TASTE N' SEE CHILI SAUCE (CANNING HOME-MADE)

This is a relish which has been enjoyed as it made it's colorful presence on the tables in our family for generations.I received it from my mother, Nanny Darling G.G.Darling, she from hers.

TASTE N' SEE CHILI SAUCE (canning home-made) image

Steps:

  • 1. Wash 30 large tomatoes Scald in boiling water untle skins begin to roll back Remove from water and finish skinning Chop or grind tomatoes -OR - RUN THROUGH FOOD PROCESSOR REMOVING SKINS & SEEDS.
  • 2. Wash red n' green peppers Halve remove seeds and any thick white skin Chop red n' green peppers Peel, slice and chop onion
  • 3. Put all ingredients including sugar, salt and spices into large non stick pan
  • 4. Cook. Simmer for 3 hours This is a great sauce I know you ll enjoy. I haven't canned it in a number of years so cannot tell you the # of pint jars it yields. What I've numbered is an estimate. I have cut it down and made it for my husband. It is delicious.

30 large tomatoes fresh picked
6 large onions
2 large green bell peppers
2 large sweet red peppers
3 c sugar in the raw
3 c vinegar
2 1/2 Tbsp salt
1 tsp cinnamon
1 tsp cloves
1/4 tsp alspice

This is a sweet chili sauce made according to an old family recipe. It is great on hamburgers, and pot roast. If you don't can the sauce in jars, it can be refrigerated.

Fresh Tomato Chili Sauce image

Steps:

  • Place the tomatoes in a large pot over medium heat, and simmer 1 hour. Skim off any excess liquid or foam. Stir in the chile peppers, bell peppers, onion, vinegar, lime juice, white sugar, brown sugar, and desired amount of salt. Reduce heat to low, and simmer 3 to 5 hours until liquid reduces and thickens. Adjust seasonings to taste.
  • Remove chili sauce from heat, and skim off any foam. Pour into hot, sterilized jars, leaving 1/4 inch headroom. Adjust lids. Process for 10 minutes in a boiling-water bath.

⅓ cup fresh lime juice, or amount to taste
1 cup white sugar

1 tablespoon salt, or amount to taste

Garden Tomato Relish image

Steps:

  • In a large saucepan, bring 8 cups water to a boil. Add tomatoes, a few at a time; boil for 30 seconds. Drain and immediately place tomatoes in ice water. Drain and pat dry; peel and finely chop. Place in a stockpot. Add onions and peppers., Place mustard and celery seed on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag. Add spice bag and the remaining ingredients to the pot. Bring to a boil. Reduce heat and simmer, uncovered, for 60-75 minutes or until slightly thickened. Discard spice bag., Carefully ladle relish into hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles; wipe rims and adjust lids. Process in boiling-water canner for 20 minutes.

Grandma Prentice's Chili Sauce image

Steps:

  • Mix tomatoes, onions, apple cider vinegar, green bell peppers, seeded chopped chile peppers, sugar, unseeded chopped chile pepper, salt, allspice, cinnamon, and cloves together in a large mixing bowl.
  • Ladle enough of the tomato mixture into the pitcher of a blender to fill to about 3/4-full; blend until smooth. Pour blended mixture into a large pot. Repeat blending until entire mixture has been pureed.
  • Bring the mixture to a boil, reduce heat to medium-low, and simmer until thickened, 7 to 8 hours.

Steps:

  • 1. Scald tomatoes in boiling water for 3 minutes; cool in cold water.
  • 2. Core, peel, and finely chop tomatoes. Finely chop onions, green peppers and celery and place all in very large pot.
  • 3. Add vinegar, sugar and remaining ingredients to tomato mixture in pot and bring to boil.
  • 4. Cook until cooked through and all vegetables are soft, approximately 30 minutes.
  • 5. While vegetables are cooking, prepare water bath canning, bringing enough water to boil to cover pint jars with 1-2 inches of water.
  • 6. Fill pint canning jars to within 1/2 inch of top, place lids and screw tops onto jars and place in water bath canner.
  • 7. Process 40 minutes.

18 medium tomatoes

1 bunch celery
2 c vinegar
1 c sugar
1/2 tsp cloves

Grandma's Chili Sauce image

Steps:

  • 1. COMBINE tomatoes, onions, green and red peppers, vinegar, brown sugar, garlic, horseradish, if using, celery salt, mustard seeds and salt in a large stainless steel saucepan. Bring to a boil over high heat, stirring frequently. Reduce heat and boil gently, stirring occasionally, for 1-1/2 hours, until sauce begins to thicken. Add allspice, mace, cinnamon and cloves. Continue to boil gently, stirring occasionally, until thickened and sauce begins to mound on a spoon, about 30 minutes
  • 2. PREPARE boiling water canner. Heat jars in simmering water until ready for use. Do not boil. Wash lids in warm soapy water and set bands aside.
  • 3. LADLE the hot chili sauce into hot jars, leaving 1/2 inch headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot sauce. Wipe rim. Center lid on jar. Apply band until fit is fingertip tight.
  • 4. PROCESS jars in a boiling water canner for 20 minutes, adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed.
