GRILLED PEACHES WITH THYME, MASCARPONE AND HONEY

Grilled Peaches with Thyme, Mascarpone and Honey image

Steps:

  • Preheat a grill to medium-high.
  • Place the peaches cut side down onto the grill and cook until lightly charred, 2 to 3 minutes, depending on the grill. Transfer the peaches, cut sides up, to a grill-proof baking dish or baking sheet and drizzle evenly with the 6 tablespoons of honey. Sprinkle with the thyme, then place the dish on the grill and cover the grill. Continue to cook until the peaches are soft, about 5 minutes, again depending on the grill. Remove the baking dish from the grill and divide the peach halves between 6 dessert plates. Divide the mascarpone evenly among the plates and drizzle with additional honey, if desired. Serve immediately.

6 large ripe peaches, halved and pits removed
6 tablespoons honey, plus more for serving, optional
1 1/2 teaspoons chopped fresh thyme leaves
8 ounces mascarpone cheese, at room temperature

Steps:

  • Combine sugar and cinnamon in shallow bowl and stir to mix, set aside.
  • Cut each peach in half around crease to the stone.
  • Twist halves in opposite directions to separate them.
  • Pry out stone with spoon and discard.
  • Lightly brush each peach half on both sides with melted butter.
  • Have peaches and cinnamon sugar by grill side, ready for grilling.
  • Set up grill for direct grilling and preheat to high.
  • Brush and oil grill grate.
  • Dip each peach in cinnamon sugar to coat both sides, brushing off excess.
  • Place halves on grill and grill until caramelized (dark golden brown), 3 to 6 minutes per side, turning with tongs.
  • Transfer to plates and serve peaches with whipped cream or ice cream.

3/4 cup sugar

Steps:

  • Preheat a grill for medium heat.
  • Melt butter in a skillet over medium heat. Add the garlic, and cook until fragrant, 1 to 2 minutes. Whisk in honey and lemon juice. Reserve half for basting, and brush the other half onto the chicken breasts.
  • Lightly oil the grill grate, and place chicken on the grill. Cook for 6 to 8 minutes per side, turning frequently. Baste often during the last 5 minutes. Chicken is done when the meat is firm, and juices run clear.
