- Heat skillet on Med.-high heat, with oil.
- mix all the rest of ingredients together very well, patty, and throw on skillet. cook on each side 5-10 minutes, or until it is browned and firm.
- remove, serve, and enjoy, I like mine with a horseradish sauce.
TASTY SALMON PATTIES
My dad used to make these all the time when I was growing up. Quite frankly - I dreaded salmon patties back then - but I love them now! My kids do to as well as DH. My dad cans all his salmon so using homecanned is all I know. I would expect you could use this recipe with store bought salmon as well.

- 2. Stir in flour, salt and pepper.
- 3. In a small mixing bowl, combine baking powder and reserved juice, stir into salmon mixture and form 6 patties.
- 4. In a large skillet, fry patties and oil for 3 to 5 minutes per side or until golden brown.

- Add 2 tablespoons of melted butter to a baking dish. Dip salmon fillets in the butter and bake skin side down for 15 minutes. Remove from the oven and peel away the skin. In a large mixing bowl, break the salmon apart with a fork. Add onion, chives, salt, pepper, lemon zest, and old bay seasoning and combine. Finally, mix eggs, garlic, and mayonnaise. Divide into six salmon cakes. Allow to set in the refrigerator for 30 minutes.
- Now, heat oil in a large skillet over a medium heat. Cook the salmon cakes for 3 minutes. Carefully turn over with a spatula and cook for an additional 3 minutes. Serve with tartar sauce or spicy mayo and garnish with chopped chives.
