COLCANNON IRISH POTATOES

My mother came from Ireland as a teen and brought this homey recipe with her. I find that it's a fantastic way to get my family to eat cooked cabbage-it is hidden in Grandma's potatoes! -Marie Pagel, Lena, WI

Colcannon Irish Potatoes image

Steps:

  • Place potatoes in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat to medium; cook, covered, until potatoes are almost tender, 8-10 minutes., Add cabbage and onion; cook, covered, until cabbage is tender, 5-7 minutes. Drain; return to pot. Add salt and pepper; mash to desired consistency, gradually adding butter and milk.

2-1/2 pounds potatoes (about 6 medium), peeled and cut into 1-inch pieces
2 cups chopped cabbage
1 large onion, chopped
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup butter, softened
1 cup 2% milk

POTATOES GRANDMERE

Translated from French to English, it means "Grandmother's potatoes". It's a very nice potato dish that's good with just about any meat. I like to sprinkle some fresh parsley over the top just before serving; basil or oregano is also nice. Servings will vary, as the size of potatoes will differ; cooking times may vary for the same reason. Check at 45 minutes.

Steps:

  • Preheat oven to 350°F.
  • Layer sliced potatoes in a 9x13-inch glass baking dish and season with salt and white pepper.
  • Combine cream, mustard, garlic,** parmesan cheese and butter in a heavy saucepan and heat just to the boiling point.
  • Pour over potatoes. **Add some of the reserved cheese, if using).

6 potatoes, peeled and cut into 1/8-inch slices
2 cups heavy whipping cream
1 tablespoon Dijon mustard
2 garlic cloves, minced
1 tablespoon butter
salt and pepper, to taste
1/3 cup parmesan cheese, grated (**set aside a little to use as topping)
fresh parsley, chopped (optional)

Steps:

  • In a saucepan over medium heat, combine the sugar, butter, evaporated milk, cream of tartar and salt. Mix well and bring to a boil. Cook to the soft ball stage at 234 degrees F (115 degrees C). A few drops will form a soft ball when dropped into cold water. Remove from heat and cool to room temperature. Add vanilla and beat until creamy and stiff. Roll into balls and shape like little potatoes. Roll each ball in cinnamon to coat, then press in pieces of chopped nuts to look like eyes. You can also dust with cocoa to simulate dirt.

My grandmother makes this every year with a brisket for Christmas dinner. This is hands down my favorite potato recipe ever. I leave the skins on the potatoes, but this is optional. Garnish with chopped green onions or Italian parsley, and top with more cheese for a restaurant 'look.' I hope you enjoy this recipe as much as we do.

Grandma's Cheesy Potatoes image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a deep 9x13-inch baking dish with cooking spray.
  • Place yellow and red potatoes into a large pot and cover with salted water; bring to a boil. Cook until soft, about 10 minutes. Drain.
  • Combine mozzarella cheese, Cheddar cheese, sour cream, and mayonnaise in a large bowl; mix well. Slowly add potatoes and toss; use a wooden spoon or flat spatula to avoid mashing the potatoes.
  • Pour potatoes into the prepared pan. Dot butter over the top and cover with foil.
  • Bake in the preheated oven, 25 to 30 minutes. Remove from oven and uncover. Preheat the oven's broiler. Return to the oven and broil until top is browned, about 5 minutes.
