Steps:

  • In a medium saucepan, place water, beans, potatoes and 1 teaspoon of the salt.
  • Over medium-high heat, bring to a boil.
  • Reduce heat to low, cover and simmer for 10 to 12 minutes or until tender.
  • Drain.
  • Cover and set aside.
  • Meanwhile, in a 12 inch skillet over medium-high heat, cook bacon and onion until bacon is crisp and onion is tender.
  • Drain off all but 1 tablespoon of the bacon drippings.
  • Add beans and potatoes and toss until well coated with bacon and onion.
  • Sprinkle with remaining 1/2 teaspoon salt and pepper and serve.

  • In a large skillet over medium-high heat combine potatoes, green beans, thyme, pepper, Worcestershire sauce and 3/4 cup of broth. Bring to a boil; reduce heat to medium-low, cover and simmer 15 to 20 minutes or until vegetables are tender.

  • Fry the bacon or the ham hock until the fat starts to render out.
  • Add canned green beans, including the water in the can.
  • Salt and pepper to taste.
  • Add the potatoes and just enough water to cover; cook for about 25 minutes.
  • For fresh green beans:.
  • Sauté the pork after you have washed and cut the green beans in half; add to pot. Cover with water. Add salt and pepper and cook until tender on low heat.
  • Add in potatoes and cook a little longer until the potatoes are done.

Steps:

  • Drain the beans and beans & potatoes in a colander then rinse under cold tap water; set aside to drain well. Cut up onion and garlic and set aside. Cook bacon; drain on paper towels then cut or tear into small pieces. Set aside. In a large, deep skillet melt the butter over medium heat. Add onion and sauté just until softened. Add garlic and cook for another minute. Increase heat to medium-high; add the beans and potatoes and let cook undisturbed for 3-4 minutes then use an egg turner or similar spatula to flip the mixture over so you don't wreck the beans and potatoes. Cook down until almost all the liquid is gone, flipping occasionally to prevent scorching. When liquid is almost out, sprinkle the dry Ranch mix and black pepper over the top and flip over a couple of times to combine. Just before beans are finished cooking, add the bacon (or you can wait until serving and use it to garnish the top). (I put half of it in the beans and garnished top with other half). Steps:

  • In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

This is such great comfort food, and the whole family eats it! Haven't tried it, but might be good with some balsamic vinegar sprinkled on it. It's yummo with my horseradish sauce recipe served on the side too. Might be nice to add a few tablespoons of creole seasoning for a change. Think I might try adding in 6 T brown sugar and 6 T apple cider vinegar for a German switch. Perhaps use a couple cups of diced ham. Cornbread makes a nice accompaniment. Be sure to remove any strings from the beans. I don't recall where I got this recipe, but my mother made something similar.
