This recipe came from my Grandmother and is a family tradition--a great dish which is eaten instead of stuffing here in the South.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a large saucepan, bring the chicken broth to a boil.
- In a large bowl combine the crumbled cornbread and biscuits. Pour in 3 cups of boiling broth; cover and let stand.
- Meanwhile, heat margarine in a medium skillet over medium heat. Saute celery and onions until tender. Stir into cornbread mixture.
- To the cornbread mixture add the remaining broth, eggs, sage and black pepper. Pour into a large iron skillet or roasting pan.
- Bake in preheated oven for 1 hour, or until set and well browned.

- In a large saucepan, saute onion and celery in butter until tender; remove from the heat. Stir in the broth, seasonings and eggs. Add bread cubes and parsley; toss to coat. , Transfer to a greased 13-in. x 9-in. baking dish. Top with chicken. Combine soup and water; spoon over chicken. EASY CHICKEN & DRESSING
Such a simple casserole that is very filling and delicious. A friend gave me this recipe when I needed something easy to cook for a family dinner. I've since made it several times and always receive compliments. This recipe is also easy to double, or even triple, for large families.

- Brown chicken in skillet.
- Remove from heat and allow to cool a bit.
- Preheat oven to 350 degrees.
- Prepare stuffing mix as directed on box.
- Stir soup into prepared stuffing.
- Pull chicken apart into bite-size pieces.
- Mix chicken evenly into soup and stuffing mixture.
- Spread mixture into greased 9"x11" pan.
- Top with cheese if desired.
- (I usually do not do this, but its a personal preference.) Bake until top is slightly browned or cheese is melted.

- Mix everything but butter into a large bowl.
- (For moister dressing, add 1 can of cream of chicken soup).
- Melt butter and pour into a 9x13 inch baking dish.

FLO'S CHICKEN AND DRESSING

- Preheat the oven to 375 degrees F.
- For the stock: In a large stock pot, combine the chicken, onions, carrots, celery, garlic, salt, pepper, bay leaves, thyme and water. Season heavily with salt. Place the pot over medium heat and bring to a boil. Reduce heat to medium low and simmer for about 2 hours, or until the chicken is tender. Remove the pan from the heat and cool the chicken completely in the cooking liquid. Remove the chicken and strain the liquid, set aside. Remove the skin, fat and bones from the chicken. Medium dice the chicken meat and set aside.
- For the dressing: In a saute pan, over medium heat, melt the butter. Add the onions and celery. Season with salt and pepper. Saute for 3 to 4 minutes, or until wilted. Add the garlic and continue to saute for 1 minute. Remove from heat and pour into a large mixing bowl. Add the bread cubes, sage, parsley, and egg. Mix well. Season with salt and pepper. Add the diced chicken meat. Stir in enough of the stock, so the mixture is very wet, about 3 to 4 cups. Allow the dressing to sit for 30 minutes. **Add more of the stock if needed. The mixture should still be very wet after it has set. Butter a deep casserole baking dish and pour in the mixture. Bake for about 1 hour, or until bubbly and golden brown. Spoon onto serving plates and garnish with parsley.
HAZEL SMITH'S CHICKEN DRESSING CASSEROLE
Steps:
- Place whole chicken in deep pot. Add water to cover. Bring to a boil, reduce heat to a simmer and cook until 'fork tender', about 2 1/2 hours.
- Hold chicken in broth until completely cooled. Remove chicken from broth, reserving broth. Remove meat from bones and chop, discarding skin. Set aside.
- Preheat oven to 350 degrees F.
- In a large bowl, crumble cornbread and toast (or biscuits). Add chopped hard-boiled eggs to mixture.
- In a large skillet, saute onions and celery in butter until translucent. Add to bread mixture.
- In a separate small bowl, combine beaten eggs, dried sage, salt, pepper, and vinegar. Stir into bread mixture.
- Add enough chicken broth to create a moist consistency.
- Grease a 9 1/2-inch by 13-inch glass baking dish with butter. Evenly spread 1 cup dressing mixture in the bottom of the dish. Add a layer of chicken. Top with remainder of dressing. Bake until browned and bubbly, about 40 minutes. Remove from oven and let cool for 10 minutes.
- Place a portion of the chicken dressing casserole on each plate. Ladle the Giblet Gravy over the dressing. Serve with chutney, hot mashed potatoes and green beans.
- Preheat oven to 450 degrees F.
- Heat a cast iron skillet in the oven with 1/3 cup shortening to melt. When shortening is melted, remove skillet from oven.
- Combine cornmeal and buttermilk in a medium bowl. Add melted shortening to batter, stirring quickly. Pour batter into hot pan. Bake for 20 to 25 minutes.
- Let cool and then crumble.
- Boil liver, gizzards, and heart in a large pot of simmering water for 40 to 50 minutes or until tender. Drain, chop, and reserve giblets.
- Melt shortening in a frying pan over medium heat. Add flour, stirring until light brown, about the color of peanut butter, about 5 minutes. Add chicken broth and stir. Add salt and pepper to taste. Add giblets and boiled eggs and stir to combine. Serve immediately or keep warm.
- Combine all ingredients in a medium bowl. Chill until ready to serve.
CHICKEN AND DRESSING SHEET PAN SUPPER

