GREEN BEANS AND BACON

Steps:
- Toss the green beans into a large pot of boiling salted water and cook until bright green in color and crisp-tender, about 5 minutes. Drain the beans and shock in a large bowl of ice water to stop the cooking. Drain the beans again and pat dry.
- Cook the bacon in a large, heavy saute pan until crisp, about 5 minutes. Remove the bacon to a paper towel-lined plate to drain. Spoon off the excess bacon grease, leaving 2 tablespoons in the pan. Add the onion to the pan and saute until soft and very tender, 4 to 5 minutes. Sprinkle in the garlic and red pepper flakes and saute until just fragrant, about 1 more minute. Add the reserved green beans and the pecans and cook until heated through, 5 to 6 minutes more. Return the bacon to the pan, pour in the lemon juice and toss. Season with salt and pepper.
GREEN BEAN, BACON AND CUCUMBER SALAD
A mixture of things I enjoy. Good way to use fresh beans. I love maple bacon, brown sugar and cider vinegar together.

Steps:
- Cook the cut beans in boiling water until crisp-tender. Drain.
- In a frying pan, fry the cut-up bacon until crisp; drain on paper towel and set aside.
- In the same frying pan, add the brown sugar and vinegar; simmer 5 minutes.
- Slice the cucumber in a bowl and salt the top. Let these sit while you are preparing the beans and bacon.
- Drain and squeeze the cucumbers; add to the frying pan along with the beans and crispy bacon.
- Mix all together and enjoy!

- Heat oil in a skillet over low heat. Add garlic and cook for 30 seconds. Stir in green beans and brown sugar, and season with sea salt. Add bacon, increase heat to medium, and stir.
- Pour chicken broth into the pan, cover, and let simmer for 10 minutes. Stir, adding more broth if needed. Cover and cook for another 10 minutes. Stir, uncover, and simmer over low heat until liquid evaporates, about 10 minutes more. Serve.

- Cook 1 pound trimmed, halved green beans in salted boiling water until tender, 3 minutes. Drain; rinse under cold water. Saute 1/4 cup sliced almonds in butter in a skillet over medium heat until golden, 2 minutes; add a pinch of nutmeg. Stir in the beans and 2 tablespoons water; season with salt and pepper. Cook, stirring, until warmed through, 2 minutes.

- Cook and stir ground beef and onion in large skillet until meat is brown and onion is tender.
- Drain off any fat.
- Stir in garlic, 1 1/2 cups water, soy sauce, and molasses; heat to boiling.
- Add green beans and heat to boiling.
- Reduce heat; simmer uncovered 15 minutes.
- Blend cornstarch and 1/4 cup cold water; stir gradually into meat mixture.
- Cook, stirring constantly, until mixture thickens and boils.
- Boil and stir 1 minute.
- Serve over rice.
- Garnish with onion rings and pass additional soy sauce, if desired.

- Cook cut green beans in boiling water, if fresh, 5 minutes till tender crisp. If using canned, just drain. Drain beans and rinse in cold water.
- Combine fresh lemon juice, olive oil, garlic, basil, salt and pepper in a small bowl; stir well with a whisk.
- Combine green beans with the tomatoes and toss with the vinaigrette.
- Add pine nuts just before serving.
POTATO-GREEN BEAN SALAD WITH CUCUMBER DRESSING
I got this recipe from Cuisine Lite and made a few adjustments. You can use either fresh or frozen green beans. It is now one of my favorites. Hope you enjoy it.

- Toss cucumber with generous pinch of salt and place in a small strainer. Let drain 15 minutes, then squeeze well to remove excess moisture. Set aside.
- In a large bowl, whisk together mayonaisse, sour cream, herbs, onions, mustard, lemon juice and salt and pepper. Fold in the cucumber. Stir in the tomatoes. Set aside.
- Boil potatoes and eggs in salted water over high heat until potatoes are almost done. Add the beans and cook for another 3 to 5 minutes. (If you are using frozen, make sure they are thawed before putting them in the cooking water). Drain the potatoes and beans, leaving the eggs in the pot. Shake eggs in pot until cracked all over and then cover with cold water.
- Gently stir potatoes and beans (drained but still hot)in the dressing-tomatoe mixture.
- Peel eggs and slice into 1/2 inch rounds. Gently mix into the potato mixture.
- This salad can be served warm, room temperature or cold. I personally like to put it in the fridge and let the flavors meld together for a couple of hours before serving.

- Place beans into a microwave-safe casserole dish with enough water to cover the bottom. Microwave on high power until almost tender, 8 to 10 minutes. Drain in a colander and refresh under cold running water to keep the nice green color.
- Heat a frying pan over medium heat. Add almonds and cook until just starting to turn golden, about 5 minutes, watching closely so as to not burn. Take pan off of heat and add butter to melt. Return to heat and add garlic. Mix in green beans, season with salt and pepper, and continue to stir until heated through, 5 to 7 minutes.

- In a saucepan, place the green beans in boiling, salted water. Cook, uncovered, until fully cooked, about 6 minutes. If you like your beans w/ a little crunch, cook 3-4 minutes.
- Remove from heat and drain.
- Sauté the onion in olive oil until the onions begin to get limp. Add garlic and ham or bacon and cook for 2 additional minutes.
- Remove from heat.
- Stir in fresh lime juice.
- Pour sauce over cooked green beans and toss to coat evenly. Season w/ salt pepper to taste.
- Sprinkle chopped fresh cilantro on top and serve.

- Place green beans in a saucepan. Cover with water and bring to a boil. Cook until beans are al dente, about 5 minutes. Drain and set aside.
- Melt butter in a large skillet over low heat. Add olive oil and mix thoroughly. Add almond slivers, mix until coated, and spread out evenly in the bottom of the skillet. Stir continuously, until almonds just begin to turn golden brown. Remove almonds to a small bowl and continue stirring for 1 minute until cool enough to taste. Add salt.
- Pour almonds over green beans and toss to ensure even coating. Serve warm.

SPECIAL GREEN BEAN BAKE
This is one my favorite green bean side dishes. It has been in my family for a very long time. It goes great with pot roast and potatoes. It's almost like a green bean relish. Not your ordinary green bean dish! Even better left over. I've also added rinsed and drained water chestnuts for some crunch.

- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate, reserving about 1 tablespoon bacon drippings in the skillet. Crumble bacon.
- Preheat oven to 275 degrees F (135 degrees C).
- Cook and stir the onion in the reserved bacon drippings over medium-high heat until onion has softened and turned translucent, about 5 minutes.
- Combine cooked onion, sugar, cider vinegar, relish, pimento peppers, and green beans in a large bowl.
- Transfer mixture to a baking dish and cover with aluminum foil.
- Bake in the preheated oven until browned, about 1 1/2 hours. Remove foil and stir lightly.
- Allow green beans to rest for 15 minutes before topping with crumbled bacon and serving.
