INDIVIDUAL HAM CASSEROLES

Steps:
- Preheat the oven to 350 degrees F. Generously spray 24 muffin cups (2 standard muffin tins) with cooking spray.
- Crack the eggs into a bowl; add the salt, black pepper and chili powder. Whisk until combined. Add the ham, Cheddar, bell peppers and onions and stir.
- With a measuring cup, scoop the mixture into the muffin cups. Bake for 20 to 22 minutes, until puffy and just barely set.
- Within a minute or two, the casseroles will start to flatten just a little bit -- this is normal! Run a knife along the edges of each muffin cup and lift the casseroles out of the pan. Serve warm or at room temperature.
HAM BERNAISE CASSEROLE
This is one of our favorite ways to use up leftover Easter ham.

- Cook pasta according to directions. Drain. Set aside.
- Cook veggies according to directions. Drain. Set aside.
- Prepare sauce according to directions.
- Place pasta, ham, veggies and mushrooms in a large microwave safe bowl.
- Add sauce and soup. Stir gently to mix well.
- Microwave on high for 2 minutes or until heated through.

This is as good as comfort food gets. My family would have this every night of the week if I let them!

- Bring a large pot of salted water to boil. Stir in the macaroni. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes; drain.
- Preheat oven to 350 degrees F (175 degrees C).
- Spray a 9x13-inch baking dish with cooking spray.
- Melt butter in a large skillet over medium-high heat. Cook and stir ham and onion in melted butter until onion is tender, about 5 minutes.
- Stir garlic into ham mixture and cook for about 2 minutes more; remove skillet from heat.
- Mix cooked pasta, Cheddar cheese, cream of celery soup, peas, milk, sour cream, onion powder, and garlic powder into the ham mixture until well mixed.
- Transfer pasta mixture to the prepared baking dish.
- Bake in the preheated oven until cheese is melted, about 25 minutes. Sprinkle French-fried onions atop casserole and bake until golden, about 5 minutes more.

I first made this filling casserole for a camping trip with friends, adding potatoes and soup to stretch the recipe. It was a big hit. It's a great all-in-one meal that's sure to please your hungry eaters all year-round.

- Cook potatoes in boiling salted water until tender; drain. Peel and cube; set aside. Cook the broccoli according to package directions, omitting salt; drain and set aside. , Preheat oven to 350°. In a large skillet, saute onion in 2 tablespoons butter until tender. Add flour and pepper; stir until smooth. Gradually add milk; cook and stir until mixture boils and thickens. Remove from heat; stir in cheese until melted. Stir in ham, soup, potatoes and broccoli. , Transfer to a greased 2-1/2-qt. baking dish. Melt remaining butter; toss with the bread crumbs. - Preheat oven to 375°. In a saucepan, bring the potatoes, carrot, celery and water to a boil. Reduce heat; cover and cook until tender, about 15 minutes. Drain. , In a large skillet, saute ham, green pepper and onion in 3 tablespoons butter until tender. Add the potato mixture. Transfer to a greased 1-1/2-qt. baking dish. , In a large saucepan, melt the remaining butter; stir in flour until smooth. Gradually whisk in the milk, salt and pepper. - Preheat oven to 350 degrees F (175 degrees C).
- Place potatoes, celery, and carrot in a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and transfer to a 2-quart baking dish.
- Melt 3 tablespoons butter in a large skillet over medium heat; cook and stir ham, green bell pepper, and onion until vegetables are tender, about 5 minutes. Transfer ham mixture to baking dish and mix with potatoes.
- Melt remaining 1/4 cup butter in a clean skillet; cook and stir flour in melted butter until smooth, about 3 minutes. Gradually stir in milk and season with salt and black pepper. Bring to a boil, stirring constantly, until thickened, about 2 minutes. Add Cheddar cheese; stir until melted. Pour cheese mixture over ham and potatoes. Sprinkle with bread crumbs.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and cool.
- Combine potatoes, ham, corn and parsley; set aside. In a saucepan saute onion in butter for 2 minutes, stir in flour until blended well. Gradually add milk and pepper. Bring to a boil. Cook and stir for 2 minutes. Remove from heat and pour over the ham mixture. Stir to mix well.
- Pour into greased 11x7 baking dish. Cover and bake for 25 minutes. Uncover, sprinkle with cheese and bake 5 to 10 minutes longer until cheese melts.
