HAM AND ASPARAGUS CASSEROLE
A wonderful spring-time casserole and a great way to use up extra Easter eggs. I have made this dish with chicken when I didn't have ham, but I prefer ham.

- Blanch asparagus in microwave for 3 minutes.
- Drain off any juice.
- In large mixing bowl combine asparagus, ham, egg, tapioca, green pepper, onion, mushrooms, and cheese.
- Mix together.
- In smaller bowl mix lemon juice, parsley, half& half, and mushroom soup.
- Add to ingredients in large bowl, mix well.
- Spread in greased or sprayed 13 x 9 baking dish.
- Bake in a 375º oven for 30-40 minutes.
- Let stand 10 minutes before serving.
- Serves 10-12.

CHEESY HAM AND ASPARAGUS BAKE
Even if you think you don't like asparagus you have to try this. It is a wonderfully easy quiche-like casserole to throw together for breakfast. This can be prepared the night before, covered, and put in the refrigerator overnight. Just be sure to allow extra cook time.

- Preheat oven to 425 degrees F (220 degrees C). Lightly grease a 9x13 inch baking dish.
- Mix the ham, onion, red bell peppers, and asparagus in the prepared baking dish. In a large bowl, beat together the eggs, milk, flour, Parmesan, tarragon, salt, and pepper. Pour over the ham mixture.

Great way to use up leftover rice--I modified a recipe I found on the web and ended up with a real winner. Also great the next morning with scrambled eggs. I have a feeling that the right combination of seasonings could replace the cream of celery soup--let me know if you figure it out!

- Holding 1 spear at each end snap off the tough stem of asparagus. Use this spear as a guide line to trim the bundle with a sharp knife. Simmer asparagus in salted boiling water 3 minutes. Drain and run under cold water. Cut asparagus to fit the size of the toasts.
- Toast 8 thick slices of farmhouse style bread under a preheated broiler 6 inches from heat. Combine softened butter and mustard. Spread the toasted bread with mustard butter. Cut sliced ham into smaller pieces to process. Grind the ham in your food processor. Spread the toast with ground ham. Arrange steamed asparagus spears on top of the layer of ham. Top each toast with a few grinds of black pepper and a mound of fontina cheese. Return toasts to hot oven under broiler and cook toasts until cheese melts and lightly browns at edges. Arrange ham and asparagus toast on a platter and serve.

- Preheat the oven to 425 degrees F. Lightly grease a baking sheet with canola oil spray.
- Lay a slice of ham on a work surface. Place a stalk of asparagus perpendicular to the ham, with the tip of the asparagus just higher than the top edge of the ham. Roll the asparagus on a diagonal, tightly wrapping the ham around the stalk as you go. (The ham should cover the entire stalk except for about an inch on the top and bottom ends.) Repeat with the remaining asparagus and ham.
- Place the asparagus, seam-side down, on the prepared baking sheet and lightly grease the tops with canola oil spray. Bake until the ham is crispy and the asparagus has softened and begun to char at the tips, about 15 minutes. Immediately pour the orange juice over the hot asparagus and season with salt. - Melt butter and swirl to cover bottom and sides of a 9x13-inch pan.
- Spread potatoes (still frozen is okay) in bottom of pan.
- Top with chopped onions, ham and asparagus.
- Salt and pepper slightly.
- Sprinkle 1 cup swiss cheese on top.
- At this point you can continue or casserole may be refrigerated overnight.
- Pour beaten eggs over hash browns & vegetables.

ICELANDIC ASPARAGUS & HAM BAKE
This tasty & versatile dish is very popular in Iceland & uses common ingredients. It is ideal for a brunch, luncheon entree or potluck occasion & also works for a dinner meal when combined w/a salad & crusty bread. Another popular variation skips the use of bread + the reserved liquids & combines the remaining ingredients to use as a filling for tartlet shells that can be served as a starter course or brunch & luncheon entree ... hence its versatility. - Preheat oven to 400°F (200°C) w/oven rack placed in the center position of the oven.
- Lightly grease a 9-in rd baking dish (or spray w/PAM type spray) & set aside.
- Place cut or torn bread pieces in a lrg mixing bowl & add liquid reserved from draining the mushrooms & asparagus.
- Allow bread/liquid mixture to sit for a short time while liquid is absorbed & stir as needed (May add milk if more liquid is required to completely moisten the bread pieces, but it is unlikely to be needed.).
- Add eggs to bread mixture & mix well.
- Add cream cheese, ham, mayo, mushrooms & asparagus to the bread mixture & mix very well to combine (This will break up the asparagus pieces & is what you want to happen).
- Pour mixture into baking dish. Sprinkle surface evenly w/shredded cheddar cheese & use your hand to press it lightly into the surface.
- Bake for 30-40 min or till golden brown & tests done using a sharp knife in the center. Tent w/foil as needed during baking if browning faster than expected. Serve at once or set aside at rm temp & reheat in microwave as needed.
- NOTE: Seasonings of choice can be added to suit individual preferences (esp pepper & garlic). My experience was the combo of canned mushrooms & asparagus + the reserved liquid used + the ham meant that no added salt was needed.
