SEARED STEAK WITH CHARD SALAD

Seared Steak With Chard Salad image

Steps:

  • Put the chard in a bowl. Heat a large skillet over medium-high heat.
  • Add 1 tablespoon olive oil and the bread cubes and season with salt and pepper. Cook, tossing, until toasted, 4 to 5 minutes. Add to the chard.
  • Add the anchovies to the skillet, mashing them with a whisk. Add the garlic and 2 tablespoons olive oil and cook until the garlic is golden, about 45 seconds. Add the tomatoes and warm slightly, then whisk in the lemon juice and season with salt and pepper. Pour the warm dressing over the chard, toss and set aside to wilt.
  • Wipe out the skillet and place over high heat. Sprinkle the steak on both sides with the mint, and salt and pepper to taste. Add the remaining 1 tablespoon olive oil to the skillet. Sear the steak until browned on the bottom, about 5 minutes. Turn and cook until browned on the other side, 3 to 4 more minutes for medium-rare. Transfer to a cutting board and let rest 5 minutes.
  • Add the feta to the chard salad and toss. Thinly slice the steak and serve with the chard salad.

Garlicky Sauteed Swiss Chard image

Steps:

  • Add the oil to a large saute pan with the garlic and red pepper flakes. Cook over medium heat until the garlic turns golden. Remove the garlic and discard. Add the chopped Swiss chard ribs and saute until soft, about 4 minutes. Add the Swiss chard leaves and season with salt, to taste. Cook until the leaves are wilted. Stir in a splash of red wine vinegar. Serve immediately.

Grilled Swiss-Chard Stems With Roasted Garlic Oil image

Steps:

  • Bring a large pot of water to a boil.
  • Strip the chard leaves from the stems using a knife, scissors or simply your hands. Reserve the leaves for another use.
  • Trim the bottom 1/8 inch of the chard stem, to remove the dry, discolored bit. Clean the stems by submerging in cold water and rinsing thoroughly.
  • Aggressively season your boiling water with kosher salt.
  • Working in batches, blanch the chard stems until tender, about 5 minutes. Drain well, and let cool on a baker's rack or in a colander to continue draining.
  • Grill blanched, dry chard stems evenly on both sides until charred and blistered here and there, like perfect pizza crust looks from a wood oven.
  • Cut the stems into batons, and thoroughly dress the stems with roasted garlic oil (see recipe), a few drops of lemon juice and a few flakes of Maldon salt.

Steps:

  • Melt butter and olive oil together in a large skillet over medium-high heat. Stir in the garlic and onion, and cook for 30 seconds until fragrant. Add the chard stems and the white wine. Simmer until the stems begin to soften, about 5 minutes. Stir in the chard leaves, and cook until wilted. Finally, stir in lemon juice and Parmesan cheese; season to taste with salt if needed.

Steps:

  • Remove Swiss chard stems and cut into small pieces. Slice leaves into strips. Set both aside.
  • Heat olive oil in a skillet and saute chard stems for 3 to 5 minutes. Add garlic and red pepper flakes; cook until fragrant, about 30 seconds. Mix in chard leaves, cover, and cook until wilted, about 2 minutes. Uncover, stir and cook for 2 minutes longer. Season with salt and squeeze lemon juice on top.

Grilled Swiss Chard Steak Salad image

Steps:

  • 1. Preheat griddle to medium heat, add 2 tablespoon of olive oil. Season steaks with 1 tsp of seasoning salt, 1 tsp of garlic powder and 1 tsp of black pepper, and 1 tsp of onion powder, coat both sides, and rub into steaks thoroughly. Saute meat on both sides for 4 minutes. Remove from griddle and set aside.
  • 2. Meanwhile on the same griddle, add the remaining olive oil, garlic, bell peppers and red onions, sauté for 3 minutes, stir in the swiss chard and cook until tender, about 3 minutes, add heavy cream milk, stir in parmesan cheese, remaining seasoning salt, garlic powder and black pepper. Turn off the heat, cover and set aside.
  • 3. In a saucepan over medium-low heat sauté white onions, add balsamic vinegar, cook until onions become tender to touch or for 7 minutes, stir constantly. Remove from heat.
  • 4. Arrange red leaf lettuce on a decorative plates, add a spoonful of sauté onions on top of red leaf lettuce, and then place the steak on top, then add a spoonful of creamy swiss chard, layer with another spoonful of onions, top with another thinly sliced steak, then top with creamy chard. For additional garnishing, use the red swiss chard stems, cut into julienne sticks, using five sticks per plate, and use some for dicing to sprinkle on top. 4 per serving.
