FRENCH CUT GREEN BEANS WITH ALMONDS AND FRIED ONIONS

Steps:
- Bring 1 inch of water to a boil in a high-sided saute pan. If using fresh beans, cut them lengthwise while you wait for the water to boil.
- Add salt and green beans to boiling water and cook until just tender. Drain beans and rinse under cold water to stop the cooking. Return the skillet to medium heat and add the butter. When butter is melted, add the almonds and cook until golden brown.
- Return the green beans to the pan, along with the juice of 1/2 a lemon, add salt and pepper, to taste. When warmed through, top with fried onions.

- Fill a large high sided skillet with some water, adding enough to be just shy of the rim of the pan by about 1 inch. Place over high heat and bring up to boil; add a big pinch of salt and the green beans. Cook for about 5 minutes, the beans should still be crisp. Drain the beans and then run them under some cold water to stop them from cooking. Reserve the beans while you start the onions. Return the skillet you cooked the beans in to the cook top over medium heat. Add the almonds and toast stirring every now and then until golden, about 3 to 5 minutes. Remove the almonds from the skillet and reserve. Return the skillet to the heat and add the butter and olive oil and heat until the butter has melted. Add the onions, season with salt and pepper, and cook stirring frequently until the onions caramelize, 20 to 25 minutes. Add the thyme, and cook for another 5 minutes. Add the cooked cooled green beans and almonds, and stir well to combine. Season with salt and pepper, to taste.

- Cook green beans in boiling water.
- Drain.
- (This can be done ahead.).
- Cut onions into thin slices, and cut each slice in half.
- Cook onions in a nonstick skillet over medium-high heat, stirring occasionally until onions are golden brown.
- (Original recipe says do not stir onions first 5-10 minutes.) Reduce heat to medium; stir in butter and brown sugar.
- Add green beans; cook 5 minutes or until thoroughly heated.
- Toss with vinegar.

Steps:
- Place the slivered almonds in a dry skillet over low heat, and cook and stir constantly until the almonds are lightly toasted, 3 to 5 minutes. Watch carefully, because they burn easily. Remove the almonds and set aside.
- Heat butter in a skillet over medium-low heat, and cook and stir the shallots and red bell pepper until softened, about 8 minutes. Sprinkle the shallot mixture with sugar, salt, and pepper, and reduce heat to low. Cover, and cook slowly, stirring occasionally, until the sugar dissolves and the shallots caramelize, 5 to 8 minutes.
- Place a steamer insert into a saucepan, fill with water to just below the bottom of the steamer, and bring the water to a boil. Add the green beans, cover, and steam until just tender enough to pierce with a fork, 7 to 8 minutes. Drain the green beans, place them into the skillet with the shallot mixture, mix well, and gently stir in the toasted almonds.

- Caramelize the onions: Heat a nonstick pan over medium-high heat and add 1 tbsp olive oil. Add onion. Stirring occasionally, set heat to medium-low and allow the onions to cook slowly about 20-25 minutes until browned but not burned. Once done, add the vegetable broth to deglaze the pan. Remove the caramelized onions from the pan and reserve.
- While onions are cooking, blanch the green beans in the boiling water - about 5 minutes. Remove the green beans from the boiling water and store in the refrigerator or an ice water bath to stop the cooking.
- Put it all together: Add 1 T olive oil to the warm skillet. Add the blanched green beans, onions and almonds back to the skillet. Add salt and pepper to taste. Serve warm.
