white vinegar in a cup.
- Mix together 1 ts. baking soda with 1 tablespoons warm water in a separate cup.
- Beat sugar and margarine until blended.
- Add eggs and bananas and mix.
- Add everything else.
- Prepare a large.

GRANNY'S BANANA BREAD
My Great-Grandma used to make this for us whenever we would spend the night at her cabin in Paris, Arkansas. I make it now for my kids and it brings back such wonderful memories! It's absolutely magnificent warm with some sweetened butter.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease and flour a 9x5 inch loaf pan.
- In a large bowl, stir together flour, baking soda, cinnamon, nutmeg and white sugar. Stir in eggs, applesauce, bananas and vanilla extract. Fold in raisins and nuts if desired. Pour batter into prepared pan.
- Bake in preheated oven for 45 to 60 minutes, until a knife inserted into center of the loaf comes out clean.

Steps:
- Sift flour, baking powder, salt and sugar together in a bowl.
- Add eggs, Crisco and 1 cup of the ripened, mashed bananas.
- Beat with an electric mixer on medium speed for 2 minutes.
- Add remaining bananas and lemon juice.
- Beat 2 more minutes.
- Fold in nuts.
- Pour into a loaf pan sprayed with non stick cooking spray.
- Bake at 350 degrees for about 1 hour or until knife comes out clean.
GRANDMA'S BANANA BREAD
This bread recipe was from my husband's grandmother. It is so simple to make and always comes out great. The original recipe did not have the vanilla in it, but I always add it. If I have bananas that are ripe, but I am not ready to make the bread, I just plop them in the freezer, peel and all. No need to put in a bag. They will turn black, but the insides will remain good and will be perfect for the bread. Just remove from the freezer, peel and add to the mixture.

- Preheat oven to 300 degrees. Grease a bread pan.
- Cream surage and shortening. Mix in eggs and vanilla.
- Blend in the dry ingredients and then the mashed bananas.

- Note: I usually bake this in a medium sized casserole pan. Just watch the cooking time. It should be done in about 40-50 minutes.

- Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking pan.
- In a large bowl, cream together the sugar and margarine until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the vanilla.
- In a large bowl, sift together flour, baking soda and salt. Blend this mixture into the egg mixture, alternately with the buttermilk; stir just to combine. Fold in the mashed bananas; mixing just enough to evenly combine. Pour batter into prepared pan.

Steps:
- Preheat oven to 350°F.
- Mix first six ingredients in a large bowl.
- Melt butter and set aside to cool.
- If the bananas aren't overripe, slice and add to butter in a saucepan while it melts and the will soften and be easier to mash.
- Lightly beat 2 eggs in a medium size bowl and add the yogurt, vanilla, banana and butter and mix.
- Carefully fold banana mixture into the dry ingredients with a rubber spatula until mixture is combined. do not overmix.
- Pour mixture into a greased 9x5x3 regular loaf pan or a greased and floured non-stick loaf pan.
- Bake at 350°F for 55 minutes or until toothpick comes away clean on lower middle oven rack.
- Cool for 10 minutes before moving to wire rack.
- Serve warm or at room temperature.

They can be made any time of the year-bring them to parties, keep them for your family, save one for yourself, save 10 for yourself, whatever you want! I promise everyone will love this delicious balance of sweet but not too sweet. Eat hot, eat cold, eat these whenever. They can be stored in the freezer or in a container.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a cookie sheet.
- Combine flour, baking powder, and salt in a large bowl. Stir mashed banana, sour cream, and vanilla together in another bowl.
- Cream margarine and sugar in a large bowl with an electric mixer. Beat in eggs. Mix in banana-sour cream mixture until incorporated. Add dry ingredients until well combined. Stir in nuts.
- Drop small spoonfuls of batter onto the prepared cookie sheet; cookies do not expand much in the oven.
- Bake in the preheated oven, checking occasionally, until bottoms are light golden brown and cookies are set but still a tad soft, 10 to 12 minutes. Remove cookies to a rack to cool.
- While the cookies are cooling, prepare frosting: Melt butter in a saucepan over medium-low heat. Stir in brown sugar and reduce heat to low. Stir and bring to a boil. Boil, stirring constantly, for 2 minutes. Remove from heat.
- Stir in 1/4 cup milk and bring to a boil again. Remove from heat and let cool, 10 to 15 minutes.
- Gradually stir in powdered sugar until frosting is desired consistency. If frosting hardens while working, stir in a little bit of milk.
- Spread frosting on cooled cookies.
