Steps:

Orange and Almond Salad image

Steps:

  • Arrange chopped lettuce on a platter. Trim a thin slice of orange skin down to the flesh off the top and bottom of the orange. Stand the orange upright and trim off strips of the remaining peel working from top to bottom around the orange. Cut each orange then in 1/2 lengthwise. Slice the 1/2 oranges into 1/2 moon shapes. Arrange the sliced oranges around the chopped romaine. Lightly toast the almonds in a small skillet over moderate heat or in a toaster or conventional oven. Top the romaine and oranges with toasted almonds and chopped tarragon.
  • In a small bowl, combine honey, vinegar, orange juice and mustard with a whisk. Stream in the oil while continuing to whisk the dressing to combine it. Pour the dressing evenly over the entire salad platter in a slow, thin stream. Season the salad with salt and pepper. The salad is pretty as is, no tossing.

  • Segment the oranges: Cut off the tops and bottoms of the oranges so they sit flat on a cutting board. Use a knife to remove the rind of the orange, cutting carefully to remove as little flesh as possible. Use a paring knife to cut between the membranes to remove the orange segments. Transfer to a small bowl. Squeeze the juice from the scraps into a separate bowl.
  • Make the dressing: Strain the orange juice into a microwave-safe liquid measuring cup to remove any pulp and seeds. You should have about ¼ cup. Add the lemon juice and sugar. Microwave for 60 seconds, until the sugar dissolves.
  • Let cool, then whisk in the olive oil. Season with salt and pepper.
  • Assemble the salad: Add the mixed greens to a large bowl. Add the avocado, segmented oranges, red onion, and honey-roasted nuts.

Steps:

  • In a large bowl, combine the romaine lettuce, oranges and green onions.

Steps:

  • Heat sugar and almonds in pan. Stir constantly until sugar turns golden brown. Don't let scorch!
  • Let cool on a plate and break into pieces.

Almost Magic Pan Orange Almond Salad image

Steps:

  • Shaking constantly, toast almonds in skillet over low heat until golden brown (about 5 minutes).
  • Wash and dry lettuce.
  • Tear into bite size pieces.
  • Place with green onions and mandarin oranges in large salad bowl.
  • Dressing: Combine all ingredients but egg and vinegar.
  • Add in thin stream and process till well blended.
  • Serves 6.
  • MAKES: 1 cup dressing.
  • Just before serving, toss well.
  • Leftover dressing keeps up to 1 week in fridge.

  • In a small skillet over medium heat, cook almonds and sugar, stirring constantly until almonds are coated and sugar has dissolved. This burns easily ,so stir constantly. It may take about 10 minutes, depending on the heat of your burner. Cool almonds. (These may also be made ahead and stored for future use.)
  • Combine lettuce, celery and onions in a large bowl. (If you want to make ahead, I always line the bowl with a paper towel. Add the lettuce. Cover the top of the bowl with a paper towel and store in the fridge until ready to use. Add chopped celery and green onions before serving.)
  • Combine all dressing ingredients together . Shake or whisk until sugar is dissolved. Chill until ready to toss salad.
  • When ready to serve add almonds and oranges and toss with the dressing. (This is also great with feta cheese, or slices of chicken if you choose to make this a main course.)
