IRISH PORTER (GUINNESS) CAKE
Rich Guinness Cake with whiskey infused fruit - from a recipe from my Grandmother who was chef in large house in Ireland in 1930's.

Steps:
- Put mixed dried fruit in a bowl with couple of teaspoons of Whiskey (more if you are inclined!) Allow to soak overnight. Fruit will absorb the whiskey.
- Preheat oven to 375 or Gas Mark 5.
- Sieve flour. Combine flour, sugar, butter and spice. Crumble it with your fingers but not as fine as you would for pastry. Add fruit to dry mixture.
- Beat eggs with fork and add them to mixture. When you have mixed add the Guinness/Stout and mix well with a wooden spoon.
- Line 8 and half inch cake tin with greaseproof or parchment paper (use ready liners if available) and put mixture in tin. Put on middle shelf and cook for 2 hours. Enjoy the aroma in the house.
- Enjoy with a cup of tea or glass of Guinness!

A fairly simple coffee cake. A great treat for yourself and the family yet pretty enough for company. This is being posted for the British/Irish section of the tour.

Steps:
- Preheat oven to 350*.
- Beat butter and brown sugar in large bowl until fluffy, add lemon juice & eggs & beat well.
- In another bowl, stir together the flours, baking powder, salt and spices.
- Fold flour mixture into brown sugar mixture, add milk & raisins; don't overbeat.
- Pour batter into a greased 9 x 13 springform pan & Arrange apples on top, pressing them down somewhat into the batter.
- Bake 1 hour then drizzle with warm honey & sprinkle with cinnamon sugar.

- Preheat the oven to 350°F (180°C/Gas mark 4). Line the sides and bottom of an 8-inch (20 cm) high-sided round cake pan (the sides should be about 2 3/4 inches/7 cm high) with waxed (greaseproof) paper.
- Sift the flour, nutmeg, spice, baking powder, and salt into a bowl. Rub in the butter, then stir in the brown sugar, raisins, and candied peel.
- Whisk the eggs in another bowl and add the porter. Pour into the dry ingredients and mix well. Pour into the prepared pan.
- Bake for about 2 hours. If the cake starts to brown too quickly on top, cover it with aluminum foil or waxed (greaseproof) paper after about 1 hour. The cake is done when a skewer inserted into the center comes out clean. Allow the cake to sit in the pan for about 20 minutes before turning it out and cooling it on a wire rack.
PORTER CAKE
This cake is made with porter beer. This is a family recipe from county Galway. Both Guinness® and Murphy's Dark Ale work well in this.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
- Combine brown sugar, butter, and stout beer in a saucepan over medium heat. Stir until butter is melted and brown sugar is dissolved, about 5 minutes. Add raisins, sultanas, and cherries. Simmer for 3 to 4 minutes. Remove from heat and let cool to room temperature, about 15 minutes.
- Sift flour, mixed spice, and baking soda together in a large bowl. Stir in stout-fruit mixture. Add beaten eggs gradually, stirring until incorporated. Fold in orange zest. Spoon batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 1/2 hours. Cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.

LOZ'S SLOW COOKED IRISH GUINNESS STEW
This is an all time favourite! NB (Including some review suggestions - THANKS!): #1 If you prefer fresher veggies (not the stew soaked kind), leave the celery, carrots and potato until the last 1.5 hours. #2 Pumpkin and sweet potato are nice in this too. (try not to exceed the level of the liquid) #3 As a poster suggested: throw some peas and / or corn kernels in at the end to freshen the stew #4 Dumplings can be added #5 Leave out the potatoes and serve on a bed of Mash - fab idea thanks! :) #6 Making a roux to thicken is also a good idea! #7 Enjoy!!! :)

Steps:
- Stir in beer, stock, the garlic, carrots, celery, potato, bay leaves, thyme and rosemary to slow cooker.
- Caramelise onions in butter and sugar in a saucepan then add to cooker.
- Sprinkle meat lightly with 2 tbsp flour, salt and pepper. In batches, brown meat all over, mix all in to the slow cooker. Set on Auto or Low for 8 hours, or High for 4-5 hours.
- After cooking, mix remaining flour and water in a cup and add to stew. Set on high and stir until thickened. Add parsley and serve with thick slices of Vienna Bread.
- Sometimes you may need to add a bit more brown sugar if it has a bitter taste.

Steps:
- Preheat oven to 300 degrees.
- Sieve Flour, baking soda & spices into a bowl.
- Beat butter and sugar together until light and fluffy.
- Add eggs one at a time and continue to beat.
- Fold in Flour Mixture, raisins, Mixed peel, Almonds and Mixed Fruit.
- Add Guinness & Mix well.
- Turn in to a greased and floured 8 inch round cake pan or 8x8 square pan.
- Bake in the center of oven ( 300°F) for 120 minutes, checking cake at intervals after 90 minutes; cover if neccessary to prevent overbrowning.
- It's done when a wooden pick inserted in the middle comes out clean.
- Let cake cool a little in pan then turn onto a wire rack.