- Preheat the oven to 425 degrees F.
- Put the cornbread cubes, ciabatta cubes, carrots, celery and onion on a baking sheet, drizzle on the oil and toss together with your hands. Nestle the chicken thighs skin-side up among the bread and vegetables. Mix together the salt, pepper, sage and thyme in a small bowl and sprinkle it all over the chicken, bread and vegetables. Dot the top with the butter.
- Roast for 15 minutes, then remove and stir the bread and vegetables with a wooden spoon, coating them in the butter. Do not disturb the chicken. Return the baking sheet to the oven and continue roasting until the chicken is completely cooked and the skin is golden and crisp, 25 to 30 minutes. Stir the bread and veggies once more and serve!
- Preheat the oven to 450 degrees F.
- Stir the cornmeal, flour, baking powder and salt in a bowl to combine. Measure the buttermilk and milk in a measuring cup and add the egg. Stir together with a fork. Add the baking soda and stir. Pour the milk mixture into the dry ingredients. Stir with a fork until combined.
- Melt 1/4 cup of the shortening in a small pan on the stovetop or in the microwave in a small bowl. Slowly add the melted shortening to the batter, stirring until just combined.
- In a cast-iron skillet, melt the remaining 2 tablespoons shortening over medium heat. Pour the batter into the hot skillet and spread to even out the surface. (The batter should sizzle.) Cook on the stovetop for 1 minute, then bake until the top is golden brown and the edges are crispy, 20 to 25 minutes.
CHINESE CHICKEN SALAD DRESSING
Had lunch at a friends, she served this salad and the dressing was wonderful. I make this in a shaker bottle with a pour top and store in the refrigerator. It's a great light meal on these hot summer nights!

- Place chicken in a soup kettle. Add the water, celery and onion; bring to a boil. Reduce heat; cover and simmer for 1 to 1-1/2 hours or until chicken is tender. Remove chicken from broth. Strain broth, discarding vegetables; set broth aside. - Crumble hot dog buns into a bowl and allow to dry out, at least 4 hours.
- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish.
- Melt butter in a skillet over medium-high heat; saute onion until tender, about 5 minutes. Pour onion and butter over hot dog buns; add enough water to moisten the mixture and stir well. Season bread mixture with sage, poultry seasoning, salt, and pepper.
- Arrange chicken legs, chicken thighs, and chicken breasts in the prepared baking dish. Pour 1 can cream of chicken soup over chicken; top with bun mixture.
- Bake in the preheated oven for 40 minutes. Pour second can of soup over stuffing and add enough milk to moisten the mixture.

SIMPLE CHICKEN STUFFING
This is how I often stuff chicken, probably not as good as some of the more elaborate recipes but better than using pre-packaged stuffing. This is enough for a small chicken, double the quantities for a large chicken. While a matter of personal prference I don't go too overboard chopping the onion / celery finely and like it to have a slightly chunky texture.
