- Preheat a grill to medium high. Brush a baking sheet with olive oil. Place the pizza dough on the pan and turn to coat with the oil; set aside to bring to room temperature.
- Slice the pork lengthwise down the center almost all the way through, then open like a book and flatten with your hands. Season the pork with salt and pepper and brush all over with 2 tablespoons teriyaki glaze. Brush the pineapple and onion slices with olive oil and season lightly with salt and pepper.
- Brush the grill grates with olive oil. Arrange the pineapple and onion on one side of the grill and the pork on the other side. Grill the pineapple and onion until tender and lightly charred, 2 to 3 minutes per side; transfer to a plate. Grill the pork until cooked through, about 6 minutes per side; transfer to a cutting board.
- Stretch the pizza dough into a 9-by-12-inch rectangle on the baking sheet. Reduce the grill heat to low; place the dough directly on the grill and cook until puffed on top and charred on the bottom, 1 to 2 minutes. Flip and top with the cheese. Cover and cook until the crust is cooked through and the cheese is melted, 2 to 3 minutes. Transfer to a cutting board. Cut the pineapple and pork into bite-size pieces; scatter over the crust along with the onion. Drizzle with the remaining teriyaki glaze and sprinkle with the cilantro. Cut into pieces.

GRILLED TERIYAKI PORK CHOPS
The homemade teriyaki-style marinade for these pork chops reduces in the microwave to become a tasty sauce. Coconut aminos are used as the basis of the marinade, instead of soy sauce, and other than a small amount of orange juice, there is no added sugar.

- Combine coconut aminos, orange juice, fish sauce, rice vinegar, garlic powder, ginger, sesame oil, and salt in a 1-gallon resealable bag. Gently squeeze ingredients to mix. Add pork chops, squeeze most of the air out of the bag, and seal. Pork chops should be in a single layer. - Remove pork chops from the marinade and pour marinade into a microwave-safe bowl. Microwave on high until the marinade reduces to about 1/2 cup, about 3 minutes. Set sauce aside.
- Oil the cooking grate and add chops. Grill for 1 to 1 1/2 minutes, then rotate and grill until marks appear, 1 to 1 1/2 minutes more. Turn the chops and repeat. After the second rotation, turn the heat down to the lowest setting, close the lid, and continue cooking until the internal temperature of the thickest chop is 145 degrees F (63 degrees C), 4 to 5 minutes. Remove chops to a serving platter, tent with foil, and allow to rest for 7 to 8 minutes.
- Warm reserved sauce in the microwave. Serve grilled pork chops warm with 2 tablespoons sauce, garnished with sesame seeds.

- Put the pork tenderloins in a gallon zip-top bag or a baking dish. In a medium bowl, whisk the Teriyaki sauce ingredients – soy sauce, mirin, honey, garlic, ginger, and green onion – until smooth, and the honey dissolves. Pour the marinade over the pork tenderloins. (Squeeze the air out of the bag and zip closed if using). Marinate for at least least 1 hour, up to overnight, turning the pork occasionally to even out the marinade.
- Set up the grill for indirect medium heat – half the grill for direct medium heat, half the grill with no heat. For my gas grill, I preheat with all burners on high for 10 minutes, then brush the grill grates clean with my grill brush. I turn half the burners down to medium, and turn off the other half of the burners.
- Remove the tenderloins from the marinade, let extra marinade drip off, and put the tenderloins on the grill over direct medium heat. I grill the round pork tenderloin as if it has four sides. I brown it on the bottom, about 2 minutes, then give the pork a quarter turn – rotating it 90 degrees. Then I repeat until it is grilled on all 4 sides – grill for about 2 minutes, turn, grill for another 2 minutes, turn, and a grill for 2 minutes on the last side. Move the pork to the indirect heat side of the grill, with no flames directly below it. (If you have a remote probe thermometer, now is the time to poke it deep into the thickest part of the tenderloin and set it for 145°F). Close the lid and cook until the pork reaches 145°F internal in its thickest part for medium, about 15 minutes. Remove the pork from the grill and let it rest for 10 minutes. While the pork is resting, put the scallions on the grill over direct medium heat and grill until browned on the bottom, about 3 minutes. Remo

- Mix together all marinade ingredients from the soy sauce down to the garlic (including the water if using to help cover the meat).
- Pour marinade over the pork tenderloin in a fairly small container so the liquid covers the meat. Let it marinate in the fridge for 30 - 60 minutes (the longer the better although if you are really short on time 20 minutes will do the trick). If the marinade doesn’t fully cover the meat then flip the pork halfway through the marinating process.
- Heat up the grill to a medium-high temperature (we like to spray a little cooking oil first to prevent sticking).
- Grill the pork for about 10 – 15 minutes on each side or until the internal temperature reaches 150 degrees F.
