- Place bottom pastry in a 9-in. pie plate. Layer crackers in shell; set aside. In a small saucepan, combine remaining ingredients; bring to a boil. Carefully pour over crackers (filling will be very thin). Cool for 10 minutes. Cut lattice strips from remaining pastry; place over filling. Seal and flute edges. Bake at 400° for 25-20 minutes or until golden brown.

BUTTER CRACKER "APPLE PIE"

- For the filling: Preheat the oven to 400 degrees F.
- Bring the sugars, cream of tartar and 2 cups water to a boil in a saucepan over medium-high heat, whisking thoroughly as the sugar dissolves. Add the butter, cinnamon, nutmeg, lemon zest and lemon juice and whisk until the butter is melted. Boil for 5 minutes. Remove from the heat and stir in the vanilla.
- Put the crackers in a heatproof bowl and pour the syrup over the top. Let mixture sit for 5 minutes, stirring occasionally. Pour into the pie shell.
- For the topping: Mix the crushed crackers, brown sugar, melted butter and cinnamon in a small bowl. Sprinkle over the top of the pie. Set the pie on a rimmed baking sheet and bake for 10 minutes, then lower the temperature to 350 degrees F and continue to bake until the top is golden brown and the filling is set, 18 to 20 minutes. Allow the pie to cool slightly.
- For the faux whipped cream: Whip the chickpea liquid with an electric mixer until bubbles begin to form. Add the cream of tartar and continue to whip on high speed until peaks form, 2 to 3 minutes. Pour in the vanilla and continue whipping for another 1 to 2 minutes. Slowly add the confectioners' sugar while whipping an additional 3 to 5 minutes.
- Dollop slices of the pie with the faux whipped cream and serve immediately (see Cook's Note).
GRANDMA LILLIE'S SODA CRACKER PIE
This recipe is was given to me by a cousin at my wedding shower 16 years ago. She received it from her mother, Betty Ruckman, who had been given it many more years ago by my Mother's Mother, Lillie Craven. It would probably be good with any fruit or berry, if peaches aren't available.

- Preheat oven to 325 degrees.
- Beat 3 eggs white until stiff. Slowly add 1 C white sugar while continuing to beat.
- Fold/Stir in the crushed crackers and baking powder.
- Fold in the walnuts and vanilla.
- Put in a buttered pie plate and bake at 325 for 30 minutes. At 3500 feet, I bake for about 36 minutes.
- Cool.
- Put layers of sliced peaches on the cooled meringue, then top with Cool Whip or whipped cream.
- Can be served immediately, or prepared up to 24 hours in advance. Store in the refrigerator.

This was my grandmother's apple pie recipe. I have never seen another one quite like it. It will always be my favorite and has won me several first place prizes in local competitions. I hope it becomes one of your favorites as well!

- Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.
- Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
- Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.

- Preheat oven to 425 degrees F (220 degrees C).
- In a saucepan over medium high heat, combine the water, sugar and cream of tartar; bring to boil.
- Drop in whole crackers and boil for 5 minutes. Pour mixture into pie shell; sprinkle with cinnamon and lemon juice.
- Mix together the crushed crackers, brown sugar, cinnamon and butter; sprinkle over pie filling.
- Bake for 15 minutes and reduce heat to 375 degrees F (190 degrees C) and continue to bake for 15 to 20 minutes longer. Serve warm.

GRANDMA'S APPLE PIE
Steps:
- Preheat the oven to 375 degrees F.
- Roll 1/2 the short crust pastry to 1/4-inch thickness and cut out a 14-inch circle. Line a 9-inch pie plate with the pastry, trim away the excess and crimp the edge.
- Roll out the rest of the pastry to 1/4-inch thickness. Cut the pastry into 1/2-inch strips. On a piece of parchment paper or waxed paper weave the strips of pastry into a lattice that will cover the top of a 9-inch pie plate with 1-inch of overhang. Refrigerate the pie shell and lattice for at least 30 minutes.
- Meanwhile, cut the apple quarters into 1/4-inch thick slices. Toss the apples with the sugar, lemon juice, lemon zest, nutmeg, and salt. Whisk together the egg yolk and water to make an egg wash. Brush the inside edge of the pastry with the egg wash. Arrange the apples in the pie shell and dab the top with pieces of cold butter. Slide the lattice top over the apples. Press the pastry of the lattice firmly on the crimped edge to seal the 2 together. Brush the lattice with egg wash. Place the pie on a baking sheet and bake for 1 hour and 15 minutes.
- Sift the flour and salt into a large mixing bowl. Using a cheese grater, grate the butter and shortening into the flour. Combine the mixture with your fingers until it resembles cornmeal. Add the ice cold water and mix with a spoon, pulling the water into the flour until a dough forms.
- With your hands, shape the dough into 2 balls and flatten them into disks. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. Store in the refrigerator for up to 4 days and in the freezer for up to 1 month.
SODA CRACKER PIE
My grandmother was a wonderful cook. Even in her "town" house (as opposed to her farm house) she had two kitchens. One on the main floor for day to day cooking, and another in the basement for canning and preserving. After her death, my mother and I were cleaning out the cupboards in the basement kitchen. We found recipe box after recipe box. When my mom found this recipe, she almost did a cartwheel! I looked at the recipe and thought, "ok, this doesn't really sound all that good...." Mom told me, "wait til you try it!!" It's now one of my favorite desserts. The crust is dense and somewhat salty, which perfectly balances the creamy sweetness of the topping.

- Line a 9-in. pie plate with bottom crust; trim crust even with edge of plate. Set aside. , In a large bowl, toss apples with lemon juice. Combine the sugar, flour, cinnamon and nutmeg. - Make the crust: Combine flour, sugar and salt in a medium bowl. Use a pastry cutter to cut in the butter and shortening until the pieces are the size of peas. Add in 6 tablespoons of water and mix gently with a rubber spatula or wooden spoon until the dough just starts to come together. Add more water one tablespoon at a time as needed until the dough just comes together. The dough should not be sticky, and you should be able to see the pieces of butter and shortening flecked throughout. Don’t overmix!
- Once the dough comes together, split it into two balls, then gently shape them into discs, wrap and refrigerate for at last 30 minutes (or up to two days).
- While the dough is chilling, make the filling. Peel, core and slice the apples about 1/2 inch thick and place in a large mixing bowl. Add the flour, sugar, salt, and cinnamon. Toss the apples until evenly coated, then let sit for at least 30 minutes .
- It’s important that the dough stay cold while you roll it out, so keep it in the refrigerator until just ready. Prepare the counter and rolling pin by dusting each liberally with flour. Remove one disc of dough from the refrigerator and roll to about 12 inches around, rotating the disc as you go to keep it from sticking to the counter. Use a pizza cutter or knife to trim the edges so that the shape is as round as possible.
