Steps:
- Arrange croutons in a greased 13x9-in. baking dish. Sprinkle with cheese and chiles. In a bowl, beat remaining ingredients. Pour over cheese. Refrigerate, covered, 8 hours or overnight., Remove dish from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake, uncovered, until a knife inserted in center comes out clean, 40-45 minutes. Let stand 10 minutes before cutting.

- Preheat oven to 400 degree F. Grease an 8 x 8 baking dish. In a medium saucepan, over medium heat, brown onion in butter. Remove from heat and add the milk, muffin mix, sour cream, salt, Cayenne, cheddar cheese, Chile's and stir until blended. Stir in egg making sure it's well incorporated.
- Pour batter into prepared pan and sprinkle the top evenly with Colby cheese or even pepper Jack.
- Bake for 20 - 25 minutes or until pick inserted in center comes out clean. Should be golden on top. I then brush the top while hot with butter. Just something I always do. I leave set for 5 minutes before cutting as they are very moist. This gives the cheese a few minutes to set. JOHN WAYNE'S GREEN CHILIE SQUARES
I found this recipe in a magazine. John Wayne was my Daddy's favorite cowboy, so this quickly became one of his favorite dishes for me to make for him. I like to serve it when I make a pot of pinto beans, fried potatoes, and cornbread. Add some slices of onion, some chow chow and you have a good old "country dinner"! Hint: I add a chopped fresh jalapeno and /or green onion to make it spicy.

This is a family favorite and it is very easy to make. We originally discovered it as an appetizer, but I think it is great for brunch. I also make it just for myself and freeze the squares to have for lunch in the future. The recipe is very open to substitutions. Fresh green chiles can be used if you happen to live where you can get them and the recipe can probably be made without them or with any amount according to your tastes.

- Sprinkle chiles and cheese in the bottom of a lightly greased 9-inch square baking pan.
- Combine biscuit baking mix, cream or milk, eggs, and salt in a medium-sized bowl.

- Slice butter into large chunks and place in a 9×13 pan. Place pan in oven and preheat to 400 degrees. (Keep an eye on this if you get delayed in the following steps so your butter doesn’t burn!)
- Whisk together flour, baking powder and salt in a large mixing bowl. Add 1-2 eggs and whisk mixture until there are no lumps. Add in remaining eggs and whisk until smooth. Stir in green chiles, cottage cheese, and jack cheese and stir until just combined.
- Remove pan from oven and tilt pan so the butter coats all over then carefully pour butter into egg mixture and stir to combine. Pour mixture back into warm pan.
- When oven is preheated place pan in oven and cook for 15 minutes. Reduce heat to 350 and cook for an additional 35-40 minutes, or until top is golden and slightly browned. Let cool for 10 minutes before slicing into squares and serve.
