RED SNAPPER WITH MANGO SHRIMP SALSA

Red Snapper with Mango Shrimp Salsa image

Steps:

  • Prepare the grill to make a hot fire.
  • To prepare the Mango Shrimp Salsa, heat the 2 tablespoons of oil in a medium skillet, over medium heat. Add the shallots and garlic. Saute 2 to 3 minutes, then add the shrimp. Saute 2 to 3 minutes more, or until the shrimp turns pink.
  • Add the fruit juices, chilies, tomatoes, and tomatillos. Cook just long enough to warm the tomatoes and combine the ingredients. Remove from heat and gently stir in the mango and cilantro. Season with the salt and pepper. Set aside.
  • Coat the fish with the 2 teaspoons of oil on both sides. Season with salt and pepper.
  • (Rub the grill with additional oil to prevent the fish from sticking.) Grill the fish on one side about 5 minutes or less. Using a metal spatula, carefully turn the fish and grill about 3 minutes or less, depending on the thickness of the fish.
  • Spoon the warm salsa over the grilled fish and garnish with sprigs of cilantro.

2 tablespoons olive oil
3 shallots, minced

1 cup diced raw shrimp, peeled and deveined
Juice from 1/2 lemon
Juice from 1/2 lime
Juice from 1/2 orange
3 serrano chilies, seeded and diced
3 Italian Roma tomatoes, seeded and diced
3 tomatillos, husks removed, seeded, and diced
1 small mango, peeled and diced
1/2 bunch cilantro leaves, chopped
Sea salt, to taste
Freshly ground black pepper, to taste
4 red snapper filets, about 6 to 8 ounces each

Steps:

  • Use a paring knife to cut four slits into both sides of each snapper, cutting through the skin and flesh. Whisk half of the lemon juice in a bowl with the oregano and half of the olive oil. Salt each fish liberally and put in a nonreactive container. Put the fish in a dish and pour the lemon mixture over them. Let sit at room temperature for 1 hour, turning the fish after 30 minutes to take in the marinade.
  • Lay out five grape leaves on the counter, making sure to overlap them to create a sheet that is as wide as the fish is long, and long enough to wrap around the snapper 1 1/2 times. Wrap one of the fish in the leaves. Repeat with the remaining grape leaves and snapper. Brush with the remaining olive oil and set aside.
  • Heat a grill to medium-high. In a 2-quart saucepan, combine the stock, garlic, and remaining lemon juice. Bring to a simmer. Remove from the heat and whisk in the egg. Return the pan to the stovetop over low heat and, stirring constantly, cook until the sauce thickens (make sure it does not get too hot or the eggs will scramble). Set it in a warm spot on the stove.
  • Grill the fish for 4 minutes per side, making sure not to burn the grape leaves.
  • To serve, set one whole wrapped fish on a serving plate and top with the sauce.

Jimbo's Hambo with Grilled Fruit Salsa image

Steps:

  • Heat the olive oil over medium heat in a large saute pan. Once heated, add the onions and garlic and saute until the onions become translucent. Remove pan from the heat and carefully add cognac (the alcohol can flame up). Return the pan to the heat and let reduce for 2 minutes. Add mustards, pineapple juice, apple juice, brown sugar and honey. Season, to taste, with salt and pepper. Turn down heat to low and allow to reduce by 1/3, about 15 to 20 minutes. Set aside.
  • Preheat oven to 350 degrees F.
  • Slice ham diagonally approximately 1 1/2 to 2-inches deep. From left to right and then right to left, making diamonds on top of ham. In each point of a diamond, press in a clove. Place ham in roasting pan, on cooking rack. Add small amount of water to base of pan to keep drippings from burning. Place in oven and bake for 1 1/2 hours.
  • Preheat an oiled grill pan over medium-high heat.
  • Grill the pineapple and mango slices until grill marked and caramelized, about 2 to 3 minutes per side. Remove and let cool, then slice fruit into 1/2 by 1/2-inch. Toss in large bowl, with the remaining ingredients to combine. Season with salt and pepper, to taste. Set aside.
  • Liberally apply mustard glaze to ham and bake the ham for another 30 minutes or until the glaze begins to turn brown and caramelize. Remove, cover with foil and let rest for 10 minutes. Slice and serve with salsa.
