COSTILLAS VERDE (RIBS IN GREEN CHILE)

Simple basic fare; ribs smothered in Green Chile with potatoes. Easy to put in the crock pot and forget. The longer it cooks, the better it tastes. I first stumbled on this recipe in one of the local Mexican eateries, and just had to figure out how to make it at home. Make plenty; it tastes even better the second day. Pork chops or country style ribs may be substituted for pork short ribs, if desired. Buttered corn is a good vegetable to serve with this.

Costillas Verde (Ribs in Green Chile) image

Steps:

  • Remove excess fat from ribs as required. Cut rack of ribs only as needed to fit in large pot. Bring to boil and then fast simmer slabs of ribs in water, seasoned with salt, pepper, garlic powder, for 30-45 minutes. As ribs are boiling, place green chile in slow cooker. Heat to just bubbling, but do not allow to come to a boil.
  • Remove ribs from boiling water, and slice into individual ribs. Arrange ribs in slow cooker, then place raw potato cubes on top, ensuring that ribs and potatoes are fully submerged in green chile.
  • Simmer until potatoes are fully cooked, 2-3 hours. If the Green Chile gets too thin, thicken with a little Corn Starch.
  • With slotted spoon, remove potatoes from cooker to plates, top each serving with shredded cheddar and place under broiler just long enough to melt the cheese.
  • Arrange ribs on plates, and cover with ladled green chile. Serve with warmed tortilla to sop up the good stuff.

1 (4 lb) rack pork spareribs
1 (40 ounce) jar green chili sauce, 505 medium, Stokes, equivalent homebrewed
3 -4 raw potatoes, in 1-inch cubes
1 -2 drop dave's ultimate insanity habanero sauce (or the fire of your choosing) (optional)
salt
black pepper (coarse ground is best)
garlic powder
shredded cheddar cheese
cornstarch
flour tortilla, warmed

Beef Short Ribs in Chipotle and Green Chili Sauce image

Steps:

  • Mix first 5 ingredients in bowl; sprinkle all over short ribs.
  • Place ribs on plate; cover and chill 1 hour or up to 1 day.
  • Preheat oven to 350°F.
  • Heat oil in large ovenproof pot over medium-high heat.
  • Add half of ribs and brown on all sides, about 9 minutes; transfer to plate.
  • Repeat with remaining ribs.
  • Reduce heat to medium.
  • Add onion and garlic to same pot; cover and cook until onion is soft, stirring occasionally, about 5 minutes.
  • Add broth and bring to boil, scraping up browned bits.
  • Add tomatoes, lime juice, and chipotle chilies.
  • Return ribs to pot, meaty side down, in single layer.
  • Bring to boil; cover and cook in oven until ribs are just tender, about 1 1/2 hours.
  • Remove pot from oven.
  • Tilt pot; spoon off fat.
  • Place pot over medium heat and simmer uncovered until sauce coats spoon and ribs are very tender, about 25 minutes.
  • Season sauce with salt and pepper.
  • (Can be made 1 day ahead. Cool 30 minutes, refrigerate uncovered until cold, then cover and keep refrigerated.) Bring ribs to simmer over medium heat; add chili rings.
  • Simmer until chilies soften, about 10 minutes.
  • Transfer ribs and sauce to large bowl.
  • Sprinkle with cilantro; garnish with lime wedges.
  • *Chipotlechilies canned in a spicy tomato sauce, sometimes called adobo, are available at Latin American markets, specialty foods stores, and some supermarkets.
  • Makes 4 servings.

  • Cut the pork ribs into large bite-size chunks - about 1-inch cubes. Spread them out over a couple of paper towels and pat dry.
  • Add the oil to a large stockpot or dutch oven and set it over medium high heat. When the oil is very hot and shimmering, add enough pork to cover the bottom of the pan without any of the pieces overlapping. Sprinkle generously with salt and pepper. Let cook, undisturbed, for 2 or 3 minutes, until brown on the bottom. Use metal tongs to flip the pieces over and allow them to brown on the other side. Remove the pork from the pan to a plate and repeat with the remaining pieces of pork.
  • Turn the heat under the pan down to medium and add the chopped onion. Cook, stirring frequently, until the onion is soft and translucent, about 3-4 minutes. Add the garlic, jalepeno, chili powder, cumin, oregano, and 2 tsp salt. Cook, stirring constantly, for 2 minutes longer.
  • Add the butter to the pan and stir it around until it's melted. Sprinkle in the flour and cook, stirring constantly, for 1 minute. Pour in the broth, scrapping at the bottom of the pan to loosen any little brown bits of flavor that might be stuck there.
