HAMBURGER SAUSAGE
Here's a great recipe for crackers to use at Christmas. I've made this several ways, instead of just hamburger I've used a combination of ground deer and ground beef or ground moose and beef. You could probably use any combination of meat but I suggest adding a non-lean ground meat such as beef or pork because you don't want it to be too dry. I have cooked this on the second day and it's pretty much the same as the fourth day but you should let it sit for a minimum of 24 hours with at least one good mix during that time.

Steps:
- 1st day: Mix all ingredients into a large bowl and refrigerate.
- 2nd day: Mix (Can be cooked on this day).
- 3rd day: Mix.
- 4th day: Form into logs and bake in oven at 140-150 F for 8 hours, 4 hours per side.

OWENS SAUSAGE AND GROUND BEEF BACKYARD BURGERS
This recipe was included in an ad in my local paper. It sounded so good that we had to try it. We used Owens rolled sausage since I had the coupon. It was great, but I'm sure other sausage brands would work too! The recipe originally said to make 8 patties, but they ended up so small that I decided next time I will make 6 larger patties. We used regular flavored sausage, but my husband and I love spicy food, so I can't wait to try this recipe using hot flavored sausage. Be sure to have all your favorite burger toppings on hand like lettuce, tomatoes, pickles, etc.**Update - made these patties for the 4th of July and used 96/4 extra lean hamburger since the sausage is so "fatty". Doubled the recipe and made 12 patties. They came out just the right size. Huge hit with all the guests! Many tried to guess the "secret ingredient" and were amazed when I told them it was breakfast sausage mixed with the beef.

- In a large bowl, combine all ingredients except the hamburger buns.
- Form into 6 patties.
- Over medium heat on the grill, cook burgers on each side until done (no longer pink), approximately 15 minutes total.
- Serve on buns with favorite toppings.

- mix everything in a bowl thoroughly.
- put beef mixture in refrigerator.
- for the 1st, 2nd, and 3rd day, mix and cover.
- on 4th day make into 5, 3 inch rolls.
- place on rack of a broiler pan put on lowest rack of oven.
- bake at 150 degrees for 8 hours.
- Turn every 2 hours.

This hamburger sausage recipe is wonderful. It's easy and you have over 2# of sausage which is cooked and can be used in sandwiches. Kids really like this for lunches,by the way so does Dad.

Steps:
- Mix together and shape into 2 loaves (like meatloaf) Wrap in foil and refrigerate for 24 hours.
- Punch holes in bottom of foil with a fork.
- Put 1 cup water in bottom of broiler pan then place loaves on rack over broiler pan.
- Do not broil, just use the broiler pan because you need the sausage over the water.
- Bake 1 hour 15 minutes at 325 degrees.

Steps:
- Stir the brown sugar, sage, salt, basil, black pepper, onion powder, marjoram, and red pepper flakes together in a small bowl. Place the ground beef in a large bowl; mix the spice blend into the ground beef with your hands until evenly integrated. Refrigerate for 24 hours to let the flavors blend.
- Divide the ground beef mixture into 8 patties.
- Place a large skillet over medium heat; cook the patties in the skillet until firm, hot, and cooked in the center, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).
