Steps:

  • Preheat the oven to 425 degrees F. Heat 3 tablespoons olive oil in a large pot or Dutch oven over medium-high heat. Add the tomato paste and cook, stirring, until slightly darkened, about 2 minutes. Add the rosemary, garlic and red pepper flakes and cook until the garlic starts browning, about 1 minute.
  • Add the green beans, cherry tomatoes and their liquid, 1 3/4 cups water and 2 teaspoons salt to the pot. Partially cover and cook, stirring occasionally, until the green beans are tender and the liquid is slightly thickened, 20 to 25 minutes. Transfer to a 3-quart baking dish.
  • Mix the panko, parmesan, parsley and the remaining 2 tablespoons olive oil in a bowl; season with salt and pepper. Sprinkle over the green bean mixture and bake until the sauce is bubbling and the topping is browned, about 15 minutes.

Steps:

  • Preheat the oven to 350 degrees F.
  • Cut the green beans in half if you like the pieces to be a little smaller. Blanch the green beans: drop them into lightly salted boiling water and allow the green beans to cook for 3 to 4 minutes. Remove them from the boiling water with a slotted spoon and immediately plunge into a bowl of ice cold water to stop the cooking process. Drain the beans once they're cool and set aside.
  • Add the bacon pieces to a skillet over medium heat. Cook the bacon for 2 minutes, and then add the peppers, garlic and onions, and continue cooking until the bacon is done (but not crisp) and the onions are golden brown, 3 to 5 minutes. Remove from the heat and set aside.
  • In a separate saucepan, melt the butter over medium heat. Sprinkle the flour into the pan and whisk immediately to evenly mix it into the butter. Cook for a minute or 2, and then pour in the milk and half-and-half. Continue cooking, whisking constantly, while the sauce thickens, about 2 minutes. Add 1 1/2 teaspoons salt, some black pepper and the cayenne, and then add the grated cheese. Stir while the cheese melts. Turn off the heat.
  • Add the bacon/onion mixture and stir to combine. Add the green beans and stir gently to combine. Pour into a baking dish and top with the panko. Bake until the sauce is bubbly and the panko is golden, about 30 minutes.

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Fry bacon in a skillet over medium-high heat until crisp. Drain on paper towels, crumble, and set aside. Drain most of the bacon grease from the pan, and place over medium heat. Add the onions and bell pepper; cook and stir until tender. Stir in the wine, scraping all of the bits of bacon from the bottom of the pan.

  • Cut bacon into small pieces. Sauté bacon in skillet until crisp; remove bacon and place on paper towels. Leave 1 T. bacon fat in sauté pan.

Steps:

  • Add the bacon and onion to a large skillet over medium heat. Cook, stirring, until the bacon is beginning to crisp and the onions are golden, 5 to 7 minutes.
  • Increase the heat to medium high and add the green beans and tomato paste. Stir and allow to cook for a minute or two. Add the tomatoes, crushing them with your hands as you add them. Steps:

  • Bring a large pot of salted water to a boil. Fill a bowl with ice water and set aside.
  • Add the green beans to the boiling water and cook until bright green and tender-crisp, about 4 minutes. Transfer the green beans to the ice bath to stop the cooking. Drain the beans and add them to a mixing bowl.
  • Add the olive oil to a large skillet over medium-high heat. When the oil is shimmering, add the mushrooms, shallot, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring occasionally, until the vegetables are browned, 5 to 7 minutes. Add the cheese and stir to melt. Turn the heat off and add the mixture to the bowl with the green beans. Toss until everything is creamy and thoroughly combined. Season with 1/2 teaspoon salt and 1/2 teaspoon pepper. Toss to combine. Top with the fried onions.   • Preheat oven to 350°F.
  • Coat an 11-inch by 7-inch casserole dish with cooking spray.
  • Heat oil in a frying pan and add onion & bell pepper. Saute till tender.
  • Mix the onion/pepper mixture with corn, beans, tomato sauce, tomatoes & Worcestershire sauce. Taste and add salt & pepper if needed.
  • Pour it all in the casserole dish and cover the top with a layer of bacon.
  • Cover and bake for 50 minutes, remove cover and bake 10 minutes more or until bacon crisps up.
  • *** To make using fresh vegetables:
  • Cover the BOTTOM of the dish with the bacon then layer with fresh lima beans, fresh sliced tomatoes, chopped onion and green pepper, fresh white corn (cut off cob, of course), another layer of sliced tomatoes and another layer of bacon on top. Bake as above.

  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate, reserving about 1 tablespoon bacon drippings in the skillet. Crumble bacon.

Steps:

  • Preheat oven to 350.
  • Brown the ground beef. Drain.
  • Empty tomato soup into a casserole dish. (I use an oval pyrex 11X81/2X3).
  • Pour 1/2 of can of green bean juice into soup. Drain rest of green beans and add to dish.
  • Add dehydrated onion, salt, and pepper.
  • Mix.
  • Add drained ground beef into soup mixture. Mix well.
  • Beat egg and add to mashed potatoes. Mix well.
  • Top meat mixture with mashed potatoes.
  • Don't cover green bean mixture completely, leave a little area all around to allow mixture to bubble and not bubble over.
  • Try to make peaks with the potatoes for and extra special look.
  • Bake 30-45 minutes or until potatoes are browned.

BACON TOMATO CASSEROLE

This is a good casserole that can either be served as a main dish or as a side dish. This recipe was given to me by a friend.

Bacon Tomato Casserole image

Steps:

  • Cook noodles according to package directions; drain.
  • In a large skillet, cook bacon over medium heat until crisp.
  • Remove to paper towels to drain, reserving 2 tablespoons drippings.
  • In the drippings, saute green pepper, onion, salt, marjoram, thyme and pepper for 5 minutes.
  • Stir in tomatoes.
  • Bring to a boil.
  • Reduce heat; simmer, uncovered, for 10 minutes.
  • Stir in the noodles.
  • Add half of the bacon.
  • Transfer to a greased 2-qt. baking dish.
  • Top with cheese and remaining bacon.
  • Bake, uncovered, at 350° for 10-15 minutes or until cheese is melted.
