Steps:

  • Spread refried beans in lightly greased 9x13 baking dish.
  • Brown beef and onion in large skillet. Add taco seasoning mix, taco sauce, water, salsa, and simmer until it starts to thicken.
  • Pour ground beef mixture over refried beans.
  • Whip cream cheese and sour cream together.
  • Spread over beef mixture as best you can.
  • Sprinkle chopped tomatoes and green onions over the top.
  • Cover with grated cheese.
  • Bake at 350 degrees until bubbly and cheese is melted.
  • Serve warm with tortilla chips for dipping.

  • Preheat the oven to 450°F. Place a roasting rack on a foil-lined baking sheet in the oven.
  • Using your hands, break the meat into small pieces and combine evenly but loosely on a parchment or waxed paper-lined baking sheet. Spread the meat out and season it generously with salt and pepper. If desired, add the spice mix at this time.
  • Divide the meat into 4 portions (about 6 ounces each). Using your hands, form each portion into a ball-shape by gently tossing it from 1 hand to the other. (Don't over work or press too firmly on the meat.) Gently form each portion into a patty about 3½ inches wide and 1-inch-thick.
  • Preheat a large cast iron skillet over medium-low heat for 5 minutes. Raise the heat to high and add the oil. Add the patties and cook, turning once, until well-browned, about 2 minutes each side.
  • Using a spatula, transfer the hamburgers to the roasting rack in the oven and continue cooking to desired doneness, 8 to 9 minutes for medium-rare, 10 to 11 minutes for medium, and 13 to 15 minutes for well-done.   • Preheat deep-fryer to 350 degrees F.
  • Place frying pan or flat top grill over medium-high setting.
  • Grab a medium size mixing bowl, and a whisk. Add 2 cups of cold water in mixing bowl and empty the contents of the batter mix in with water and mix together until batter is of pancake batter consistency.
  • Take the ground chuck and shape it into 4 (1/3-pound) patties. Then grill on flat top or pan fry to your desired internal temperature. When burger is cooked remove the patties from pan or grill and set aside.
  • Take hamburger buns and open them up and set them on the counter so that the insides are facing up. Place 1 piece of cheese on top of each side of all hamburger buns facing up. Spinkle diced onions on all bottom pieces. Then place 1 slice of tomato on the cheese on the top buns. Then put 4 slices of hamburger pickles on top of each tomato slice. Gently put the cooked hamburger patty on top of either of the buns and smash both the top and bottom buns together. The tighter the better!
  • Take the hamburger and insert into the mixing bowl with batter and surround burger with batter.
  • Place evenly coated burger bun with ingredients and burger patty into fryer. Remove burgers when outside coating of batter is a golden brown color. Serve with desired side item.

  • Chop garlic cloves on wooden surface then put in mortar and pestle.
  • Add salt and olive oil and make a paste.
  • Add this to the meat along with the Worcestershire and horseradish.
  • Mix everything and adjust ingredients to suit your taste.
  • When you make the patties place an indention in the middle of each one with your thumb (almost all the way through). This keeps the burgers from shrinking. We like ours thick and I like them to stay that way!
