GRANDMA'S ITALIAN MEATBALLS

My Grandma gave me this Italian meatball recipe years ago.. I keep them stocked up in the freezer and anytime I am in need of them..there they are... Delicious!

Steps:

  • 1. In large bowl, combine the meats,cheese, bread crumbs soaked in milk,onion, eggs, garlic, parsley.salt ,pepper,italian seasoning, and worchestershire sauce
  • 2. Mix thoroughly, but don't over mix, will make the meatballs tough. The trick to moist meatballs is softening bread crumbs in the milk
  • 3. Form into 2 inch balls..brown in skillet with small amount of oil, on med heat, or bake in the oven for 20 min at 375. I do the oven method,Grandma always browned hers in olive oil and a little vegetable oil combined.
  • 4. Serve with your favorite spaghetti sauce, ENJOY! I make the balls bigger if using for meatballs subs. I slice them in half,flat side down on hoagie roll, add sauce, cheese, broil for about 10 min... I also smash them up and add them to my sauce for lasagna..

1 lb pork sausage
1 lb ground beef
2/3 c italian bread crumbs
1/2 c parmigiano-reggiano, grated
2 eggs
1/3 c fresh parsley
1/3 c finely minced onions
3 clove minced garlic
1 tsp italian seasoning
1/4 tsp pepper
1/2 tsp salt
1 Tbsp worcestershire sauce
enough milk to moisten bread crumbs
1/2 tsp garlic powder

GRANDMA MAGGIO'S SPAGHETTI SAUCE

This is one that was recited to me out of memory alone, and described as a hand of garlic, etc., though the ingredient quantities should be accurate. I encourage buying the cheapest versions of these ingredients you can find; it will feed an army for about $15 without ruining the taste. You should add more seasonings based on preference. A great vegetarian sauce, and with meatballs...it makes great meatball sandwiches.

Grandma Maggio's Spaghetti Sauce image

Steps:

  • Heat olive oil in a large saucepan over medium-low heat, and cook and stir the onion and garlic until translucent but not browned, 6 to 7 minutes. Stir in the mushrooms and basil, and cook and stir until the basil is wilted and the mushrooms are cooked through and have given up their juices, about 10 minutes.
  • Pour in the whole peeled tomatoes, and bring the mixture to a boil, stirring and chopping the tomatoes into pieces with a spoon. Pour in the tomato sauce and stir, crushing any large pieces of tomato left, and bring to a simmer. Let the sauce simmer until slightly thickened and bubbling, stirring occasionally, about 15 minutes.
  • Stir the tomato paste into the sauce, and fill the empty tomato paste can with Merlot wine, stirring to dissolve any remaining tomato paste in the can. Pour the Merlot wine into the sauce, and stir well to combine. Bring the sauce back to a simmer, and stir in the salt, pepper, dried oregano, and sugar. Let the sauce simmer until the seasonings are blended and the sauce is heated through, about 3 more minutes.

This is my grandmother's recipe from Italy. It is wonderful. I have gotten rid of all other sauce recipes because this one is so good. It is also wonderful over rice and by itself. I love it because it tastes too good and is very filling so it lasts more than 2 meals.

Steps:

  • Saute garlic, onion and bell pepper in oil until onion and pepper are translucent.
  • Add beef to onion-pepper mix.
  • Cook til you no longer see pink; drain well and then return to pot.
  • Add tomatoes with juice, paste, chili powder and Worcestershire; mix well.
  • Simmer for 20 minutes.
  • Add mushrooms; mix well.
  • Simmer 10 minutes longer.
  • Serve over hot pasta.
  • I like angel hair with this sauce--it gives it a unique texture.
  • I use Georgio bottled mushrooms, Del Monte Tomatoes, Hunts Paste, Lea& Perrins Worcestershire Sauce, McCormick Chili powder.
  • All the rest are fresh ingredients.
  • This is an old family recipe.
  • Once you taste it, you will never go back to any other sauce.

Italian Spaghetti Sauce with Meatballs image

Steps:

  • In a large bowl, combine ground beef, bread crumbs, parsley, Parmesan, 1/4 teaspoon black pepper, garlic powder and beaten egg. Mix well and form into 12 balls. Store, covered, in refrigerator until needed.
  • In a large saucepan over medium heat, saute onion and garlic in olive oil until onion is translucent. Stir in tomatoes, salt, sugar and bay leaf. Cover, reduce heat to low, and simmer 90 minutes. Stir in tomato paste, basil, 1/2 teaspoon pepper and meatballs and simmer 30 minutes more. Serve.

Steps:

  • 1. Meat balls..... In a Large bowl, add all ingredients together MINUS the flour. Start cooking your bacon, on a stove top, med. heat untill bacon is crispy, save grease, you will need this to cook your meatballs in. **I use my hands to mix the ingredients evenly,and roll into balls, the size of golf balls, and roll in flour. ** Add to bacon grease and cook till brown on all sides.
  • 2. While cooking meatballs, start your sauce. In a large boiling pan, bring All ingredients together, adding cooked bacon as well **chop up bacon into chunks** and add to the sauce. Simmer on low-med for about 45 to an hour, stirring continuously.Add meatballs to sauce once all browned. the meatballs with soak in all the juices.
  • 3. Boil 16-18oz of spaghetti noodles. follow package directions. drain noodles once done,plate and serve. My kids LOVE this recipe, they wont eat any other kind of spaghetti, When I made this for the first time for my husband, I was so neverous, but, he took one bite, and got up from the table and came over and gave me a big kiss, and said, " it is different, but i like it, it kinda taste's like a sweet BBQ sauce" and he's been hooked ever since. 2 lb ground beef
3/4 c oatmeal, uncooked
3/4 c milk
2 large eggs
1/2 large onion diced
1 tsp salt
1/2 tsp pepper
1 c flour
SPAGHETTI SAUCE
6-8 slice bacon
1/2 large onion diced **note i use one large onion for the entire recipe, and use half in meatballs, and the other half in my sauce**
4 can(s) 10.75 oz of tomato soup
3 c water
2 tsp salt
1 tsp pepper
8 Tbsp sugar
8 Tbsp worcestershire sauce
1 tsp ground oregano
AND 16-18 OZ OF SPAGHETTI NOODLES-BOILED

GRANDMA'S ITALIAN MEATBALLS

This recipe is from my Italian grandmother. The one change she made to get with the times was to use Ragu sauce instead of homemade, and she declared that it still tasted just as good. It's never failed to impress the people I make it for. My husband says these meatballs have forever ruined him to other people's, or even restaurant meatballs. The real secret is in the time you take to slowly cook the meatballs in the sauce. Don't skimp and just toss the sauce on and eat it. It will still taste good, but not anything like it should be. The raisins are meant to absorb the acidity and impart a little sweetness to the sauce. This recipe can easily be multiplied to feed more people.

Grandma's Italian Meatballs image

Steps:

  • Mix ground beef, garlic, bread crumbs, egg, basil, parmesan cheese, and parsley until combined. Do not overwork meatball mixture.
  • Make golfball size meatballs with meatball mixture.
  • Brown meatballs in a frying pan over medium heat, or bake at 375 degrees F for about 10 minutes, until cooked through.
  • Combine browned meatballs in a pot with sauce and raisins.
  • Cook covered, simmering gently over low heat, for at least 3 hours and up to 5 hours, stirring gently occasionaly.
  • If sauce becomes too thick over the course of cooking, a small amount of water can be added to thin it.
  • Serve over spaghetti, on rolls, or however your heart desires.
