Grilled Peaches and Ricotta image

Steps:

  • 1. Preheat a gas or charcoal grill to medium-high, or place a ridged grill pan over medium-high heat.
  • 2. Spread the butter over each of the peach halves.
  • 3. Grill the peaches, flat sides down, until warmed through, about 4 minutes.
  • 4. Meanwhile, bring 1/2 cup water to a boil. Pour in the sugar and honey and stir until all the sugar has dissolved.
  • 5. Serve the peach halves with generous spoonfuls of the ricotta in the centers, and drizzled with the sugar syrup.

Shortcakes with Grilled Peaches, Sweet Ricotta Cream, Truffled Honey and Huckleberries image

Steps:

  • For the peaches: Grill the peaches over medium heat until lightly grilled, 2 to 3 minutes per side. Place the honey, lemon juice and truffle oil in a mixing bowl and add the grilled peaches. Toss together to coat well. Let stand until juices form, about 30 minutes.
  • For the shortcakes: Put the oven rack in the middle position and preheat the oven to 400 degrees F.
  • Whisk together the flour, granulated sugar, baking powder, baking soda and salt in a large bowl. Blend in the butter with your fingertips until the mixture resembles coarse meal. Add the buttermilk and stir just until a soft, sticky dough forms.
  • Drop the dough in 6 mounds about 2 inches apart on an ungreased large baking sheet and bake until golden, 15 to 18 minutes. Transfer the biscuits to a rack and cool slightly, about 10 minutes.
  • For the ricotta cream: Beat the cream, confectioners' sugar and vanilla in medium bowl until stiff peaks form. Fold in the ricotta and reserve.
  • Using a serrated knife, cut the shortcakes in half horizontally. Place the cake bottom on each of 6 plates. Top each with the sweet ricotta cream and grilled peaches. Cover with the cake tops. Garnish the plates with huckleberries and any reserved truffled peach juices.

Steps:

  • Cut the peaches in half and remove the pit. Slice each half in half and toss them in a bowl with the vanilla extract, almond extract, and brown sugar. Set aside for 15 minutes while you preheat a grill with a medium-high heat. Grill skin side down until skin is slightly charred, about 3 minutes. Turn and grill on the other 2 sides until you get nice grill marks, about 1 minute on each side.

Steps:

  • Heat gas or charcoal grill for indirect cooking as directed by manufacturer. For two-burner gas grill, heat one burner to high.
  • In small bowl, stir together ricotta, honey and vanilla. Cover; refrigerate until ready to serve.
  • Spray cut sides of peaches with cooking spray. Place peaches cut side down on heated side of gas grill or over coals on charcoal grill. Cook 2 to 3 minutes or until grill marks form.
  • Move peaches to unheated side of gas grill or over drip pan on charcoal grill. Cook until soft, about 5 minutes. Remove peaches from grill; place on individual serving plates or large serving platter.
  • Spoon 1 tablespoon cheese mixture into each peach half. Top each with cereal crumbs.
