GREEN BEANS WITH HAM HOCK AND NEW POTATOES

Steps:
- In a large pot, fill with enough water to just cover ham hocks and bring to a boil. Cover and simmer 45 minutes. Add beans and sugar and continue cooking another 25 minutes. Add potatoes and salt and cook until potatoes are tender, about 20 minutes more. Remove hocks from pot and remove meat from the bone. Add meat back to the pot, add salt and pepper, to taste, and serve.
HAM, GREEN BEANS AND POTATOES (CROCK POT)
This recipe I believe is Pennsylvania Dutch. It has been passed down in my family for generations and they have all absolutely loved it and still do!! Try it for yourself. The ham flavors the potatoes and green beans and gives them a wonderful flavor! Its quick and easy and complete meal for your family!

- Add your ham cubed to your preference, canned green beans add juice from at least one can, add canned whole potatoes add juice from at least one can.
- add to crock pot cook on slow for at least 6 hours and you have a quick and complete meal.

- I add a little vinegar to my own bowl myself, try it you may love it I DO!
SLOW COOKER GREEN BEANS, HAM AND POTATOES
I make this dish often; I have never really measured the ingredients, but can give you a reasonable approximation. Note: Freeze leftover cooking liquid, and then add to bean soup, ham or cabbage dishes, or use to cook dumplings in. It's delicious!

- Halve beans if they are large, place in a slow cooker with water to barely cover, and add onion and ham hocks. Cover, and cook on High until simmering. Reduce heat to Low, and cook for 2 to 3 hours, or until beans are crisp but not done.
- Add potatoes, and cook for another 45 minutes. While potatoes are cooking, remove ham hocks from slow cooker, and remove meat from bones. Chop or shred meat, and return to slow cooker. Season with garlic powder, onion powder, seasoning salt, bouillon, and pepper. Cook until potatoes are done, then adjust seasoning to taste.
- To serve, use a slotted spoon to put beans, potatoes, and ham into a serving dish with a little broth.

- Put ham into a Dutch oven. Arrange potato halves, green beans, and onion slices around the ham. Pour enough water into the pot to cover the vegetables completely.
- Place a cover on the pot and bring the water to a boil, reduce heat to medium-low, and simmer mixture until potatoes are completely soft, about 55 minutes.
- Remove ham to a cutting board to slice to desired thickness; serve with vegetables.

GREEN BEANS WITH POTATOES AND HAM
You can make the ham broth and shred the ham hocks a day ahead. The next day, reheat to simmering, and cook the potatoes and green beans.

- Combine ham hocks, onion, garlic, celery, thyme, bay leaf, chile, 3/4 teaspoon salt, and the water in a large pot. Bring to a boil over high heat. Reduce heat, and simmer, uncovered, 1 hour 30 minutes.
- Transfer ham hocks to a plate. Discard chile, and add potatoes to pot; simmer until just tender, 10 to 12 minutes.
- When ham hocks are cool enough to handle, pull meat off bones (discard bones), shred into bite-size pieces, and return to pot. Add green beans, and return to a simmer. Cover, and cook until beans are just tender, about 8 minutes. Season with pepper. Serve vegetables and meat with a slotted spoon; reserve broth for another use. If storing leftovers, store in broth.
NEW POTATOES, GREEN BEANS AND HAM
This recipe was given to me by my Mother-in-law who raised 9 children and taught school for 40 years and didn't have much time to cook. It remains a family favorite with my children. Last night I had no broth, so I mixed Lipton's Garlic and Herb soup (1 packet) and 4 cups of water and it was wonderful, really added richness to the broth.

- I cook this in a crockpot all day, but may be cooked in a dutch oven on the stove, also.
- Add all the ingredients and cover, cook on low for 8 to 10 hours.
- If cooking on the stove you may need more broth, but the crockpot makes broth as it cooks, so you shouldn't need any more.
- Use your own judgement on the amount of broth.
- Serve with fresh, sliced tomatoes and corn bread for a great Southern meal.

- Cube the potatoes, peeling first if desired.
- String the beans and break into 2 inch pieces.
- Coarsely chop the onion.
- Place ham, potatoes, beans, black pepper, and onions into a wide, shallow pot or dutch oven.
- Add enough water to come within a couple inches of the top of the food.
- Bring the pot to a boil then simmer gently for 15 minutes or until potatoes are tender.
- This can be drippy so I suggest serving it in bowls or soup plates.
- Cornbread makes a good accompaniment if you want to sop up the juices.

This is a fantastic way to use up the leftover holiday ham or the bountiful crop of string beans from the garden. It is easy to prepare and smells wonderful while it simmers away on the stove. The soup has a slightly thickened broth that is very silky and just makes it even more comforting. A loaf of crusty bread is all that is needed to fill this meal out.

- Place the ham in large pot and fill pot about half way with either water or chicken stock, add onion, and celery and cover. Bring to a boil and turn down to simmer for about 30 minutes to an hour. (If ham is on the bone let it simmer for about 90 minutes or until the ham starts to fall off the bone before proceeding.).
- Add carrots, potatoes, and string beans to pot and continue simmering for about 30 minutes. Salt and pepper to taste.
- If using a ham bone remove ham from bone while the veggies are cooking and discard the bone.
- When potatoes are done mix butter and flour to form paste, slowly add to pot to slightly thicken broth. (You don't want it gravy thick but to have a little body so more or less of the mixture might be needed depending on how much broth there is.).

A new way to season an old classic. String beans, ham, and small red potatoes are simmered with dry vegetable soup mix. A stand-alone dinner dish or a great side for a crowd/potluck!
