- Arrange chopped lettuce on a platter. Trim a thin slice of orange skin down to the flesh off the top and bottom of the orange. Stand the orange upright and trim off strips of the remaining peel working from top to bottom around the orange. Cut each orange then in 1/2 lengthwise. Slice the 1/2 oranges into 1/2 moon shapes. Arrange the sliced oranges around the chopped romaine. Lightly toast the almonds in a small skillet over moderate heat or in a toaster or conventional oven. Top the romaine and oranges with toasted almonds and chopped tarragon.
- In a small bowl, combine honey, vinegar, orange juice and mustard with a whisk. Stream in the oil while continuing to whisk the dressing to combine it. Pour the dressing evenly over the entire salad platter in a slow, thin stream. Season the salad with salt and pepper. The salad is pretty as is, no tossing.

- Segment the oranges: Cut off the tops and bottoms of the oranges so they sit flat on a cutting board. Use a knife to remove the rind of the orange, cutting carefully to remove as little flesh as possible. Use a paring knife to cut between the membranes to remove the orange segments. Transfer to a small bowl. Squeeze the juice from the scraps into a separate bowl.
- Make the dressing: Strain the orange juice into a microwave-safe liquid measuring cup to remove any pulp and seeds. You should have about ¼ cup. Add the lemon juice and sugar. Microwave for 60 seconds, until the sugar dissolves.
- Let cool, then whisk in the olive oil. Season with salt and pepper.
- Assemble the salad: Add the mixed greens to a large bowl. Add the avocado, segmented oranges, red onion, and honey-roasted nuts.
- Just before serving, pour some of the dressing over the salad and toss to coat. Add more dressing to taste.

- In a large bowl, combine the romaine lettuce, oranges and green onions.
- Heat 2 tablespoons sugar with the almonds in saucepan over medium heat. Cook and stir while sugar starts to melt and coat almonds. Stir constantly until almonds are light brown. Turn onto a plate, and cool for 10 minutes.

The ladies at our old church always made this for dinners. When I asked for the recipe, they gave it to me on an old recipe card, written in beautiful cursive script. When reading it, I thought the mix of ingredients sounded odd, but it is absolutely delcious. It's a wonderful green salad that is wonderful for company. It may take about 10 minutes, depending on the heat of your burner. Cool almonds. (These may also be made ahead and stored for future use.)
- Combine lettuce, celery and onions in a large bowl. (If you want to make ahead, I always line the bowl with a paper towel. Add the lettuce. Cover the top of the bowl with a paper towel and store in the fridge until ready to use. Add chopped celery and green onions before serving.)
- Combine all dressing ingredients together . Shake or whisk until sugar is dissolved. Chill until ready to toss salad.
- When ready to serve add almonds and oranges and toss with the dressing. (This is also great with feta cheese, or slices of chicken if you choose to make this a main course.)
