Grilled Marinated Celeriac image

Steps:

  • Peel the celeriac (best done with a paring knife rather than a vegetable peeler) and cut in 3/8" x 3/8" spears.
  • Mix the olive oil, lemon juice, herbs, garlic and hot sauce and marinate the spears for an hour to 8 hours.
  • Remove the spears from the marinade (reserving marinade) and grill slowly on a medium hot fire, turning occasionally, until the spears lose their crunch and start to char on the edges.
  • Return the spears to the marinade and toss briefly, to coat. Scatter with salt to taste and serve immediately.

Steps:

  • Heat oven to 400 degrees. Butter a 1 1/2-quart gratin dish. Scatter shallots over bottom of dish. Trim celeriac by cutting off bottom and top, then cutting off thick outer layer with a sharp knife. Cut into 1/4-inch slices and then julienne. Arrange evenly in gratin dish. Sprinkle thyme leaves over celeriac.
  • In a small bowl, whisk together cream, mustard, nutmeg, and salt and pepper. Pour over celeriac and sprinkle with cheeses. Cover with foil and bake for 20 minutes.
  • Remove foil and continue baking until top is brown and bubbly and cream is thickened and reduced, about 20 more minutes. Let cool for 10 minutes and serve.

4 shallots, sliced thin
3 medium bulbs celeriac
2 sprigs fresh thyme
1 cup heavy cream
1 tablespoon Dijon mustard
Freshly grated nutmeg
Salt and freshly ground black pepper
3/4 cup freshly grated Gruyere cheese
1/4 cup freshly grated Parmesan cheese

CELERIAC SALAD WITH MUSTARD DRESSING

Celeriac is a delicious yet often ignored vegetable. It needs to be scrubbed well and then have all the tough peel removed with a good sharp knife. When you cut the celeriac, the flesh darkens in contact with air, so immediately place the cut pieces into water and lemon juice until final preparation.

Celeriac Salad with Mustard Dressing image

Steps:

  • With a whisk, beat the oil into the mustard.
  • Add mayonnaise and continue to beat, then add the sour cream or yogurt.
  • Season to taste and add more mustard for a tangier taste.
  • Thin dressing if desired with a little bit of cream.
  • Mix with the celeriac.
  • Marinate in the refrigerator for at least 2 hours before serving.
  • This salad will keep for several days and get tender from sitting in the marinade.

3 tablespoons mayonnaise

  • Peel the celeriac. Carefully cut off ¼” of the bottom to create a level surface. Where the celeriac is the thickest, cut 4, ½” thick slices. Save the remaining celeriac for another peal. Toss the celeriac slices with olive oil, salt, and pepper.
  • Preheat oven to 400˚ F. Heat a grill or oven-safe pan over medium heat. Add the celeriac slices along with the garlic cloves to the pan. Grill on each side until nicely charred, 3 to 4 minutes per side. Let the garlic cook for 3 to 4 minutes, just until golden. Remove the garlic, transfer to the oven and bake for 10 to 15 minutes, until the celeriac is tender.
  • While the celeriac is cooking, combine the white beans with the grilled garlic, lemon juice, olive oil, and salt. Puree and slowly add some of the reserved liquid or water to the mixture, just enough to smooth out the puree.
  • In a food processor or small bowl, mix together the breadcrumbs with fresh thyme and olive oil. Divide the bean puree between two plates and top with the grilled celeriac, breadcrumbs, and an extra drizzle of olive oil.
